Mystery deli salad

When I was a kid in the 80s there was a shell deli salad my mom used to buy from Canada Safeway. It had small shells, a tangy red sauce (tomato?) and to my kid taste was totally yum.

I'm now in another hemisphere. Do they still make it? Does anyone have the recipe so I can make it?

I farm shrimp so I have a lot and I’m pretty much expected to bring shrimp to events. I’m a bit tired of doing cocktail shrimp so I’m looking for some other ideas that can be made ahead and don’t need to be cooked at a party. If it can be served cold then that’s even better because I’ll probably use it a lot for tailgating and we don’t usually cook at our spots.

[Question] Looking for a way to make nachos-inspired muffins or bread

Let's say the nachos goes something like this:

  • Corn chips
  • Meat
  • Beans
  • Cheese
  • Diced tomato
  • Sour Cream
  • Guac

I really want to try and incorporate this into a muffin or even a loaf of bread, minus the meat. I'd like to leave the corn chips out because I dont think they will be great for texture. How do I incorporate the guacamole and sour cream?

Is there a typical "nachos" spice mix?

San Francisco Sourdough Waffles

I'm actually not a huge waffle fan. But my uncle made some leavened waffles once that were awesome. I was playing around with sourdough starter for awhile, so it was a natural progression to wanna try some sourdough waffles.

For sure the best recipe I've pulled together in a long time. If you can get yourself some natural SF sourdough, I highly recommend giving this a try. Sourdough and maple syrup are awesome together. Full recipe including video and photos here.

Ingredients

  • 1/2 cup grapeseed oil (or sub any oil with a neutral flavor)
  • 1/2 cup sourdough starter
  • 1/2 tsp vanilla
  • 1 cup flour
  • 1 tbsp honey
  • 1/2 tsp salt

Directions

  1. If you live in an area where there's enough yeast in the air, you can make your own starter easily. Just mix flour and water. Every day, add a little more flour and water. When it starts to double in volume after a feeding, it's ready to go.

  2. A little trick. I get tired of feeding my starter sometimes. So I spread some starter out on parchment and let it dry for a few days. Then I crumble it up and store it in a zip lock bag. Add a chunk to a brand new starter and it will activate faster.

  3. So, once you have your starter going, if you're feeding it correctly, you'll quickly have more than you know what to do with. That's where this recipe comes in handy.

  4. Combine all of the ingredients. Mix well. Put the mixture in the fridge overnight. The next day, use it to make waffles like you normally would. Easy... and, like I mentioned, particularly delicious with real maple syrup.

The Perfect {Vegan} Banana Bread

INGREDIENTS 3 medium ripe bananas¼ cup vegetable oil¼ cup almond milk½ cup light brown sugar2 tsp pure vanilla extract2 cup unbleached all-purpose flour1 tsp cinnamon1 tsp baking soda½ tsp saltsliced bananas, for topping INSTRUCTIONS Preheat the oven to 350F. Spray a 9×5 loaf pan with nonstick spray, then flour. In a large mixing bowl, roughly mash the bananas. You don’t want total mush, so leave some little chunks!Add the brown sugar, oil, vanilla, and almond milk, and whisk to incorporate.Sift in the flour, baking soda, salt, and cinnamon, and use a wooden spoon to mix.Transfer the batter to your prepared pan, and top with the extra banana slices.Bake for about 45 minutes, then cover with foil and bake for 10-15 minutes longer, until a toothpick inserted in the center comes out with just a couple crumbs.

Healthy baking recipes

I love baking !!

So much so that a part of the reason I left my job for one with more normal hours was so I could bake more, but unfortunately my love of baking combined with a new desk job ( used to work 60 hours a week running around a restaurant) has meant I'm quickly putting weight on, I easily gain weight and get quite depressed and loose confidence when I do.

So I need some suggestions for some baking recipes that are fun to make and I won't feel too guilty about eating. I'm fairly competent though things with small fiddly details I do struggle with.

Thank you in advance for any help.

