What are some New Years food traditions ?

My family is from Guyana and for New Years Eve (old years night as they would call it) they make a dish called Cook Up Rice, which is a one pot dish with rice, black eye peas or lentils, coconut milk, pepper, seasoning and meat (optional). I personally do not have a recipe, but my mom makes a great pot of it. I’m curious about other traditions for New Year’s Eve/day.

I ate something so incredibly delicious and I want to know what it is!!

I went to a hole in the wall Lebanese restaurant yesterday and had this dish that consisted of : cauliflower and ground beef cooked in a tomato sauce served over basmati rice. I had the waitress write down what it is and of course I can’t find it. Called the restaurant and of course my description was not enough to get an answer. It was one of those specials of the day so it’s not on their menu.

Help needed: guest for NYE requires a dairy free, gluten free, nut free diet.

My sister in law is coming over on NYE. I'm cooking, as I always do, but want to make something she can have as well. Even if it just is a side dish, what are your favorite recipes that fit within the above parameters? There's no risk of anaphylaxis, so no need to worry there. As long as the dish itself doesn't contain those ingredients, merely being around them is fine. I will of course practice proper safety to ensure there's no risk of cross contamination in any way from the rest of what I'm cooking. Looking for vegetarian dinner recipes.

Right now my SO and I typically eat red meat 1x a week, chicken 3x a week, and fish 2x a week. I’m planning a special valentines dinner and need opinions on a potential recipe, please help.

Cooking for friends Sunday

Hi,

I'm cooking for friends this Sunday at their place (they have a baby so it's easier for us to go there). I don't want to have them have to host + cook + take care of a 6-mo old so I volunteered to take care of dinner.

What egg to cream ratio do you guys use for a quiche ? Ive seen a huge variation.

Asparagus recipe

I made some amazing asparagus tonight and wanted to share. Take one bunch of asparagus and cut it on the bias a few times (roughly 1 1/2 inch pieces). Cook it is olive oil over medium-high heat and add garlic, capers, butter, and lemon juice for approx. 8 minutes. Add fresh cut parsley and grated Parmesan cheese when plating. My girlfriend and I thought it was amazing so curious to hear what you guys think.

Veal, turkey, ham Stock/broth Recipe starter help

Looking for ideas/help/advice. After all the holiday meals i ended up with smoked turkey carcass, honey baked ham bone, and some veal shank bones (with and without meat).

Ive never made stock or broth before. Should i combine all my meat together with some aromatics? Or should i do separate stocks? Would all those meats in one stock make for a weird taste?

Also need some advice technique. Should i do one initial boil then dump the liquid as a rinse? Or is it better to constantly skim the liquid?

Planning to use it for soups and other dishes . Braises, rice, veg etc

Im working with a big 8+ gallon pot i use to brew beer in. It has a thermometer, false bottom, and a filtered spigot.

Pizza recipe - one that finally worked for someone who always manages to fail

So, I’ve always found it a challenge but finally found something which works.

It’s a recipe on YouTube by an Italian grandma. I thought, if I follow her step by step, surely I can’t fail. (Italy, pizza connection).

The basic ingredients for dough are the same as most recipes except there is no sugar. I always heard sugar is important for yeast. And it does help with proofing the dough. But I think the sugar causes the dough to retain a lot of moisture from the sauce and cheese. Uncooked dough was always an issue of mine.

Anyways it’s just bog standard; leave salt in hot water along with dry yeast for a few minutes. Then mix with flour (I use 00 grade). Just use a suitable ratio once you decide on how much flour you want/how many pizzas.

I also found how to make super nice sauce. The sauce quality turns it from an ordinary pizza to a very special pizza for me personally.

Again, just stumbled across stuff (I spent many hours watching pizza stuff when I was sick and stuck in bed recently). Just a can or two of crushed tomatoes. 2-3 heaped tbs butter (very important), 2-3 garlic cloves whole (scoop out at end), tsp salt, half tsp sugar (you should adjust salt and sugar at end after a quick taste test). And some herbs if you like and simmer for 40-60 minutes like a day before making. It depends if you don’t mind tiny chunks of tomato in your sauce (which I don’t), so you can simmer for 20-30 minutes. You can also add a few tbs of tomato purée if you like.

