Chile Colorado

I usually favor chili verde. But for some reason, I was in the mood for red. This was a first try, but I've been making chili verde for years, so all I did is just replace the green ingredients with red ones. Super satisfied with how this turned out. I'd like to use some better chilies, but whatever, jalapenos are easy to find. They don't have any good dried chilies where I shop. And I like to try to make recipes easy to follow as much as possible. This is pretty straightforward I hope. Some added video can be found here if necessary.

Ingredients

  • 3 red jalapenos
  • 1 yellow onion
  • 5 medium tomatoes
  • 1 tbsp annato
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 4 lb pork shoulder
  • 1/4 cup flour
  • 2 cups chicken broth
  • 1 lemon
  • 1 shot rum
  • Salt as needed
  • Oil as needed

Instructions

  1. Preheat the oven to 375f. Place the red jalapenos, tomatoes and 1/2 of the onion in an oven save dish and roast for 25 minutes.

  2. Peel and slice the remaining 1/2 of the onion thin and toss it into warm oil to cook it gently until tender.

  3. Dice the pork. The size isn't that important. Add the flour to the pork with a generous sprinkle of salt. Toss it up to coat the pork chunks thoroughly.

  4. Stir the spices in with the sauteed onion once they are tender and toast gently until fragrant. Then pour in the chicken broth and stir the pot to get any chunks off of the bottom.

  5. Brown the pork chunks in a little hot oil. Move the caramelized pork chunks into the pot with the onions as they're finished. When the pork is done cooking, deglaze the pan with a shot of good rum or tequilla and scrape that goodness into the stew pot.

  6. When your vegetables are done roasting, peel the onion, peel and deseed the jalapenos, then puree in a blender or food processor. Add the juice from the lemon. Pour all of that red puree into the pork and stir it up.

  7. Let it bubble away gently for a couple of hours. Stir occasionally to make sure you don't burn the bottom. Season it up and serve.

How do I make a drink smell better??

I know it's a weird question, but I'm working on a recipe for an assignment for school and long story short, I have to use Moringa Leaf powder. It's very good for you, but when I tried to make a cold brewed tea it started to smell. I don't mean a little bit, a full on sulfuric egg/fart smell. I looked it up and there are sulfuric compounds in the chemistry of the leaf.

How do I get rid of this? I tried adding lemon juice and I added honey for taste and it tastes great, it just smells like farts...

What can I add to it to mask the scent without introducing too much flavor?

I'm trying to either find or create a copycat recipe for Red Lobster's dragon sauce, which is a side sauce that comes with their potstickers.

I'm having a hard time finding any a copycat recipe for this sauce, but I think I have all the ingredients to make it. Here's what I have: soy sauce, sugar, red pepper flakes, rice wine vinegar, sesame oil, and garlic. Basically seeing if anyone here has tried to reproduce the sauce at home or knows of a copycat recipe that would best approximate it. It's basically spicy and sweet.

Lately I've been doing: Arugula Red onion Tomato Toasted almonds Dressing- lemon juice, honey, olive oil whisked together

But I want something more hearty/filling. I'm not opposed to meat/nuts/cheese being in my salad, I just want better flavor combinations.

Super Bowl Salsa

11 Cups cut up tomatoes 4 cups cut up onions 4 cut up green peppers 3 cut up red peppers 1/3 cup white sugar 2 tablespoon salt 1 cup white vinegar Put all ingredients in big stock pot and cook until liquid disappears. Makes 10 pints, put flats and rims on jars. Water bath for 35 - 40 minutes. The stockpot that I use for this I got from littletobigkitchens.com. You can use 3 quarts of tomatoes that you canned in place of the cup up tomatoes. I have a big garden so I just can all the tomatoes in the fall and make this salsa in the winter when I have more time to do it. I also learned on social media that you can put flat and rims on jars and tip the upside down to let them seal then you eliminate the step of the water bath. I am going to try this. Also a pint of the salsa works good in a batch of chili. Enjoy.

Organic Ginger Hot Chocolate

Ginger Hot Chocolate

Makes: 1 serving

Ingredients
* 1 cup milk
* 1 tbsp Green & Black’s Organic Hot Chocolate
* 20g (6 pieces) Green & Black’s Organic Dark Chocolate and Ginger, grated with a fine grater, plus extra for garnish
* A pinch ground ginger
* A pinch ground cinnamon
* A few gratings of fresh nutmeg

Directions
1. Combine all ingredients in a small saucepan and heat gently, whisking to blend the ingredients. Be careful when adding the spices. It’s best to start with a tiny amount and adjust to taste.
2. There should be approximately equal amounts of ginger and cinnamon and just a few gratings of nutmeg.
3. Remove from the heat just before the liquid comes to the boil. Taste and adjust the spices, if necessary.
4. Pour into your favourite mug and optionally grate some Green & Black’s Organic Dark Chocolate and Ginger on top to garnish (whipped cream or a marshmallow are acceptable, too).

YOU’LL NEED: 60 Ritz crackers 1 1/4 sticks butter or margarine 1/2 gallon vanilla ice cream, softened 2 boxes coconut cream instant pudding 1 cup milk 1 (4 ounce) small container Cool Whip Coconut

PROCEDURES : Mash Ritz crackers into crumbs. Melt butter; mix together and press into bottom of 9 x 13-inch pan. Bake at 375 degrees F. Let cool. Mix ice cream, pudding and milk; pour over crumb mixture. Refrigerate for 1 hour. Cover completely with Cool Whip. Sprinkle with coconut. Keep in refrigerator

Hong Kong black sesame dessert request

When I was in Hong Kong I became a little addicted to these black sesame Mochi balls in a sweet syrup.

