How to make el Salvadorian meat pasteles?

I’ve been trying to figure out how to make some foods from El Salvador and found some other recipes but I couldn’t find one in English for making pasteles. Does anyone know a recipe?

INGREDIENTS

  • 1 ½ cups heavy cream, divided
  • 3 tablespoons nonfat milk powder
  • 1 cup chopped white chocolate or peppermint chunks
  • 1 ½ cups whole milk
  • ¾ cup granulated sugar
  • ⅛ teaspoon kosher salt
  • 6 large egg yolks
  • 1 teaspoon peppermint extract
  • 10–12 crushed peppermint candies or 4–5 crushed candy canes

INSTRUCTIONS

  1. Prepare White Chocolate: In a saucepan, bring ¾ cup heavy cream and 3 tablespoons nonfat milk powder to a simmer. In a separate bowl, place chopped white chocolate. Pour hot cream mixture over white chocolate and stir until melted and smooth. Set aside
  2. Prepare Ice Cream Base: In another small pot, simmer remaining ¾ cup heavy cream, milk, sugar and salt until sugar completely dissolves, about 5 minutes. Remove pot from heat. In a separate bowl, whisk egg yolks. Whisking constantly, slowly whisk about a third of the hot cream into the yolks to temper the eggs, then whisk the yolk mixture back into the pot with the cream. Return pot to medium-low heat and gently cook until mixture is thick enough to coat the back of a spoon (about 170º degrees F on an instant-read thermometer). Once ice cream base has come to temperature, remove from heat and stir in white chocolate mixture and peppermint extract. Strain ice cream base through a fine-mesh sieve into a clean bowl. Cover with plastic wrap and chill at least 4 hours or overnight
  3. Churn Ice Cream: Churn in an ice cream machine according to manufacturer’s instructions. About 2 minutes before ice cream has finished churning, slowly pour in crushed peppermint candies. Serve directly from the machine for soft serve, or store in freezer until needed

Dutch mustard soup.

Lots of variation recipes on the net. Does anyone of a tried and true recipe that they recommend. Seems that the differences have to do with how the soup is thickened, potato, corn starch, egg yolk but its mostly a cream leek soup with mustard.

A restaurant chain makes an amazing soup that I would love to know how to make myself.... There doesn't seem to be a recipe online that matches what they serve.

Does anyone know a good recipe for hot braised chicken? Seems impossible to find.

There are a handful of Chinese restaurants in my St. Louis area that make Hot Braised Chicken and for the life of me I can't find anything online recipe wise as to how this is made that isn't clearly very different.

I don't know if it's a regional dish that isn't super common for other Chinese restaurants across the country or what the deal is, but it's a very spicy chicken with a bit of sweet mixed in to make it bearable that has these whole peppers in there and is just the best Chinese food ever, but we've moved away and can't find it anywhere near here.

Anyone know a good recipe to try to make this at home? Searching online it's either like spicy braised wings or sweet fire chicken or something but none of the recipes seems right or looks right from the pictures and I can't find anything with the exact name/description/look that I've gotten from at least 3-4 STL Chinese restaurants.

Fondant Potatoes

Fondant potatoes are a concept I've only relatively recently become acquainted with. They make for an awesome accompaniment to a good steak. A little more complicated than your basic baked potato but if you're willing to do a little more work, the results are both attractive and delicious.. The recipe isn't too tough, but it can be a little confusing without the video here.

Ingredients

  • 5 medium yukon gold potatoes
  • 2 tbsp butter
  • a sprig of rosemary
  • 2 cloves crushed garlic
  • 1/2 cup chicken broth or stock
  • salt and pepper

Directions

  1. Preheat the oven to 450ºF
  2. Potatoes should be of a similar size, close to the size of a lemon. Peel them neatly from tip to tip to keep a nice shape.
  3. Slice off the narrowest tips on either side of each potato. Just remove enough to leave a flat and stable face.
  4. Slice those through the center, parallel to the flat faces and half way between. You should be left with chunks of potato shaped like a mesa.
  5. Warm some oil in a skillet. Cast iron is great for this. You need to be able to put the whole pan in the oven later.
  6. When the oil is heated to a shimmer, place the potatoes in the pan. Careful! That hot oil can splatter.
  7. When they're browned on one side, turn them over to brown the other side.
  8. Once the potatoes are browned on both sides, transfer to a paper towel to drain.
  9. Carefully pour the excess oil off into a safe container to cool before discarding.
  10. Return potatoes to pan and add the butter, rosemary and garlic. As the butter bubbles away, the rosemary and garlic will infuse it. Using a large spoon, baste the potatoes with some of this flavored butter.
  11. Add stock and return to the oven for 25 minutes.