Software to manage recipes for free

Hello I would like to know some great softwares that can fill my requirements to manage my recipes : free, offline (i can make screenshots if its not possible), sync (shopping list), from scratch and can make standardized formatting/layout

i have OneNote by the way, haven't used it this much but it looks like a good alternative to Evernote. Not looking for some internet recipe auto grabbers even though the function can be usefull depending from which site it grab them so i would like to know if i should stick to OneNote or try something else like Google Keep, but really offline + sync (unless its like pdf or something that i can easily read on any device, but not proprietary thing)

Vanilla & Raspberry Yo-Yo’s

Yo-Yo’s are a classic Australian biscuit. These are close to my all-time favourite biscuit. The buttery biscuit has a wonderful shortbread like texture. Made with custard powder, which distinguishes them from melting moments, provides the perfect biscuit base to sandwich a raspberry buttercream filling. Baked to a golden brown finish, each mouthful is an amazing crunchy, yet melt in your mouth delight. These biscuits should be stored in the refrigerator. You are best to chill them, when initially made, to allow the buttercream to firm. I like the biscuit base to be firm and crunchy so I bake them for the full 15 minutes rather than undercook them.

Ingredients:
• 200 g Butter softened
• 1/2 cup Caster Sugar
• 1 tsp Vanilla Extract
• 1 1/2 cups Plain Flour sifted
• 1/2 cup Custard Powder sifted
Raspberry Buttercream
• 150 g Butter softened
• 2 cups Icing Sugar sifted
• 1/4 cup Raspberries use frozen raspberries

Instructions:
1. Pre-heat a fan forced oven to 180°C (350°F).
2. Line a baking tray with baking paper
3. Add butter and sugar to a mixing bowl and using an paddle mixer, beat until pale and fluffy.
4. Add vanilla extract and mix through
5. Add plain flour and custard powder and continue mixing until a soft dough forms.
6. Roll dough into 24 balls and place on the baking tray. Each ball will be around 2/3 size of a golf ball. Space the balls apart leaving room to expand. Using a fork gently flatten each ball. Note: The dough will expand as it bakes.
7. Place in oven and bake for about 15 minutes until golden. Remove from oven and set aside to cool completely.
Raspberry Buttercream
1. Add butter and icing sugar to a bowl and beat until pale and fluffy.
2. Add raspberries and continue mixing until fully combined.
3. Spread buttercream and sandwich between a pair of biscuits creating 12 yo-yo biscuits in total. Store in refrigerator.

Does anybody have a recipe for the type of Cookies like you get in the shops? Most cookie recipes are cake-y and are just completely different. [Question]

Almost every cookie recipe I've ever come across has been more cake-like than proper cookies. Proper cookies should be firmer, a bit crunchy, and taste better, like the ones you get from a bakers or in a shop.

I'm hoping for the kind of cookie that looks less like this: https://imgur.com/a/YmrN5 or this https://imgur.com/a/a97de

And more like this: https://imgur.com/a/LssbG

Does anybody have a recipe for the type of cookie you get in a shop? I don't really know how else to explain it.

Chicken Florentine

This is an easy to make chicken meal that does not require many ingredients. The white wine cream sauce blends perfectly with each juicy mouthful of chicken, spinach & mushroom. The golden brown chicken fillets are served on a bed of spinach and tender mushroom. The spinach and mushroom add a vibrant, healthy taste to the dish. The chicken is then topped with a thickened white wine & cream sauce. Garnished with fresh parsley and you have fantastic, easy to make weeknight meal.

Ingredients:
• 4 Chicken Fillets breast fillets
• 4 tbsp Butter
• 150 g Baby Spinach
• 200 g Mushrooms sliced
• 1 Spring Onion thinly sliced
• 2 tsp Plain Flour
• 1/3 cup White Wine
• 3/4 cup Thickened Cream
• 2 tbsp Parsley diced
• Salt to season
• Pepper to season

Instructions:
1. Heat 1 tbsp butter in a frying pan over medium high heat.
2. Add chicken fillets and cook until browned and cooked through. Remove from pan and keep warm.
3. Wipe pan clean using paper towels. This step will enable you to create a white sauce to top your chicken.
4. Add 1 tbsp butter to pan then add spring onion. Cook for about 1-2 minutes until spring onion softens.
5. Add plain flour to pan and stir to mix through. Cook for about 30 seconds.
6. Add white wine to pan and stir to mix through. Cook for about 1 minute or until wine is reduced by about 50%.
7. Add cream and stir to mix through. Cook for about 2-3 minutes to allow sauce to thicken. Season with salt and pepper. Stir occasionally.
8. While cream is cooking, in a separate pan, heat 2 tbsp butter over medium high heat.
9. Add mushrooms and cook for 2-3 minutes or until mushrooms are softened.
10. Add baby spinach and cook for 2-3 minutes or until wilted.
11. Spread mushroom and spinach evenly over 4 plates, place a chicken fillet on top and then pour cream sauce over each chicken fillet.
12. Garnish with parsley and serve.