I can get the black sesame Mochi balls at my local Asian supermarket but I have no idea what's in the syrup. Some googling has presented conflicting info. Anyone have an authentic recipe?

Earl Gray Chocolate Sugar Cookies

I got the idea from an Earl Gray cocoa milk tea drink at my local boba place and decided to put it in cookie form. This is the first recipe I've ever invented on my own and it's gotten nothing but compliments every time I've made it. So, I thought I'd share it here:

Makes ~50-55 small cookies (I based this off proportions from another recipe, so I usually half it)

Ingredients:

1 cup (2 sticks) butter

1½ cups granulated sugar

2 eggs

4 packets Earl Gray tea (1 packet/ ¼ cup butter)

2¼ cups all-purpose flour

½ teaspoon baking powder

½ teaspoon Kosher salt

1 teaspoon vanilla

½ cup cocoa powder

Steps:

  1. Preheat oven to 350 degrees Fahrenheit.

  2. The first thing you need to do is infuse the butter with the earl gray. This is how you get all the delicious tea flavor in your cookie. To start, melt butter in a small saucepan until it's just liquid

  3. Cut open your tea bags and dump contents into the butter.

  4. Heat and stir the mixture for about 5 minutes on low heat. Then remove from heat and let stand for 5 more minutes.

  5. (Optional: take butter tea and filter tea out through a sieve. If you're doing this, make sure to add a little more butter to the original mixture, because you lose some in this process. I've made these with and without filtering out the tea and they've been great both times, so I think it's more of a personal preference).

  6. Let butter cool to around room temperature and then cream with the sugar until it's light and fluffy. Then add eggs and mix well to combine. It won't look very appealing at this point, but just stick with it.

  7. Stir in flour, baking powder, salt, cocoa powder, and vanilla.

  8. Stir in cocoa powder. The consistency should be a thick, but a little wet but crumbly. If it's too dry, add a little bit of water at this point.

  9. Take a spoon, scoop the dough, and roll into small balls and place them 1-2 inches apart on a greased baking sheet.

  10. Bake for 15 to 17 minutes or until consistency is right. They should be a little soft to touch when they're done.

"Traditional" Texas Chili

I put traditional in quotes because chili is hotly debated all over, and particularly in Texas. To me, this is a traditional as it get as this recipe, while modified in some ingredients, very closely follows a family recipe passed down from my great grandmother who was born and raised in Amarillo, to my grandmother who was born and raised in San Antonio, to my Father who was born and raised in Austin.

Texas Chili

Ingredients - 1 lb cubed stew beef - 1 medium sweet onion medium diced - 2 bell peppers medium diced - 1 fresh jalapeno finely diced - 2 dried chipotle peppers whole - 5 - 6 dried chile de arbol whole - 2 cloves garlic finely diced - 1 can diced tomatoes - 1 tablespoon tomato paste - 1 large style beer - 2-3 shots of smokey mezcal or tequila if you prefer - olive oil - worshtershire sauce - apple cider vinegar - brown sugar - salt - black pepper - onion powder - granulated garlic - smoked paprika - chili powder - cumin - adobo - clove - cinnamon

To prepare

  1. Place a small pot on the stove and fill with approximate 1-2 cups of water. Turn up the heat and leave to boil. Once boiling, add the dried peppers and cover. Allow to steep until the peppers feel soft to the touch.

  2. Heat olive oil in the bottom of the main pot you intend to cook the chili in. Add the jalepeno and garlic and cook until fragrant.

  3. Add the reconstituted dried peppers, steeping liquid, jalenpeno, and garlic to a high speed blender or food processor and season with salt, pepper, cider vinegar, and blend/pulse until smooth. Strain back into the small pot through a sieve. Reserve for later.

  4. In a bowl, eyeballing your measurements, mix two tablespoons of onion powder, granulated garlic, and paprika, one table spoon of black pepper. 2 teaspoons of salt, and 1 teaspoon each of cumin, clove, adobo, chili powder, and cinnamon. Mix thoroughly.

  5. Place meat in a container and pour 3/4 of seasoning mix over it. Stir to coat.

  6. In the same pot you cooked your jalapeno and garlic, add a little extra oil and brown your meat making sure you get a good crust on all side of the cubes. Remove the meat and set aside.

  7. Deglaze the bottom of the pot with a shot of mezcal/tequila, and shoot one yourself. Add your onions and peppers, seasoning with a sprinkle of salt and cook until the onions are translucent. Deglaze again with the remaining shot of liquor.

  8. Add in the tomatoes, tomato paste, meat and beer and mix thoroughly. Adding two tablespoons of worshtershire. Allow to come to a simmer and reduce.

  9. Return to the pulverized pepper liquid. Bring to a low simmer over medium heat and add remaining dry spice mixture along with sugar, vinegar, and salt to taste. This is essentially your hot sauce you can use as a condiment with the chili but also to add heat at your discretion while cooking.

  10. Add desired amount of hot sauce to chili for flavor, adjust seasoning to taste, and allow to reduce. This will take a few hours. Ensure to stir and not allow anything to burn on the bottom of the pot.

Serving

I find the best way to serve this is hot out of the pot, in a bowl with a little shredded cheddar and some flour tortillas. Offer hot sauces, both homemade and store bought, as options to increase heat. Goes great with margaritas, cold beer, or for those underage...limeade.

Note: No, there are no beans in this recipe. I dislike arguing the point but suffice it to say that there is a lot of controversy between those who prefer beans in their chili and those who don't. I don't.