Ingredients

  • 7 ounces of biscuits
  • 2 ounces of walnuts
  • ¼ cup melted butter
  • 1 pound sea buckthorn berries
  • 1 ½ cups of sugar
  • 2 tablespoons of gelatine
  • 1 teaspoon orange zest
  • 1 ½ cups of heavy whipping cream
  • ⅓ cup powdered sugar

Steps

  1. Add the biscuits, walnuts, and melted butter to a mixer bowl. Mix until even. Transfer to an 8-inch springform pan evenly spread it and press it gently.
  2. Add the sea buckthorn berries and sugar to a cooking pot over low heat. Stir them in, then simmer for 15 minutes. Remove from heat.
  3. Transfer them to a blender. Blend until smooth, then strain in a bowl. Discard the pulp and seeds.
  4. Add the gelatine and orange zest. Mix until even and set aside.
  5. Add the whipping cream to a bowl. Start whipping using a hand mixer. Add the powdered sugar in the process. Whip until firm.
  6. Add the buckthorn mixture and mix until even. Transfer to the springform pan and spread it evenly. Refrigerate for 6 - 7 hours.

Wisdom Teeth Surgery!!

Chicken thighs skewers

Another post made me think about it and I have some chicken thighs lying around. I wanna make some skewers from them to grill and I was wondering if somebody had some wonderful idea to marinade the thighs.

I'm not limited in common seasoning that's easily bought in continental Europe, aka a well stocked seasoning cupboard. So if somebody has great hacks for seasoning I would love to hear it.

Joe's candy pizza

  1. Use 1/2 cup of cheese spread.

  2. Combine 1 teaspoon vanilla, 1 cup of sugar, and 1/2 teaspoon salt in a medium saucepan.

  3. Bring to a boil, and simmer, covered, for 5-7 minutes.

  4. Remove from the heat.

  5. Let cool, and add 1 teaspoon liquid mozzarella.

  6. Use an oven mitt or rubber mallet to press the dough to a flat surface.

  7. Cut into 2″x2″ squares.

  8. Bake at 350F for 40-50 minutes.

Enjoy, and have more than enough ice cream for the next one.

Need a Raspberry Cake Recipe

My daughter has recently wanted to try baking and wants to make a raspberry cake for my brother’s birthday. Since this is her first attempt at baking on her own, I’m looking for a simple recipe. Would a boxed vanilla cake mix work if she adds raspberry purée? Naturally, she would rather make it from scratch, but that would be a good second option. Another thing is nobody here really likes buttercream or cream cheese frosting (a bit too heavy for us), so would a chocolate ganache pair well? Of course, if anyone here has a simple raspberry cake recipe, my daughter would love to try it. Thanks!!

Attempting THE Sexy Filthy Mush by Meghan Markle

Ok, so I just attempted to make this recipe by Meghan Markle (still in the process actually). However, I did not manage to cook it for longer than a little over 2 hours, because the bottom was close to burning. Even though I scouped the whole thing around plenty of times. It's become so much that it also seems unhealthy to just scrape it off and stir it through...

The sauce is already a little brownish because of it (not burned or too much though) and all pictures I find on the interwebz aren't.

Apart from being out of oil so baking it in some margarine for baking... I don't think such a tiny thing would've been the problem, would it? Good to know: I simmered it in a good old Dutch pan. Not a Dutch oven but one of those your grandma uses to make meatballs in. Please halp!

I will update if it's still good, having just simmered for only half the amount of time...

Blackened Fish Sandwich with Fresh Coleslaw

This is my first recipe post but it SLAMS so I figured I would share. Be gentle I’ve never written recipes before.