A Better Roast Chicken

I roasted chicken in pretty much exactly the same way for years. For some reason I decided to change it up recently, and I really like the results.

There's some added detail, more photos and video here

Ingredients -4-5 medium cloves garlic -1/4 cup olive oil -1/4 tsp salt -1 whole chicken -Salt and pepper to season

Directions 1. Chop garlic and mix with oil and salt. 2. Unwrap your chicken. Set aside the giblets for gravy. 3. Careful not to tear the skin, run your fingers under it, all along the breast and thighs, gently releasing it from the meat. Pour the garlic olive oil under the skin, and spread it out evenly. 4. Tuck the wings under, then cross the legs and slice a small hole in the leftover skin at the opening and wrap it around the outer leg for a stringless truss. 5. Season well with salt and pepper. Wrap in foil. Tuck it away in the fridge for a day or two. I highly recommend 48 hours. 6. When you're ready to roast, get the oven to 450f. Put the bird on a baking tray. Roast for 20 minutes. 7. Now, kick down the temperature to around 350f. Roast for another 30-45 minutes. 8. Your chicken is done when a thermometer inserted at the deepest point of the breast and thigh read greater than 160f. Let it rest for 15-20 minutes before carving.

Apple Ice Cream With Honey Roasted Almonds

Hello I'm new here and it's my first time to make a post. Please if there's anything wrong with this post send me a message and don't block me right away. I'm willing to abide by the rules I just don't understand everything yet. Allow me to ease in to this.

Anyway,

This recipe was shared to me by a friend, Jayashree Trao. I haven't tried it yet 'coz I'm still too busy so I'm sharing it with you. If anyone can try this, tell me how it goes. :)

I'll also tell you how it will go once I've tried it too!

Ingredients:

· 400 ml condensed milk

· 1 apple

· ½ cup milk

· 200 ml fresh cream

· 1 teaspoon milk cream

· 2 tablespoon honey

· 8 almonds cut into thin pieces.

Instructions:

  1. Wash and cut the apples.

  2. Make it into a puree.

  3. Add condensed milk and milk to it. Give a swirl.

  4. In another bowl, blend the fresh cream and milk cream together.

  5. Put the apple and condensed milk puree in an ice cream tray. Gently fold in the cream mixture. Set it in the freezer.

  6. Before serving, take honey and roast the almonds pieces in it.

  7. Garnish it over the ice cream.

Note: Do not peel the apples.

This is also featured on my blog Make apple less boring by preparing it using these two recipes!

Peach Plum Cobbler

In a heavy saucepan cook 4 peaches and 4 plums, cut into pretty big chunks, with no more than 1/3 cup brown sugar, a couple teaspoons vinegar, and a pinch of salt. Bring to a boil, then keep it boiling at medium low heat until the juices create a thick syrup (this takes up to 15 or 20 minutes) Keep this nice and warm. If the fruit lets off a lot of juice, thicken with some kind of starch (corn, rice, flour all work nicely)

Heat oven to 350 F ; when it's hot, put a 2 quart baking dish (I use an 8x8 Pyrex ) into the oven to heat. It needs a only a few minutes. Melt 1 cube butter in the dish (for all the dumbys this is the dish that is in the oven)

Meanwhile, mix 2 teaspoons baking powder, a pinch of salt, 1 cup sugar, and not quite 1 cup flour (imagine 1 cup minus 3 T ) Mix this so it's evenly distributed.

Pour the hot fruit into the buttery pan.

Pour 1 cup of warm milk into the flour/sugar mix and stir till just combined. Pour this in the middle of the fruity/buttery pan. DO NOT STIR

Sprinkle a bit of sugar on top, then put into the oven and bake till the top is golden brown. Around 30 minutes or so

This is great to make a few hours before you want to serve it! It is most supreme when it is lukewarm

Also, you can use any combo of fruit you like. Use a generous 1 pound of whatever the hell you want or have

It would also be good with little bits of marzipan tossed in with the Poured Fruit , Yum Yum Good

Buffalo Chicken Rolls

3 Tbsp flour 2 tsp parsley 1 tsp garlic powder 1 tsp onion powder Salt and pepper 2 lbs chicken breast or tenderloins 1 bottle buffalo sauce 2 Tbsp Butter 20 tortillas 2 cups sharp cheddar cheese, shredded Oil for frying

Mix together flour, parsley, garlic powder, onion powder, salt and pepper. Dredge the chicken in the mixture and place in a crockpot. Cover with buffalo sauce and add butter, cooking on high for 3-4 hours or low for 7-8 hours.