Anyways, the lady heated it for 30 minutes cause it was huge. I just left it for ~8 minutes without cheese (just dough and sauce) and ~5 minutes with cheese. I tried to cook the dough prior to adding sauce and cheese in the past but it didn’t help, so I put the whole thing down to the sugar.

If you want to watch the video you can probably find it by just searching for old Italian grandma makes pizza or something, it’s an old video I believe

But the thing she did was exclude sugar and I think that’s what helped, so maybe just try your recipe without sugar. IF you kept failing, like I did... many times.

Anyways, the sauce is super good. I use it for everything like pasta etc. I tried a bunch of fancy recipes from fancy sites for tomato sauce over the years and none really seemed worth the effort.

I’m sure there will be people who make super amazing pizza with adding sugar to the flour and this won’t resonate with them. But it worked for me.

Edit: I haven’t added a precise recipe and times. But maybe just use a random recipe instructions and exclude sugar. In case you aren’t familiar with pizza making e.g. I excluded mentioning you proof it for an hour or so, at least.

Crumbly pilaf in a multicooker

Previously, the process of cooking pilaf seemed for me somehow very difficult and unreal, on which you need to spend so much time and effort! Therefore, I had not even try to cook it. Probably, if I didn’t have a multicooker, I wouldn’t try to do it, I honestly admit. In my family pilaf is made on the stove and in a cast-iron cauldron where it was constantly burning and probably I just didn’t want to mess with it. But what was my surprise when I cooked it in a multicooker! It turns out that it is cooked very easily and, fortunately, nothing burns and the pilaf is crumbly! So, I share my cooking experience with you!

Recipie Request: Sticky toffee brioche pudding

Question - trying to identify recipe ingredients in appetizer from party

My aunt was at a church pot luck and there was an appetizer in a pie pan that had a cream cheese layer and a ketchup layer and a layer of something green, and possibly other ingredients (no meat). Does anyone know what this appetizer might have been? She loved it and wants to find out how to make it.

South Louisiana Pecan Pie

This is my family's variation on a recipe that originally appeared in John Folse's classic Evolution of Cajun & Creole Cuisine. I made two of these last night for the family get-together on Christmas Day, as I do every year -- and there's never a single crumb left. My daughter-in-law from western Pennsylvania especially loves them. ('Cause you can't get decent Southern cooking in Pittsburgh!)

Ingredients

  • 1 cup chopped pecans
  • 1/2 cup apple or pear preserves
  • 1/4 lb salted butter
  • 3 eggs
  • 1 cup brown sugar
  • 3/4 cup Steen's cane syrup (NO KAYRO!)
  • 1/4 cup honey
  • 2 tablespoons vanilla
  • pinch of cinnamon
  • pinch of nutmeg
  • oz. good sippin' Bourbon
  • 1 uncooked pie shell

Directions

  1. Preheat oven to 425 degrees. In a heavy-bottom saute pan, melt butter over medium-high heat. Allow butter to brown slightly around the edges as it melts (which creates a nutty flavor). Allow butter to cool slightly and pour into a mixing bowl.

  2. Add to the bowl eggs, brown sugar, cane syrup, honey, vanilla, cinnamon, nutmeg, and Bourbon, blending well after each ingredient.

  3. Use wire whisk to remove any lumps from mixture. Fold in pecans and fruit preserves. Pour mixture into pie shell.

  4. Bake 10 minutes. Reduce temperature to 375 degrees. Bake an additional 35 minutes. (Each of these times might need to be slightly longer, depending on your personal experience with your oven; you want the filling to solidify and not be runny.)

  5. Remove from oven and allow to cool thoroughly before slicing. It's really best to make the pie the day before and keep in the fridge overnight to ensure a solid set.