Backstory: I live in South Louisiana for work, not by choice. Did some fishing this summer and have a freezer full of speckled trout. Down here, poboys are everywhere- and I love poboys more than anything- but so are fried foods. One morning I was making a sandwich for lunch and used some leftover fish and coleslaw I made the night before. It. Was. Amazing. This recipe is based on a healthier alternative to a poboy.

Ingredients:

Submarine bread - I used ciabatta subs but anything that looks like a poboy is what you want.

Fish fillets - I honestly don’t think it matters what kind because you’re going to blacken it in spices and butter. Get enough to fill a sub

Butter

Cajun seasoning - or whatever you want your fish to taste like. Tony Sachers is too salty. Go for flavor, not salt.

Mayonnaise

Grey Poupon mustard (this is optional)

Green Cabbage

Red cabbage

Carrot strips

Lemons

Lemon juice

Honey

Salt

Black Pepper

Extra light olive oil

  1. Make your coleslaw

Cut up half a green cabbage, and a quarter of a red cabbage and put in a bowl. Add half a cup of carrot strips. Add zest of 2 lemons in the bowl. Mix.

Now the dressing. Get a separate small bowl to mix. Pour 1/4 cup of lemon juice, 1/4 cup of olive oil, 1 tablespoon of honey, add salt and black pepper to taste. I’m generous with salt and pepper

Note: I squeeze the two lemons I zested first, then I add lemon juice to get 1/4 cup. Add a little extra if you want, make it how you like it!

Pour in bowl with cabbage and mix. Cover and place in fridge.

  1. Blacken fish

Melt butter in a small bowl and add seasoning. Should be a butter and seasoning hot tub of deliciousness. Take your fish fillet and dunk it in butter/seasoning concoction. Place in a hot pan and cook till it’s done - maybe this is pan frying? Idk. It’s good this way, gets a little crispy.

  1. Assembly sandwich

Mayo, to taste, mustard, to taste, add fish, coleslaw, and EAT

Here is a recipe for ice tea that is healthy, tasty and super easy to make!

Ingredients:

  1. Tea leaves (preferred green tea leaves)
  2. Water
  3. Apple Juice
  4. Fresh Mint

Directions:

  1. Boil some water in a container and add tea leaves according to preference or taste.

  2. Let it boil for about 5 minutes. (Not more than 5 minutes as it may become bitter)

  3. Remove the container from the stovetop.

  4. Let the water cool down.

  5. Add half a cup of apple juice in the water and stir.

  6. Pour the drink over ice.

  7. Add mint leaves on top. (Add sugar if necessary.)

  8. Refrigerate the tea for about an hour.

  9. The tea is ready to serve! (You can add a few apple pieces for decoration)

PS. Add ingredients according to the number of people you want to serve. The above recipe serves one person.

500g flour 250g quark/joghurt 100ml oil 1 teaspoon salt 10 tbs milk 1 pck bakingpowder 1 egg

mix all of this together, form buns brush the buns with either eggwash or milk to get a nice golden crust 160°C (the setting with the fan?) for 30 mins

Food prep tricks you've learned.

I was wondering if anyone had some handy tricks that they have learned over the years and would care to impart.

For my part, I've learned that the absolute perfect way to cut a cake in two horizontally, is with cheese wire. Dental floss and string work if you have it, but cheese wire is strong and thin enough to seperate perfectly, and can be lined up easily to ensure that you are cutting at the midpoint all around. And the handles mean you can exert the perfect amount of force on it.

Best salad recipes or interesting things to add to a salad?

Looking for easy-ish things to add to my meal prep salads for work. I love an arugula or baby spinach base, usually include a boiled egg and some cucumber and rainbow tomatoes. Looking for healthy additions - an unexpectedly delicious dressing, something unusual like spiced tofu, or another creative recipe. Share with me all the ideas!