My Best Irish Stew

This is a recipe for Irish lamb stew that I have been tinkering with for a year or so. Finally have it exactly how I wanted it so I thought I would share.

Ingredients:

3 tbsp butter ½ cup flour 1 lb lamb, cubed 1 white onion, shredded 3 large carrots, peeled and sliced 1 stick celery, diced 2 Yukon gold potatoes, peeled and cubed 8 oz canned green beans, drained 2 bay leaves 1 tbsp dried thyme 1 tsp black pepper 12 oz Guinness stout beer Beef broth 1 tsp MSG 1 tbsp Worcestershire sauce Fresh or dry parsley for garnish.

Directions:

In a skillet, melt 1 tbsp butter. Fry the onion and celery until lightly caramelized, set aside off the heat. In a cauldron, melt 2 tbsp of butter. Brown the lamb in batches. Put all the lamb back in the cauldron. Pour in the flour and stir until the meat is well coated. Add in the onion and celery. Cook over medium heat for 3-5 minutes, stirring and scraping constantly. Deglaze the pot with the beer, little by little, until all the beer is stirred in. Stir in the MSG. Pour in enough beef broth to thin the stew to whatever consistency you want. Start with 1 cup. Stir in the thyme, pepper, and bay leaves. Put on a low simmer for one hour, then add the potatoes. Simmer one more hour, then add the carrots. Simmer one additional hour, adding the green beans and Worcestershire sauce 5 minutes before serving. Adjust seasonings to taste and serve garnished with parsley.

Makes two hearty servings or 4 smaller ones.

Cheese and bacon egg muffins

It's hard to cook breakfast every morning, I had a couple of years in which my breakfast was a banana. Since then I've resorted to egg muffins because they're easy to make in batches that last a few days and I don't have to make them every morning or the evening before.

Ingredients (for 6 egg muffins):

  • 4 eggs
  • 4 slices of bacon
  • 4-6 mushrooms
  • 100 grams cheese
  • 50-100 grams red bell pepper
  • 50 grams olives
  • chili pepper
  • chili powder
  • salt
  • black pepper

Instructions:

  • 1. Fry the bacon slices in a pan without oil
  • 2. When the bacon is ready, slice the mushrooms and use the same pan and the leftover fat from the bacon
  • 3. Cut the bacon into smaller chunks
  • 4. Dice the cheese, the red bell pepper and slice the olives and the chili pepper
  • 5. Crack the eggs in a bowl and whisk them
  • 6. Add the bacon, mushrooms, olives, red bell pepper, chili pepper, cheese, chili powder, black pepper and salt
  • 7. Stir until you mix them up good
  • 8. Spray some oil on a muffin tray
  • 9. Add the mixture gradually to the tray so that you can have egg muffins of the same size. You can grate some cheese on top or put a few cubes of cheese
  • 10. Bake them for about 10 minutes or until they are ready on low heat
  • 11. Resist the urge of eating all of them in one go so you can have some for a few breakfasts

Orange & White Chocolate Cake

When you are looking for a change to the regular cheese cake or chocolate cake option that seems to be a regular choice for many people, try an Orange citrus cake instead. The full burst of whole Orange flavour mixed with the desiccated coconut provides a perfect balance to offset the sweetness of the Orange. White chocolate is swirled through the cake to provide the occasional subtle sweet burst to please the chocolate enthusiast. Topped with icing sugar provides a nice finish to a dense cake that is not overly sweet but full of flavour. A real crowd pleaser.

Ingredients:
• 2 large Oranges about 500g (use additional oranges if small)
• 1/3 cup Olive Oil
• 1 tsp Vanilla Extract
• 2 cups Plain Flour
• 1 1/2 tsp Baking Powder
• 1/2 tsp Bicarb Soda
• 1/2 cup Desiccated Coconut
• 1/8 tsp Salt
• 4 Eggs
• 1 1/2 cups Caster Sugar
• 200 g White Chocolate
• Icing Sugar to dust cake

Instructions:
1. Pre-heat a fan forced oven to 150°C (300°F).
2. Grease & line with baking paper one 22cm (9 inch) springform baking pan.
3. Cut the ends of each orange (with a small cut), then chop the oranges (including peel) into smaller chunks.
4. Add orange to a feed processor and process to a coarse puree.
5. Add olive oil and vanilla extract and process to mix through.
6. In a separate bowl, add plain flour, baking powder, bicarb soda, desiccated coconut and salt. Mix to combine.
7. In a separate large bowl add eggs and beat for about 3 minutes, using an electric beater, until light and fluffy.
8. Gradually add caster sugar while continuing to beat the eggs, Mix until fully combined.
9. In alternating batches, fold the flour mixture and the orange mixture into the egg mixture until just combined. Do not overmix.
10. Melt white chocolate in a microwave bowl and set microwave to 50% power and cook for 30 second intervals, until fully melted. Check chocolate after each 30 second interval.
11. Fold white chocolate through the cake mixture.
12. Pour / spoon mixture into baking pan, smooth the surface and bake in oven for 80-90 minutes or until a skewer inserted into the centre of the cake comes out clean.
13. Remove from oven and allow to cool in pan for about 10 minutes before turning out onto a wire rack to cool completely.
14. Dust with icing sugar before serving.

Looking for an authentic egg flower/egg noodle recipe.

Alright guys, I have a few major problems here, but to outline the necessity for why I need this recipe I can tell you these facts 1) I'm pregnant 2) I'm craving egg flower soup 3) my favorite Chinese food place isn't open because the owner is in Hong Kong for a month.

Now, I'm not the greatest when it comes to palate, but a few things are certain to me about the egg flower soup from my local restaurant.