Appetizer: Bruschetta Bites

So I had these at an event at a local retail store and knew I could recreate it, but they’re delicious, easy to prep and have DONE so here goes:

You’ll need: Toothpicks or small skewers Mozarella pearls/balls, as long as they’re drained Fresh basil leaves, one pack went further than I expected A package of grape tomatoes, this will really depend on how many skewers you make based on how many tomatoes you have available so if you need to appetize a lot of folks you may want to double up on the tomatoes, I will say the package of mozarella pearls were very small so I barely made a dent in the package so depending on the size of the cheese keep that in mind in regards to how many you expect to make... And finally a balsamic based vinegarette, I picked up the Kraft Olive Oil vinegarette that said balsamic. It worked well.

Needless to say, basil is a pretty potent herb to use especially fresh so if it’s a big leaf maybe tear it into 2-3 pieces you don’t want to overwhelm them w/ too much basil, but I did tomato, basil, pearl on a toothpick, literally bite sized, perfect for the pre-meal chatting to snack on, and basically surround some sort of bowl big or small depending on what you have and how much you’re making and basically I prepped them and the. All I had to do was dump some out, squirt some of the dressing in a Pioneer Woman lil brulee cup things, everyone seemed to love them.

I just really like how simple, easy this recipe is but it’s so good!!! When I first tasted one I was like “wow this tastes like biting into a piece of bruschetta bread but w/o the bread really!” ENJOY!

**Ingredients:**
1 ¼ cups all-purpose flour
1 tsp baking soda
½ tsp salt
½ tsp ground cinnamon
1 cup (2 sticks) softened butter
¾ cup granulated sugar
¾ cup packed brown sugar
2 large eggs
1 tsp vanilla extract
3 cups quick or old-fashioned oats
1 ⅔ cups (11 oz pkg) nestle toll house butterscotch flavored morsels or similar
**Cooking Steps:**
Preheat oven to 375℉
Combine flour, baking soda, salt and cinnamon in small bowl
Beat butter, granulated sugar, brown sugar, eggs and vanilla extract in large mixer bowl
Gradually beat in flour mixture, stir in oats and morsels
Drop by rounded tablespoon onto ungreased baking sheets
Bake for 7-8 minutes for chewy cookies or 9-10 minutes for crisp cookies.
Cool on baking sheets for 2 minutes, remove to wire racks to cool completely

You can add ingredients if you like such as scotch, pumpkin spice, white chocolate chips, various nuts and even sanding sugar. Add the dry ingredients like pumpkin spice with the other dry ingredients (sugar, cinnamon). Add wet ingredients like scotch with the others but if you add much you may need to cut back a little on the others. It's all about a ratio with baking. If you are adding other chips just add them when the recipe calls for the butterscotch chips. Lastly if you want to decorate the top with colored sugar or sanding sugar you may need to prepare the top so that it doesn't fall off. After the cookies have cooled, use an egg wash (egg white and some milk or water) and spread on top with a brush. Then apply the decorative sugar.

[QUESTION] Looking for a lower sugar cheesecake recipe without sweeteners

I'm looking for a recipe for a lower sugar cheesecake. Some sugar is fine of course and other replacements are okay (honey, maple syrup?), but it is very difficult to find sweeteners where I live (like in many Keto/no carb recipes). Can anyone recommend a recipe for a slightly reduced sugar cheesecake or something similar?

Does lime juice stop fruit/vegetables from going brown like lemon juice does?

I’m making a salad and salad dressing for my family Christmas dinner and the main ingredient of the salad dressing is avocado. I want to make the salad dressing early so I don’t have to rush and do it in the morning but I don’t want the dressing to go brown. Will lime juice stop it from going brown?

The ingredients for the dressing are avocado, water, olive oil, lime juice, cumin, salt and pepper.

Sorry if it seems really obvious I’m a bit ignorant in the ways of food prep.