Once cooked, shred the chicken while in the crock pot. Heat the oil in a pan on the stove top on medium heat.

Begin assembling the chicken rolls. On each tortilla, place about 2-3 Tbsp of the chicken mixture in the center and sprinkle with cheese. Roll the tortilla up and add a little cheese on the inside edge of the roll to prevent unrolling during cooking.

Place the roll in the oil for about 1-2 minutes per side. Set on a paper towel to cool.

If freezing, let the rolls cool completely before placing in freezer-safe container. Reheat at 400 degrees for 15-18 minutes.

Beef Goulash

Goulash is somewhere between a soup and stew and there are many, many different versions of goulash that can be found. This is a more Hungarian inspired version. This dish uses simple ingredients, but really gets a wonderful flavour from the paprika added in to the slow cooking. The steak is initially cooked and seared before placing into a slow cooker with a mixture including tomatoes, beef stock, honey, garlic & onions. The flavour is wonderfully spiced with plenty of paprika and smoked paprika added in to slow cook through the dish. Capsicum is added towards the end to provide a great crunchy texture. Finally sour cream is stirred through to enhance the beautiful flavour to another level.

Ingredients:
• 3 tbsp Vegetable Oil
• 1 kg Chuck Steak or other casserole steak cut into bite size pieces
• 3 tbsp Plain Flour
• 2 Brown Onions diced
• 2 cloves Garlic crushed
• 2 tbsp Tomato Puree
• 2 tbsp Paprika
• 1 tbsp Smoked Paprika use normal paprika if you don't have the smoked variety.
• Salt to season
• Pepper to season
• 800 g Diced Tomatoes 2 x 400g cans
• 2 1/2 cups Beef Stock use stock cubes
• 1 tbsp Honey
• 2 Red Capsicums diced
• 1 cup Sour Cream and extra to serve
• 400 g Penne Pasta
• Fresh parsley to garnish

Instructions:
1. Add plain flour & steak to a large bowl and coat steak with flour. Season with salt & pepper.
2. In a large frying pan over medium heat, add steak and cook until lightly browned. Cook in batches if required. Remove from pan and set aside.
3. Add onion to pan and cook until softened. About 3-4 minutes.
4. Add garlic and tomato puree and stir to mix through.
5. Add beef back to pan and stir to mix through.
6. Sprinkle beef with paprika, salt and pepper and stir to mix through.
7. Add diced tomatoes, beef stock and honey and stir to mix through. Bring to simmer.
8. Once simmering, pour contents into a slow cooker and cook on high setting for 3 hours 30 minutes.
9. After the 3 1/2 hours, add capsicum to the slow cooker and stir to mix through. Cook for a further 30 minutes.
10. About 15 minutes before the slow cooking is complete, cook the penne pasta per packet instructions.
11. Once the slow cooking is complete, add sour cream and stir to mix through.
12. Serve with penne pasta and top with some extra sour cream and garnish with parsley leaves.

What are your favorite store-bought ranch/blue cheese brands?

I've always preferred the ranch or blue cheese from restaurants and I haven't been able to find a store-bought version of either that satisfies.

I'm usually into the more milder tasting dressings, especially with blue cheese. I've tried making my own blue cheese, but it either ends up tasting either not right, or too strong.

What are your guys' thoughts?

Workshopping some pies - help request

Okay. There are a couple pies I'd like to try to figure out how to make, and I'm not sure where to start, so help me out, hivemind. I want to turn a duck banh mi sandwich into a pot pie. I am thinking to use a biscuit crust for the top, possibly baked separately and added on. I would pickle some veggies - not sure if those should be baked or not. Then a spicy mayo drizzle for the top. Maybe jalapeno, mint, and cilantro in the crust or the biscuits. Thoughts? How would you go about this? That's as far as I've gotten so far.