Amish Inspired Red Velvet Whoopie Pie

Ingredients

  1. 2 1/2 C Flour
  2. 1/3 C Cocoa
  3. 1/3 C Vegetable Oil
  4. 1 C Water
  5. 1 1/4 C Sugar
  6. 1/2 C Shortening
  7. 1/2 tsp Salt
  8. 1 tsp Vanilla
  9. 2 Eggs
  10. 2 tsp Baking Soda
  11. 2 Tbsp Red Food Coloring
  12. Cream Cheese Icing
  13. 8 oz Cream Cheese
  14. 1/4 C Unsalted Butter
  15. 3 C Powdered Sugar
  16. 2 tsp Vanilla

Instructions

  1. Preheat Oven to 400°
  2. In a medium size bowl measure out the flour, cocoa, salt, and baking soda stir with a whisk
  3. In a large bowl combine the sugar and shortening and mix using an electric mixer
  4. Next add the eggs and mix until smooth
  5. Add the water, vegetable oil and vanilla
  6. Once the wet ingredients are combined start to add the dry ingredients one half at a time
  7. Scrape the bowl to incorporate everything
  8. Lastly add the red food coloring. Make sure that everything is mixed thoroughly. I used a spatula after I mixed with a mixer to make sure all the dye was incorporated.
  9. On a parchment lined cookie sheet or a sheet pan scoop out the batter. I used a 2” cookie scoop.
  10. Place in a 400° oven and bake for 8-9 minutes.
  11. Once cake has cooled create sandwiches.
  12. I put about 2 to 3 tablespoons of icing per whoopie pie
  13. This recipe will make 14-15 Whoopie Pies
  14. Cream Cheese Icing
  15. Cream together room temperature butter and cream cheese.
  16. Add the powdered sugar and vanilla and mix on med to high speed for 3 to 5 minutes.

The Journy to the perfect Tiramisu

Hi everyone!

so this is my first post here i'm new ! yehey!

as Tiramisu was my father's favorite dessert.

and now at 2 years of hies passing

i set out on a journey to create the perfect tiramisu recipe. .

what does it mean?

well, each week I'm going to make 2 versions of Tiramisu,

and change a few variables in the recipe.

then give that recipe to a group of 10 tasters (my workmates' friends myself and most importantly my mom !)

the recipe that will be voted for the better out of the two

then in the wee after that, I'm going to take the winning recipe and create 2 versions out of that one then give people to taste.

so on and so forth.

until I'll get to a generation 8 Tiramisu.

at the gen 6 recipe, I'll gather all the information I have and give everyone exactly what is the winning one, and had a blast having all this amazing journey. and tasted so many different kinds and variations of that desert.

as i'm already in the 2nd generation.

Hot and sweet marinade

Disclaimer: I think this style has been made for and it probably has an actual name for it but at the moment I am not sure. Just let me know if this sort of marinade does have a specific name.

So I marinaded my chicken but this goes well for other meats as well. The basic recipe is Mexican Hot sauce (aromatic ones that may be made with other vegetables) and honey in a 3:2 ratio. I eyeballed it but the consistency I think works best when not thick but not runny. If you pour some from a spoon it should run off quickly but still be able to coat most of the spoon. After this point I added some Garlic Paste mainly because the garlic taste and smell is much better but feel free to just use minced garlic instead.

For seasonings, I just added the basic Salt and pepper but I'd recommend a bit of chili powder or paprika as well.

This the basic recipe but this can be modified a great much. For a more zingy taste, add a small bit of ginger, lemon or lime zest and finally a bit of juice from the lemon or lime. The base of this marinade is the honey and hot sauce so whatever you add, make sure it doesn't overpower that too much.

This is my first recipe and it smells really good. I will be making Chicken Rice with this tomorrow. I hope you enjoy this recipe

Messed up my Hummus and i need help.

This was my first attempt in making a hummus and I did the following.

  • Soak and boil chickpeas with baking soda.
  • added lemon juice, salt, tahini , oil and mixed it using a hand blender.
  • It tasted too rich and that tangy flavor was missing.
  • It tasted too rich so I added a little ice cubes and now it's watery and ruined 😭😭😭

Please help me revive my hummus, how do I make it taste better? It felt I like I needed to add more lemon juice

What should I cook for my family?

I've been asked by my parents to cook dinner tomorrow, and I want to make something that isn't pasta with meatballs or hamburgers. I'm looking for something easy to make that can be made in around an hour. Perhaps something with pasta or beef as I'm quite confident when it comes to preparing those two ingredients, but I'm open to any suggestions.

I know how to grill, we have a food processor, plus some more basic cooking stuff is what I have at my disposable.

Trying to recreate or find a similar marinade that isn't sold in stores anymore.

Hello!