Chocolate-Zucchini Cake

I mentioned this cake (with a side of vanilla ice cream and hot chocolate sauce) being our Chistmas eve dessert and was asked for the recipe. So here goes:

150 grams Butter 150 grams sugar (if you like it sweet you can go up to 200 grams) with a dash of salt and a small packet (ca 13 grams) of vanillin (vanilla sugar) 3 medium sized eggs 120 grams dark / cooking chocolate 350 grams zucchini (grated) 50 grams almonds (ground) 200 grams flour with one packet (ca 10 grams) baking soda

Oven at 180° Celsius

  1. Mix the butter until it's soft/ fluffy, add sugar, salt and vanillin, keep mixing
  2. Add eggs until the mass is smooth
  3. Add flour and mix until mass is a light color
  4. Break chocolate into bite-size chunks, put into pan with 2 Tbs of water and melt on low flame (constant stirring!)
  5. When chocolate mass is smooth add to the cake mass and mix
  6. Add almonds
  7. Remove mass from mixer. Add zucchini by stirring it into the mass with a big spoon or similar
  8. Greas cake form and pour mass in
  9. Bake at 180° celcius for ca. 55min Check inside of the cake with two toothpicks. The cake is ready when it's moist but not "liquidy/sticky". Let cool

HELP!!!! I need help figuring out what to do with 20 lbs of pork roast.

My SIL freezer broke while she was out of town and long story short I have to use 20 lbs of pork roast most likely by Christmas.

There are 2 10 lb roasts so I was going to stuff one in the slow cooker and make some amazing Christmas pulled pork. I have no clue what to do with the other 10lbs.

Ingredients

  • 1 package yellow cake mix (or make your own cake mix for this recipe by combining 1+½ cups sugar, 2+¼ all-purpose flour, 3 teaspoons baking powder and 1 teaspoon salt)
  • 1 box (3.4oz 4-serving size) **instant **vanilla pudding mix
  • 4 eggs
  • 1 cup rum (light or dark; cheap or expensive – Meyer’s rum is excellent!)
  • ½ cup cooking oil or melted butter
  • optional 1 cup pecan pieces (or chopped pecans)

Glaze

  • 1 cup sugar (or brown sugar or sugar & brown sugar mixed)
  • 1 stick butter, cubed
  • ¼ cup water
  • ½ cup rum (light or dark; cheap or expensive), divided into two ¼ cup amounts.

Cake Directions

  • Grease 12-cup bundt or 10-inch tube pan
  • If using nuts, sprinkle over bottom of pan.
  • Stir together cake mix, pudding mix, eggs, water, oil and rum.
  • Pour batter into the pan.
  • Bake at 325 in oven for 1 hour.
  • 10-15 minutes before the cake finishes baking, begin making your glaze…

Glaze Directions

  • Place ¼ cup water in sauce pan and heat on medium-high.
  • Add sugar and butter; simmer 5 minutes stirring constantly; don’t boil
  • Remove mixture from the heat. Wait 2 minutes then add the rum to the butter/sugar glaze mixture and stir until sugar is dissolved. (About 3-5 mins)
  • Remove cake from the oven when finished baking and check for to ensure it’s done cooking.
  • Poke holes in the cake (as if you’re making a poke cake) with a wooden spoon
  • Get a ladle and disperse half of the sugar-butter glaze around edges. Then take ¼ cup rum and carefully poor it into the holes you poked so it seeps into the cake and then disperse the remaining hot/warm glaze down the sides. ** CAUTION ** glaze may bubble up, so pour slowly
  • Let the cake sit for 10 minutes exactly in the pan with the glaze,** but not longer than 15 minutes or the glaze might cool and your cake might stick**
  • Invert cake onto a plate (or foil-lined cake round/cardboard) and allow to cool completely before covering, but don’t leave out more than a few hours uncovered.

Note: To give a stronger rum flavor, leave the rum out of the sugar / butter glaze completely, then glaze the cake with the butter / sugar mixture and LASTLY pour ½ cup raw rum in the poked holes following the glaze.

It’s best to make this 1-2 days ahead. Keep it wrapped or covered for up to 5 days and brush with raw rum as needed. You can make more glaze and brush it every day or brush with raw rum. Can be frozen but will need to be brushed with raw rum once thawed.