Second, I made these spring rolls last week with nectarine, avocado, and imitation crab, and my boyfriend wants them as a pie. NO clue where to go. I have thought about avocado mousse (although a lot of that would be overwhelming), and I've thought about using rice flour in the crust to reflect the rice paper, but otherwise, that's the end of my thought process.

Help? Be creative.

Easy Baked Salmon Mango Egg Rolls

While egg rolls are traditionally deep fried and not exactly healthy, these are baked and wont make you feel icky. 133 Calories for each roll, a mere 4g of fat, and 7g of protein! More information and photos at: http://elephantstep.com/index.php/2017/07/13/salmon-mango-egg-rolls/

Ingredients

4oz Wild Caught Salmon

1 mango, chopped small

2 C shredded cabbage

1/4 C finely chopped cilantro

Salt to taste

6 egg roll wraps

Directions

Bake salmon at 350 degrees until flaky, but still moist and tender. (Temp to 145 Fahrenheit) Leave oven on.

Shred cabbage, and sauté on stove top with 1 tsp sesame oil until soft, about 5-7 minutes.

Chop mango, and cilantro, and combine with salmon and cabbage. Add salt to taste.

Wrap egg roll according to directions on package. It's a good idea to have the surface you are wrapping on slightly wet, and have a small bowl of water close so you can seal the edges.

Brush each egg roll with sesame oil, and place on pan lined with parchment paper. Bake for 20 minutes, turn over, and bake for another 10. Outside should be golden brown and crispy.

Serve immediately with sauce of your choice! I used a mango sauce I found in the fridge-was amazing!

The best low-fat peanut butter cups - only 38 kcal each

Ingredients (for approx. 12 peanut butter cups)

For the chocolate layer

  • 1/4 cup (35g) raw cocoa
  • 1/4 cup (60g) unsweetened almond milk
  • 2 tbsp chocolate whey
  • 1/4 cup (70g) low fat greek yogurt
  • 1 tbsp stevia

For the peanut butter layer

  • 1/5 cub (35g) PB2
  • some water
  • 1 tbsp stevia

Macros per peanut butter cup

  • Calories: 38 kcal
  • Protein: 4g
  • Carbs: 3.5g
  • Fat: 1g

Instructions

In a small bowl, combine all ingredients for the chocolate layer and mix until everything is smooth. In another small bowl, combine the ingredients for the peanut butter layer and mix also until smooth. Both mixtures should be creamy.

Line 12 silicon muffin cases (or a muffin tin) and pour 1 tsp of the chocolate mixture into each cup. Follow with 1 tsp of the peanut butter mixture and top it again with 1 tsp of the chocolate mixture.

Place the muffin cases in the freezer for approximately 1 hour and enjoy!

These peanut butter cups must be kept in the freezer, as they get too soft in the fridge. Let them sit for a minute or two, before you eat them, though.

How do i improve my pizza dough ?

My current pizza dough tastes great but the texture isn't that great.

(500g type 00 flour, 325ml water, 21g fresh Yeast, 1.5 tbsp olive oil, 1 pinch of salt Knead it by hand for 10 minutes, let it double in size at room temp, divide it into 4 dough balls and they each one double in size, coated in olive oil so they don't stick)

When proofing It, a lot of big bubbles form and when stretching it there are lots of little holes which hurt the structural integrity and makes it hard to stretch evenly.

When baked the finished pizzas have lots of little holes in the bottom, not enough to make the sauce leak but enough for the bottom not to be as crisp as it could be.

When i buy premade dough it turns out perfect with a nice crust so it can't be the oven.

I thought about kneading it longer, adding less water, using cooler water and have it rise longer, what would you recommend ?

Also i would like my dough to be a little thicker can i just add more flour and water ? If so how much ?

Is it too late to make eggnog for Christmas? I love eggnog (the store-bought stuff is what introduced me to it) and want to try making it myself. But there is a lot of information to process. Help, please!

Cooked vs. non-cooked? I was going to use this recipe

https://www.youtube.com/watch?v=lhykSh3EGk8

because everything I've made from these guys has worked out before. But then I read something about it killing the flavor if cooked? Can someone help me with all the possible methods of making eggnog? Spiked Vs. Non-Alcoholic? My younger brother would like to try some. My dad doesn't drink. Can I just put a shot of Bourbon in my personal serving? Thank you.