BROTH- The broth is not too thin, or too thick. It's slurpable, but not as much as chicken noodle, just a tad bit thicker. This leads me to believe they either use a chicken stock as the base, or a chicken broth with a slight bit of corn starch. COLOR- VERY light yellow. To the point where it's almost not noticeable it looks a little white with a hint of yellow. FLAVOR: The flavor is pretty flat, not containing hardly any spice. I think there may be salt and some white pepper. No discernible onion, ginger, or garlic, and no soy sauce.

ADDED INGREDIENTS: The only ingredients I see when I eat this soup are carrot, tofu, and a handful of egg whisps. It's not too heavily egged and the eggs aren't curdled. The broth is still separate of the egg, which I like because in a lot of recipes I've looked at, the egg is so thick it makes the soup look gross.

So, I've unsuccessfully tried a few recipes over the last few months so I wouldn't have to pay Shao to make it for me. And she's very tight lipped about the recipe. I've even tried buying packets of the stuff from our local grocery store from our very small town, thinking maybe she gets it from packets. Nothing.

Recipe after recipe the broth is too dark, too yellow, too robust/flavorful, and I can't manage to get the egg right.

I'm just wondering, is there a traditional low ingredient egg flower soup? I tried another local Chinese food restaurant out of desperation but theirs had egg noodles, bamboo, water chestnuts and the consistency was that of gravy and I was seriously displeased. The color was also a very dark yellow.

I know I sound like I'm super entitled, but none of the recipes look correct on google and I'm out of options. Someone get this pregnant lady some egg flower soup!!!

White chocolate sauce from cocoa butter?

I just bought some Torani white chocolate sauce, but it's absolutely awful. Per tablespoon there is less than 1g fat which suggests there is barely any cocoa butter present.

I'd like to make my own but any recipes I can find suggest using white chocolate bars.

I figure that using cocoa butter would make for a richer flavour, and will be more cost effective.

Does anyone have a recipe or can suggest how much of the butter to use ?

My girlfriend is very conscious about calorie amount, and isn't eating enough. However, if i make her something without a calorie amount on it, she is much more likely to eat it. What are some "snack" recipes I can make and put in a ziplock bag to bring to school?

Title says it all. She fails to realize that she needs to eat more, so I'm taking it into my own hands a little. The recipes need to be kinda easy/cheap. Even just a smashed up combo of two things will work (for today, i didnt have much in the pantry so i just put together some cereal and some graham crackers, which tasted pretty good). She is also lactose intolerant, so there is a slight limitation. Anything i can make for her?

Suggestions for preparing Pork Sirloin Chops - boneless

Pretty much the title. Google keeps giving me tenderloin recipes or chops recipes. I've never made this cut, which seems super cheap (1.98/lb), and I'd like to be sure to not dry them out and make em tough. They are about 3/4"-1" thick, 7" long, 3" wide.

Poppy seed cake

Festive fluffy sponge cake full of poppy seeds, with gentle cream inside and incredible chocolate glaze on top!

Ingredients:

For poppy seed sponge cake: - 5 large eggs - 125 g wheat flour - 125 g castle sugar - 125 g butter, melted on water bath - 150 g dry poppy seeds - 1 g vanilla sugar - 1 teaspoon baking powder - 8-9" springform pan

For cream: - 6 yolks - 600 ml heavy cream 15-20% fat - 1 vanilla pod - 150 g sugar

For chocolate glaze: - 75 g butter - 200 g dark chocolate 50-70% cacao - 1 tablespoon brandy, whiskey or cognac

Instructions:

  1. Preheat oven up to 180°C or 356°F.

  2. In a medium bowl mix together flour, poppy seeds, baking powder and vanilla sugar. Whisk yolks with sugar. Add whipped whites to the yolks. Now gradually add dry mixture.

  3. Place batter into a baking tin. Bake about 40-45 minutes until evenly golden.

  4. Cut vanilla pod lengthwise and scrape the seeds to the stewpot with heavy cream. Whisk yolks with sugar. Bring to the boil and remove from the heat. Constantly stirring with silicone or wooden spatula, so that the cream doesn’t stick to the bottom. Cream is ready – time to put all layers of our cake together.

  5. Put the bottom layer back to the springform pan and pour with half of the hot cream (or 1/3 if you got four layers). Repeat with another one. The top layer leave free of cream for chocolate glaze. Place into the fridge for overnight.

  6. Chocolate glaze! Put chocolate and butter into a stewpan and stir until melted. Pour cognac and combine well.

Recipes that I see recommend boneless, however I've heard that the bone adds more flavour. Has anyone cooked with the bone? Or is it not needed for this particular recipe? Thanks!

Crispy Garlic Chips

This is a kinda weird garnish I like to make. Found it on a bowl of ramen in Hawaii once. I just remember being kinda amazed and wondering how they did it. I kinda assumed it was something you would buy. But then I got to talking to a buddy who was a sous chef at at a huge restaurant with a wide breadth of influence, so they kinda had a lot of room to experiment with stuff. Meaning that, if you find yourself wondering how to do some weird, random thing, chances are he's made it. Sure enough, they had put these on a crudo or something at one point. He explained that the trick is the milk soak. I also later found a Thomas Keller recipe for these. A little bit of an adventure. Deep frying is always a hassle, but this is a fun project, and I love these little crispy garlic flakes. Awesome topping for ramen.

Ingredients

  • 6 cloves garlic
  • 2 cups milk or almond milk
  • fryer oil

Directions

  1. Peel and slice the garlic. You want it really thin and even. I have a little fine microplane that works great. It's actually a cucumber slicer, like, for spa treatments. Works great for thin veg slices though.

