Food prep tricks you've learned.

I was wondering if anyone had some handy tricks that they have learned over the years and would care to impart.

For my part, I've learned that the absolute perfect way to cut a cake in two horizontally, is with cheese wire. Dental floss and string work if you have it, but cheese wire is strong and thin enough to seperate perfectly, and can be lined up easily to ensure that you are cutting at the midpoint all around. And the handles mean you can exert the perfect amount of force on it.

Any others that people have found?