EDIT: I asked about the " too late " part because some of the things I read online said something about how eggnog needs to be left in the fridge for some time. from 6 months- 1 year in some situations?

Quinoa Tabbouleh

Mmmm. So refreshing, easy, and cheap. Plus it's impressive, so make it for yo mama

look how tasty

All you need is:

•quinoa •cucumber •tomato •onion •parsley •lemon

Ok so COOK the quinoa

(Directions are always on the bag, which usually suggests using a cup of quinoa, which ends up as a fuckton more when cooked. I keep all the cooked quinoa in a separate bowl to use for various recipes. It saves well and that way you don't end up with 6 meals worth of the same recipe, if you're cooking for one)

While that's being done, CHOP CHOP the cucumber, tomato, and onion

(I like to dice my onion pieces real small, use cherry tomatoes and cut like 5 of those pretty small for a little tomato in every bite, and I like to keep the cucumber pieces slightly bigger so you can still get that crunch)

After quinoa is cooked, put it in a bowl and:

SQUEEEEZE some lemon wedges on it SNIP SNIP some parsley in there aaaand MIX in all your chopped goodies

Enjoyyy

Since this isn't baking I didn't put a lot of super strict rules on this. Make it how you wanna! You like cucumbers and tomatoes but aren't a fan of onion breath? LOAD THAT BABY UP WITH THE FRUITS, SKIP THE VEG! Get to it hungry people.

Crushed Potatoes

This came about in a sorta lame and depressing kinda way. We hit the Wholefoods buffet for lunch. They had this dish listed as "Cuban Crushed Potatoes". I had to try it because a. that sounds super authentic (not!) and b. I like potatoes.

So we're eating lunch and it turns out my buddy got the potatoes as well. And he was super psyched on them. They were alright. Long story short I did some research, found what may be the original source for the recipe, and recreated them for lunch the next day, but better. Check out the recipe with full video

Ingredients

  • 1 pint padron chilis
  • 2 lb new potatoes
  • Salt
  • Pepper
  • Cumin
  • 1/2 lb sharp cheddar

Directions

  1. Submerge potatoes in lightly salted water. Place over medium heat. Simmer until tender. They're done when a fork or sharp knife goes right through the largest potato smoothly.

  2. Clean and destem the padron chilis.

  3. Heat some olive oil over high heat. Add the chilis when the pan is hot. Careful if the chilis are wet. They could ignite. Just cook them until they blister.

  4. Grease a baking pan, spread the potatoes out in one layer. I cut mine in half because they were a little big. Use a cup or a bowl to crush the potatoes. Not too much, you just want to flatten them a bit.

  5. Season the potatoes with salt, pepper, and cumin. The cumin is a crucial part of this dish. But just a light dusting will do.

  6. Chop up the chilis and sprinkle them over the potatoes.

  7. Dice up the cheddar. Add it on top.

  8. Set the oven to broil and set these guys under it for maybe 10 minutes. Watch carefully though. Check every few minutes. If you're not comfortable with your broiler, things can go out of control fast. You just want the cheese to melt.

Anti-Inflammatory tea

Ingredients:

1-2 Tablespoons of dried turmeric or one stick of fresh yellow or white turmeric.

Half a stick fresh cinnamon, broken

5 cloves

Half a teaspoon of pepper or peppercorns (piperine aids absorption)

Small stick of fresh grated ginger.

Method:

Gently simmer for 20-30 minutes, being careful not to boil. Add enough water for some to steam off.

I made this little drink every other day, and almost immediately feel much better! Sometimes I add passionflower. If it's too strong reduce the amount or dilute.

Beef Teriyaki Meatballs

Meatballs are usually an easy dish to make and cook. You do need to get your hands a little messy, but the result with a homemade teriyaki sauce is really worthwhile. The pan fried beef meatballs are first cooked then coated and simmered in a homemade teriyaki sauce of garlic, soy sauce, water, ginger and brown sugar which is nicely thickened with corn flour. Serve as a main meal or appetiser. Either way you won’t be disappointed with these juicy tender meatballs. As a main meal, serve with your favourite vegetables or salad. Equally served with Jasmine rice is also a great option. There is not a large amount of sauce, but they still mix beautifully with Jasmine rice.