  2. Place your garlic slices in a small pan and cover with milk. Bring just to a boil, then strain. You have to repeat this goofy task 4 times, at least, with fresh milk each time. It seems kinda weird, but the hot milk removes the bitterness from the garlic. I've done a lot of experimenting here. Even if you only steep the garlic 3 times, it will still come out bitter. You gotta do 4 steeps. Not a single steep fewer. Four is the magic number. Five is just ridiculous. Rinse the slices in hot water when you're done.

  3. Heat your fryer oil to 300F and gently drop in your garlic slices. I like to use chop sticks to separate the slices and move them around as they cook. Remove the garlic chips when they're just beginning to turn brown. They'll continue cooking a little after you remove them from the oil, so don't let them go too far or they taste gross.

Do 8 inch tortillas work for burritos?

Usually I make 50 burritos at a time with the 10 inch "burrito" tortillas. Doing a shopping run tomorrow so dont have time to test before I stock up. Trying to cut my carbs slightly so trying to determine if the 8 inch can fit roughly 150 grams of ingredients.

Hey guys, I’m Italian, and I was just wondering how you guys usually cook pasta! I saw many spooky videos on the web with people dropping pasta inside cold water without waiting for it to boil...that’s a terrifying thing.

The right way to do that is:

1) Find a big pot 2) fill it with cold water 3) wait for the water to boil 4)Put some salt in the water 5)Drop your favorite type of pasta in it 6)Look for the cooking time on the pasta’s box 7) drain the pasta 8) add sauce (if you want a “diet friendly “ pasta just use oil and Parmesan cheese)

NEVER EVER drop pasta directly inside cold water...every time you do that a Sicilian old lady dies lol 😂 (that’s an Italian typical joke)

Bloody Mary

Hello Reddit!

I love a good bloody Mary, it's probably my go to when I'm out at breakfast and brunch. I decided to try my hand at it, did a little research and came up with this after some trial and error. It's pretty good, but not great like what I can order at a bar or restaurant. Any recommendations?

1 1⁄2 ounces vodka

3 ounces tomato juice

1 teaspoon lemon juice

1⁄2 teaspoon Worcestershire sauce

3 drops Tabasco sauce

1⁄4 teaspoon pepper

1⁄4 teaspoon celery salt

1⁄2 tablespoon prepared horseradish

I usually garnish it with whatever I have; celery, pickle, stuffed olive, cheddar cheese.

Looking for recipes to use instant mashed potatoes in

As it’s Burn’s Night, I thought I’d share this recipe for a Pastilla of Haggis, turnip, potato tuille, whisky and green peppercorn jus, from award winning Glasgow based chef Brian Maule in a modern twist on the traditional Haggis Neeps and Tatties that are normally served for Scottish Burn's Suppers.

I've included a link to the full article, which also contains some great suggested beverages.

Ingredients 750g Quality Haggis *1 x medium turnip *2 x red rooster potatoes *2 x banana shallots *2 x measures whisky *tablespoon peppercorns *200ml beef stock *300ml double cream *100g butter *500ml chicken stock *1 packet feuille de braque pasty (filo) *2 sheets of baking/parchment paper *Recipe** Turnip 1. Chop half of the turnip into small even pieces, sweat down in butter in heavy based sauce pan, add chicken stock and cook over a medium heat. Once the turnip is soft blend well until smooth (puree) and season with salt and pepper to taste – keep warm until needed. 2. Take the other half of the turnip and using a mandeline (or sharp knife) cut the turnip to resemble short spaghetti. 3. Blanch the turnip spaghetti in salted boiling water until tender then drain the water to stop the turnip from cooking. Season with salt and pepper then keep warm until needed Potato 4. Using a mandeline (or sharp knife) take the potato and cut into long strips (spaghetti). Clarify butter by melting in a pot and skim any residue from the surface. Toss the potato spaghetti in melted butter and season. 5. Mould the potato into small round shapes and place on a baking tray lined with parchment paper. Place a second sheet of paper on top of the potato and put another baking tray on top then bake potato between the two parchment lined trays in the oven until they are crisp and golden. Haggis Pastilla 6. To make the haggis pastilla, take the sheet of filo pastry and lay out on a clean dry surface. Make a paste using plain flour and water (1:1) brush the sheet of pastry with the paste and put another sheet on top. Fashion the haggis into a small sausage shape and roll up in the filo pastry. Make sure it’s wrapped tight and is well tucked in either side to resemble a spring roll. Deep fry until pastry turns golden brown and the haggis is hot through to the middle. Sauce 7. Slice shallots and sweat off in pan ensuring no colour. Glaze with whisky, reduce slightly then add beef stock. Reduce a little further this time and add cream. Pass through a fine sieve and add peppercorns (whole) to taste. Serve 8. To serve spoon turnip puree onto plate, place spaghetti of turnip to the side of puree. Cut through the pastilla at an angle and place on the turnip spaghetti. Drizzle whisky jus around the plate and garnish with potato tuilles on top.

Okonomiyaki

It's basically a Japanese street food from what I have been told/learned upon over the years. I've never had the real deal, so I can't comment on how authentic this is. But from what I understand, there are so many variations that authentic probably isn't something to shoot for here. Let us just shoot for delicious instead, shall we? This really is the best kind of fat kid food. It's not all that bad for you I guess, but holy cow it tastes good enough to seem that way. I made this for dinner the other day and told myself I would only eat half. Needless to say, that did not happen. I could eat another one right now. Kinda loosely inspired by a Serious Eats recipe, but I took some liberties. Really does help to take a look at the video I made to see the flip, what the yamaimo looks like, and how thin to shave the cabbage.