My family used to cook with this marinade about 11 years ago. We all still talk about it and I finally decided to take the time and track down as much as I could about it.

I was able to find the exact product on amazon. (https://www.amazon.com/Seasons-Aspen-Marinade/dp/B00012HR76).

The amazon link provides the list of ingredients, but not the amount. I'm assuming they are listed like they are on food labels (in order of predominance).

ingredients: Apples solids, apple juice, soy sauce, sugar, fermented rice, water, fresh garlic, fresh onion, fresh ginger.

I would love to find out if this is a common type of sauce and find out if a different company makes something similar.

Or if I make it myself I need some culinary advice. For the Apples solids I would probably just mash it up a bit. But for the apple juice I guess I would just buy any apple juice drink at the store. But maybe mix the two and just buy apple sauce? What do you think?

And for fermented rice... I am just completely lost.

Any advice would help! Thanks!

First time making lasagna? Tips?

Hello everyone. So I cook alot of things but never have I ever made lasagna. We usually buy it frozen.

I picked up oven ready lasagna noodles since the grocery store recommended that.

I browned ground beef and sauteed onions to go with it. I'm just a tad bit confused about the layers, and what to do with my ricotta. I love lasagna with ricotta cheese but do I put it straight in? Does it need to have anything added to it? Is it its own layer? Should I alternate the meat and ricotta layers? How many layers should a lasagna have? Does cheese only go on the top? Never thought it would be so difficult lol.

I came across this recipe and never knew marinated cheese was a thing, so I thought I'd share.

French-Style Marinated Cheese

Prep Time: 10 minutes

Total Time: 10 minutes

Yield: Serves 3 as appetizer

French-Style Marinated Cheese will dress up your cheese board, appetize your cocktail party, or be a cherished savory gift from your kitchen.

Ingredients

  • 6 ounces Jarlsberg Original, Lite or Hickory Smoked Cheese
  • 2 ounces black or green olives
  • 1 small shallot
  • 1 tablespoon fresh oregano or tarragon (or 1 teaspoon dried)
  • 1 teaspoon green or black peppercorns
  • 2 sprigs fresh thyme (or 1/2 teaspoon dried)
  • 1 clove garlic
  • 2 tablespoons white wine vinegar
  • 4 tablespoons extra-virgin olive oil
  • 1 glass canning jar (a jar with a tight lid)

Directions

  1. Cut cheese into small cubes, thinly slice olives and shallots. Finely chop fresh oregano, crack the peppercorns, and finely mince thyme and garlic.
  2. To make marinade: Whisk vinegar with oil, oregano, peppercorns, thyme and garlic. Layer cheese, olives and shallots inside jar. Cover with marinade and seal with lid.
  3. Place jar in refrigerator to marinate 1 day. For best results, use within 3-4 days.
  4. To serve: Pour out into a bowl to place on your cheese board. Offer toothpicks for guests to spear cheese cubes and olives.
  5. If giving as a gift: Leave the lid on and tie a bright ribbon around the top of the jar. Hang a gift tag, and voila!

Delicious Thai Massaman Curry Recipe

Ingredients

2 pound chicken chopped

2 potatoes chopped

1/2 cup roasted peanut

5 crushed garlic

2 onions cut into wedges

1 cup chicken broth

1 cup coconut milk

1 cup massaman curry paste

3 cinnamon Sticks

2 tbspn cornflour mix with 1 cup of water

olive oil or vegetable oil

salt to taste

Instructions

Heat the pressure cooker and add oil. After few minutes of heating the oil add onions and crushed garlic. Saute it for 4 minutes in medium flame. After turning to golden brown color remove it in a separate plate.

Wash cooker with warm water. Heat oil, add chicken, fry it until chicken turns to brown color and remove it in another plate.

Add back the cooked chicken into the cooker, massaman curry paste, fried onions, chicken broth, coconut milk, cinnamon sticks, potatoes, salt and stir it well.

Put 2 cups of warm water, cover the lid and cook in medium flame.

After you hear 2 whistle from the cooker, close the gas and let air pass away naturally from the cooker.

After air is completely gone from cooker, remove the lid and add cornflour paste, roasted peanuts and lemon. Cook it until curry boils.

Finally, mouth watering massaman curry is ready to be served with rice, roti or naan.