Ingredients:
Beef Meatballs
• 500 g Beef Mince
• 1/4 cup Breadcrumbs
• 1 Egg
• Salt to season
• Pepper to season
• 2 Spring Onions thinly sliced
• 1/2 tsp Ground Ginger
• 2 cloves Garlic crushed
• Vegetable Oil to cook meatballs
• Spring Onions to garnish
• Jasmine Rice optional to serve

Teriyaki Sauce
• 1 tbsp Vegetable Oil
• 1 clove Garlic crushed
• 1/4 cup Soy Sauce
• 3 tbsp water
• 1 tbsp Brown Sugar
• 1/2 tsp Ground Ginger
• 1 tsp Corn Flour

Instructions:
Beef Meatballs
1. In a large bowl add beef mince, breadcrumbs, egg, salt, pepper, onion, ginger and garlic.
2. Mix to combine all ingredients. This is best achieved by using your hands.
3. Divide mixture to roll and create approx 12 meatballs. Each meatball will be a little bigger than a golf ball size.
4. Heat oil in a large frying pan on medium high heat.
5. Once oil is hot, add meatballs to pan and cook until all sized are browned and meatballs are cooked through. About 8-9 minutes.
6. Remove meatballs from pan and add to saucepan with teriyaki sauce (refer teriyaki sauce instructions below).
7. Coat meatballs with sauce and simmer for approx 2 minutes.
8. Remove from heat, garnish with spring onions and serve. Serve with Jasmine rice or by itself.

Teriyaki Sauce
1. Heat oil in a medium saucepan over medium high heat.
2. Add garlic and cook for 30-60 seconds.
3. Add soy sauce, 2 tbsps water, brown sugar & ginger. Reduce heat and simmer for 2 minutes.
4. In a separate small bowl, add cornstarch and 1 tbsp water and stir to combine. Add to saucepan.
5. Cook sauce until thickened and continue to simmer until meatballs are cooked and ready to be added to the saucepan.

Partially Cooked Packaged Home Fries?

I was given a massive bag of "home fries" at work today. I use the quote because that's what the package says - they don't really look like what I would call home fries. They are sliced into discs (like you'd see for scalloped potatoes) and I'm fairly sure they're par-boiled already - seem too soft to just be cut up.

I'm not really sure how best to prepare these so they don't turn into mush. My instinct is to make a hash of some kind, but I don't know if they'd just fall apart in the pan. I don't own a deep fryer so that's out, but I do have a Dutch oven so if frying is the only way to go I can make it happen.

I appreciate any advice you guys might have for me. Thanks!

[Question] Recipes for crispy shredded chicken.

So. There is an asian restaurang in Monkstown, Ireland, called Amerta, that serves this absolutely fantastic deep-fried shredded and battered chicken.

It is super-crunchy and they pour over a sauce that is basically water-thin but with lots of garlic, chili and flavour! The sauce is thin enough to not make the chicken soggy but still adds tons of flavour on top of already tasty chicken

I have tried to find recipes and I have attempted to do my own version but can't get ur right. Going to Ireland once a month for shredded chicken is a bit too pricey ;)

Any ideas of how make something similar? Have you eaten there yourself?

Japanese Sweet-Potato paste

When I was in Japan I ate lots of pancakes filled with either Anko or a Sweet-Potato paste. Since Anko does have loads of sugar in the recipe I'm wondering if the Sweet-Potato paste can be yummi without adding sugar as the sweet-potato is already sweet. However I couldn't find a recipe, anyone know how they do it?

HAWAIIAN STYLE TERIYAKI CHICKEN

https://imgur.com/0jtVtOk Ingedients 3 pounds chicken thigh ( boneless, skinless ) 1 cup soy sauce 1 cup water 1 cup sugar Direction: This is the basic ratio for the sauce, you will just increase it depending on how much meat you are soaking. You want there to be enough marinade that you can stir the meat freely. If it's hard to stir, you need to add more sauce.

Combine the water and soy sauce and then dissolve the sugar in the liquid. Add the desired amounts of ginger and garlic. Add the chicken. You can soak the meat in the marinade for up to 3 days but you want to soak it for at least 24 hours. You can also boil the chicken in the sauce right after you make it if you want to eat it sooner than later. After you have marinated the meat for a few days, you are ready to grill. Just cook the meat on the grill like you would any other meat. If you are cooking a lot, grill it on hot heat and then stick it in a put on the grill. Add a little fresh teriyaki sauce to the pot and it will steam the grilled chicken assuring the chicken ends up very tender and juicy.
