I'm planning on selling macarons to fundraise for my nonprofit. I don't have a problem with techniques, but the macarons I make are wayyy too sweet, even when I made matcha ones (used matcha ganache as a filling). I think the problem is in the filling since I can't really reduce the sugar in the shells, so what recipes, flavors, or fillings (except chocolate/nuts) would you guys recommend so that aren't too sweet?