Ingredients

Mix

  • 400 g shredded cabbage
  • 3 scallions
  • 2 eggs
  • 140g yamaimo
  • 1/2 tsp Beaver, xtra hot horseradish
  • 10g katsuobushi
  • 120g chicken broth (or water is fine)
  • A pinch of salt
  • 110g AP flour
  • A pack of bacon

TOPPINGS

  • 1 piece nori
  • 5g katsuobushi
  • Kewpie mayonnaise
  • okonomi sauce

Directions

  1. Peel and grate the yamaimo. Yamaimo is a root vegetable of some sort. It's a little tough to find some times. You can skip it if you want, but it is kinda crucial for the texture. In San Francisco, the best place to get it is at the UN Plaza farmers market on Wednesdays and Sundays. You grate it like ginger, not like cheese. The fine side of a cheese grater will do though if you don't have a ginger grater. The texture is pretty weird.
  2. Slice the scallions thin. Cut the cabbage in quarters and remove the core. Slice it fairly thin as well. You might even wanna use a mandolin. Some people like it thin like sauerkraut, but personally, I like it somewhere around coleslaw thickness.
  3. Combine all of the mix ingredients, except the bacon. Mix well.
  4. Cover the bottom of a 10" frying pan with bacon over medium heat.
  5. Spread about half of your okonomiyaki mix over the bacon now. Place over medium-low heat. Cover and cook for about 10 minutes. The bacon should be a little crispy.
  6. Now you gotta flip it. This can get a bit tricky. I recommend flipping over the sink into another pan, so you can pour off a little grease and slide your pancake back into the original pan. Check out the video here if you're confused at all. Return to the stove to cook about 8 minutes longer.
  7. Topping time! Slide that bad boy onto a plate. Squirt on a cool zigzag of kewpie mayo. Add a drizzle of that special okonomi sauce. Sprinkle with shavings of nori and katsuobushi. Time to eat!

Local shop having a Mac and Cheese recipe contest - let's hear some awesome ideas!

I live in a small town where Mac and Cheese pizza is one of the most popular drunk foods to get. The local shop is hosting a contest to submit ideas for the most creative recipe for a Mac and Cheese pizza.

I get the option to customize the following:

  • base sauce
  • type of cheese(es)
  • toppings in addition to elbow macaroni
  • any special requests (how to prepare and etc...)

Has anyone done anything super creative that's similiar to this? Trying to come up with the tastiest thing for people to eat at 2 am in the morning after a night out in the bars!

Ideas that I have right now:

  • 2-3 cheese blend
  • fatty meat
  • somehow incorporate cheetos (and/or flaming hots) into the pizza
  • pretzel crust?

3 Recipes from Ursula K. Le Guin (Crab Nebula, Valley Succotash, and Primitive Chocolate Mousse)

In honor of science fiction writer Ursula K. Le Guin, who died today, I've decided to share three of her recipes. (Note: She was from Oregon, which is why she insists on Tillamook cheese.) Sorry that these are not properly formatted the way recipes are supposed to be on this sub, but this was just the way she wrote them.

  • Crab Nebula

Make a cream sauce with tablespoon butter, 2 tablespoons flour, 1 cup milk. Add about 1½ cup grated Tillamook cheese (or more—or less … if you are unable to obtain Tillamook, you may use any inferior American Cheddar, but the difference will be noticeable unless you have a calloused palate).

Now add about ½ pound? 2 cups?—Well, add enough crab. (If you are unable to obtain Pacific crab, you may use those flabby little Atlantic ones, or even lobster; but if you are reduced to King Crab, forget it.)

Flavor with sherry to taste, salt, pepper, parsley.

Serve on rice, or wild rice if you are J. Paul Getty, or English muffins, or whatever. —Cooking Out of This World, 104–05.

  • Líriv Metadí or Valley Succotash

(In her novel Always Coming Home, Le Guin constructs an anthropological record—with recipes of their foods—of the Kesh, a Northern California people who “might be going to have lived a long, long time from now.”)

Wash about two cups of small red beans (the Valley metadí is very like the Mexican frijole), and cook till done (a couple of hours) with half an onion, three or four garlic cloves, and a bay leaf.

Simmer about a cup and a half of parched corn until thoroughly cooked, and drain (or in season use fresh corn cut off the cob, uncooked).

Simmer a handful of dried black mushrooms for half an hour or so, and keep them in their cooking broth.

When all these ingredients are done combine them, along with:

the juice and pulp of a lemon, or some preserved tamarind pulp an onion chopped and fried in oil with some finely chopped garlic and a spoonful of cumin seeds

a large, mild green chile of the chile verde type, or a small, hot green chile (but not bell pepper), seeded and chopped fine

three or four tomatoes peeled and chopped coarsely

add, as seasoning, oregano, winter savory, and more lemon to taste

add dried red chile if you want it hot

To thicken the sauce, one dried tomato-paste ball was added; our equivalent would be two or three tablespoons of thick tomato paste. (If fresh tomatoes are not in season, double or triple the quantity of tomato paste.)

All this simmers for about an hour.

Serve with chopped raw onion to garnish, and a sour sauce or chutney made of green tomatoes or tomatillos, flavored with fresh or dry coriander leaf.

This dish, “too heavy for rice,” was accompanied by cornbreads, either of the hoe cake or the tortilla type. —Always Coming Home (New York: Harper and Row, 1985), 438.

  • Primitive Chocolate Mousse

(Also known as Mousse au chocolat, Chocolate Moose, Brown Mouse, and Please Sir I want some More.)