The cost is about $12.85 per cake

Help with Eggless Eggnog Recipe

So in Venezulana we have recipe for "Ponche Crema" which is basically Eggnog. I am trying to make the egg-less version which consists of using a flan mixture, milk, spices, and rum. Long story short my "Eggnog" keeps congealing and turning into flan unless I add a lot of rum which of course leads to a way stronger flavor which becomes unpleasant. I want to reduce the amount of alcohol while still having the smooth texture of Eggnog.

Recipe:

Flan Mix: 250g Milk (made from powdered milk): 750g Condensed milk: 700g Spices: 3g Rum: 250g Vanilla Extract: 2g

ICELANDIC COFFEE WREATH

The Icelandics have a practical and down-to-earth approach to all of their cooking and baking, but they are exceptionally skilled at making wonderful things to go with coffee!

* Makes i coffee ring

Ingredients

  • 2 packages active dry yeast
  • 1 cup warm water, 105°F to 115°F
  • 1 egg
  • 1\2 cup butter
  • 5 cup sugar
  • 5 teaspoon salt
  • 1 cup sour cream
  • 2 1\2 to 3 cups unbleached all-purpose flour
  • 1 cup almond paste
  • 1 egg
  • 2 tablespoons sugar
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla
  • 1 cup raisins
  • 1 tablespoon grated orange peel

GLAZE

  • 1 slightly beaten egg
  • 2 tablespoons milk
  • pearl sugar or crushed sugar cubes

Method

  1. In a large bowl, dissolve the yeast in the water and let stand 5 minutes. Add the egg, butter, sugar, salt, and sour cream. Beat in 2 cups of the flour to make a stiff dough. Cover and let rise in a warm place until doubled, about i hour.
  2. Turn out onto lightly floured board and roll out to make a square about 20 to 24 inches across as illustrated. To make the filling, blend the almond paste, egg, sugar, cinnamon, and vanilla. Spread this mixture over the rolled-out dough to within i inch of the edge of the dough. Sprinkle with the raisins and orange peel. Roll dough up, jelly-roll fashion, enclosing the filling, Step i. Cover baking sheet or a 16-inch pizza pan with parchment paper or lightly grease it. Place roll on the pan in the shape of a wreath and seal ends together, Step 2. With a pair of scissors, clip the wreath and lift the cut dough back over the wreath decoratively, Step 3. Let rise i hour or until puffy. Preheat oven to 400°?. To make glaze, mix the beaten egg well with the 2 tablespoons milk. Brush wreath with the mixture and sprinkle with the pearl sugar. Bake for 20 to 30 minutes or until golden.

Accidentally made Olive Garden breadsticks

So I got up in the middle of the night and grabbed some frozen waffles, I cooked them and though “i should add some more flavor to these bad boys” so I just like flicked a can of tony cacheres and garlic powder and I started eating them and it tastes like that... this probably isn’t a recipe but I don’t know where else to post.

Help with a boring bean soup

I'm making a bean soup for my family for Christmas Eve. I can't add heat because my family can't take it. I have people with milk allergies, so this must be not just vegetarian but vegan. Also, I'd like the keep the sodium low.

  • Hurst's 15 Bean Soup Blend (skipped the seasoning)
  • 2 cups vegetable broth
  • 2 cups water
  • 2 onions
  • 2 green Bell Peppers
  • 2 cans diced tomatoes with green chiles
  • 2 cans green chiles (mild)
  • 3 carrots
  • Cumin
  • Thyme
  • Bay Leaves
  • Sage
  • Rosemary
  • Black pepper
  • 2 Tbs soy sauce
  • 3 cloves garlic
  • 1 cup vermouth

I ran all the ingredients through my InstantPot. I did the beans on their own and then took a a cup and a half of the beans an blended them until they were smooth. After the two batches cooked in the InstantPot, I put all the ingredients into my enameled Dutch oven in the oven to reduce and fortify the flavor.

It's bland. What can I add to make this bean soup tasty?