Included because it is curiously hard to find a good plain responsible recipe for this extremely simple and impressive dish. Serves 4:

  • 2 ounces bitter chocolate
  • 2 tablespoons water
  • ⅓ cup sugar
  • 4 egg whites, beaten stiff
  • 4 egg yolks, well beaten
  • 1 or 2 teaspoon vanilla, brandy, rum, or bourbon
  • ⅓ pint whipping cream, whipped

Melt chocolate, water, and sugar in double boiler. If you can stir fast, forget the double boiler.

Beat egg whites stiff. Beat egg yolks well and add vanilla and liquor. Beat in chocolate mixture (cooked a bit); fold in the egg whites.

At this point the French often stop, but about ⅓ pint whipping cream whipped can also be folded in, making it richer.

Chill at least 4 hours in individual dishes. You can make it the day before, in which case it gets spongy, which is equally pleasant. —Cooking Out of This World, 107.

Quick Question: If I cook chicken so that there's no pink in it, is it safe to eat?

I know everybody is going to say, 'get a food thermometer!' and I know, I'm going to. I just can't go to the store tonight.

I know it's supposed to be at the internal temp of 155-170. And I've read online that it can reach that temperature while still being pink on the inside. So I was wondering, if I cook it so theres no pink, is it safe to eat?

I don't mind dry meat, I'm adding sauces so it won't be too dry.

My Guide to making Delicious Veggie Burgers!

Ingredients: (serves 2):

2 veggie burger patties

1 onion, sliced

1 bell pepper, sliced (optional)

2 eggs

2 cloves of garlic, minced (feel free to put in more, too much garlic is never a bad thing)

Salad mix or lettuce

Oil (coconut, olive canola, whatever you have) or butter (I find that butter makes frying eggs much easier).

Ketchup

Mustard

Pickles (optional)

2 buns (optional) or whatever tasty bread you have laying around, I like ciabatta best. In the picture below I used some homemade bread given to me by my new neighbor, thanks J!

Instructions:

  1. Heat two pans: one over medium-low heat (because these burgers are frozen, you don’t want the heat too high for fear of overcooking the outside and under-cooking the inside) and the other over medium heat (this one will be for your onions).

  2. Once your medium-low heat pan is heated (you can check this by seeing if a flick of water sizzles on the surface), put 1 tbsp of oil into your pan and throw in your veggie burgers. Cook each side until lightly browned.

  3. In the meantime, heat another tbsp of oil in your medium heat pan and put in your onions. Cook until translucent.

  4. Once your onions are translucent, you can add your bell peppers and cook for about 10 minutes or until your onions are very lightly caramelized, stirring occasionally and adjusting heat accordingly to ensure that your onions don’t burn.

  5. After 10 minutes, remove bell peppers and onions from pan and lower heat to medium-low.

  6. Add garlic to medium-low pan and cook for about 2 minutes, stirring frequently. Take off heat and place with onions & bell peppers.

  7. Heat a pan to medium-low (you can use the same pan you used for burgers or veggies if you’re timing works out).

  8. Once the pan is heated, fry your eggs. For a guide on frying eggs, check out the basics here.

  9. Once everything is cooked, plate your patties, smother them with your bell pepper/onion/garlic medley and throw an egg on top of each.

  10. Add whatever condiments you like and enjoy!

I’m looking to try some vegan recipes. I’m not necessarily going vegan/vegetarian but I’m curious how many wholesome and delicious meals are out there that don’t require milk, meat, or eggs. (Please no tofu, I love the taste but I can’t digest it). I’d appreciate any ideas.

Need healthy recipes for s partner with texture issues!!

Help!! My partner doesn’t eat much in the way of fresh fruits or vegetables, and I’m trying to break her if that habit as we have a son together who is almost 1, and if he doesn’t see mom eating then then he might avoid them too!!

So far I’ve found she can eat: smoothies, fresh juice(with greens too!) and watermelon. Recently I’ve gotten her to eat spinach in Alfredo pasta, avocado on s turkey burger, and my proudest moment was getter by her to eat sweet potato, cauliflower, and carrots in a chicken curry I made. So it seems like as long as the veggies are cooked until mushy, she’s able to tolerate them.

So I’m begging, please help us find some recipes she might be able to eat!!

INGREDIENTS Nutrition 2 tablespoons olive oil 1⁄2 cup onion, chopped 2 tablespoons minced garlic 1 (8 ounce) can tomato sauce 1 (6 ounce) can tomato paste 2 tablespoons grated parmesan cheese 1 teaspoon dried basil 1 teaspoon dried oregano 1⁄2 teaspoon salt 1 teaspoon sugar 1⁄4 teaspoon black pepper 1 small bay leaf Add a fair amount of cayenne and red pepper flakes to spice it up

  1. Start by cooking onion and garlic on high heat in oil until transparent
  2. Add Tomato Sauce and Tomato Paste
  3. Add the rest of the ingredients and simmer (low heat) for 30-60 to bring out flavor
  4. Remove bay leave and enjoy yo sauce

What to make for my vegan friend whose mother just passed?

Title says it all. I want to help in any way that I can, didn't really know where to go. Any vegans here? And tried and true casseroles, etc. Most everything I make has some forms of cheese or meat, and if I just sub the vegan cheese on anything I've not attempted, I don't want it to come out poorly. Easy Sweet Chili Tilapia Rice Bowl

Ingredients (serves 2) 1-2 tilapia fillet (I used one because they were huge!) 2 cups of rice (white or brown, refer to the basics if you need guidance) 3 heads of broccoli, cut into bits 3 leafs green kale, cut in slivers 4 carrots, cut into pieces 1/2-1 cup of peanuts, minced. 3/4 cup sweet chili sauce, to taste (sometimes I really pile this stuff on) salt & pepper to taste 1 tablespoon olive oil

Directions 1. Cut up your vegetables and your peanuts 2. Cook the rice, here’s how. 3. Steam your vegetables. If you need guidance, refer to full recipe 4. While your veggies are cooking, cook the fish! 5. Pat your fish dry 6. Season it with sale & pepper, to taste. 7. Warm the oil in the skillet over medium-high heat. You’ll know the pan is ready for your fish once a small flick of water sizzles on contact. 8. Throw in the fish! (if it’s frozen, cover it at this point) 9. Cook the seasoned side for 2-3 minutes without bothering it. 10. Once the underside is gold and crispy looking, flip it over and season with sale & pepper. 11. Cook for another 2-3 minutes. You’ll know it’s done when the fish flakes away easily and no pink flesh can be seen. 12. Once everything is done cooking, put your rice in your bowls and drizzle with 1/4 a cup of sweet chili sauce. 13. Once your finished with the rice, throw the vegetables and tilapia on top of the rice, sprinkle the peanuts on top and drizzle the remaining chili sauce over that. 14. Enjoy!

Caesar Salad with Grilled Chicken ! Healthy and very yummy :)

Ingredients:

  • 1 lettuce
  • about 20 cherry tomatoes
  • 1 chicken breast
  • 1/4 fresh baguette
  • 1 egg
  • 2 garlic cloves
  • 1tsp mustard
  • 30g parmesan cheese
  • 1tsp olive oil
  • salt & pepper
  • 1/2 lemon

Tools:

  • Large mixing bowl
  • Mixer
  • Grill Pan
  • Cutting board
  • Knife
  • Fork
  • Citrus squeezer
  • Ramekin or small cup

Directions:

Step 1: Prepare the Caesar Sous

  1. Boil 1 egg for just one minute
  2. In a mixer, add boiled egg(clean), 1/2 squeezed lemon juice, 1 garlic clove, 1tsp mustard, 30g parmesan cheese and mix everything.

Step 2: Prepare the Croutons for Caesar Salad

  1. Cut 1/4 fresh baguette up to the croutons.
  2. Add 1 garlic clove
  3. Add a little bit of olive oil for the croutons
  4. Bake the croutons 8-10 minutes in preheated oven 180 celsius degrees.

Step 3: Prepare the Grilled Chicken Breast

  1. On a small plate put the chicken breast and add a bit salt, pepper and olive oil on both sides.
  2. Put the chicken breast on grill pan using medium heat
  3. Don’t forget to grill both sides

Step 4: Arrange the salad

  1. In a large mixing bowl cut and mix lettuce, cherry tomatoes and a bit of caesar sous
  2. Take 2 plates and split the mixing
  3. Add grilled chicken breast to each plate in a free form
  4. Add croutons to each plate
  5. Add caesar sous
  6. Add parmesan cheese

Sweet Potato, Feta & Brown Rice Patties

This is an easy to make meal with a wonderful combination of flavours that will please the whole family. Brown rice and sweet potato form the base of these patties. The flavour is augmented with a combination of sweet potato, feta, cottage cheese, garlic, and parsley added into the mixture. Cooked to a golden brown finish then served on a bed of baby spinach. Topped with your favourite chutney and you have an incredibly tasty meal that will become a firm favourite and regular on your home menu.

Ingredients:
• 1 1/2 cups Brown Rice cooked
• 60 g Feta Cheese I use Danish Feta
• 150 g Cottage Chees I use lite version
• 350 g Sweet Potato peeled & grated
• 2 cloves Garlic crushed
• 2 Eggs whisked
• 1/2 cup Plain Flour
• 2 tbsp Fresh parsley chopped, I use continental/flat leaf parsley
• Salt to season
• Pepper to season
• Vegetable Oil to cook
• Tomato Chutney to serve
• Baby Spinach to serve

Instructions:
1. Cook brown rice in advance and set aside to cool. This can be done well in advance and placed in the refrigerator until ready to make the patties.
2. In a large bowl, add brown rice, feta, cottage cheese, sweet potato, garlic, egg, plain flour & parsley. Season with salt & pepper.
3. Using damp hands, mix all the contents together until fully combined.
4. Create 16-18 patties with each being about 1/4 cup mixture.
5. Heat a thin layer of vegetable oil in a large frying pan over medium high heat.
6. Cook patties in batches until golden brown on each side. Approx 2-3 minutes each side depending on heat of the pan. Remove from pan and keep warm until ready to serve.
7. Serve patties on a bed of baby spinach and garnish with tomato chutney.

Smoked Salmon Stuffed Mushrooms

Ingredients:

1 avocado

1 C. smoked salmon

1/4 C. cream cheese

3 Tbsp. mayonnaise

3 green onions, chopped

18 large mushrooms

2 tsp. lemon juice

panko bread crumbs

2 tsp. olive oil

salt and pepper to taste

1-2 tsp. grated fresh ginger

1/4 C. cucumber, seeded, peeled, and sliced

Preheat oven to 425°

Rinse mushrooms and remove stems.

To a food processor add all ingredients except panko and olive oil.

Place mushrooms in a foil lined baking dish. Bake for 10 minutes.

Remove from oven, let cool, discard liquid in the caps.

Stuff with salmon mix and bake another 10 minutes.

Combine panko and olive oil in a bowl. Remove mushrooms, top with panko mix and broil until browned, about 45 seconds to a minute.
