Looking for a great pumpkin soup recipe

Pumpkin season here in the UK isn’t that long, every year during these few weeks I try to recreate a pumpkin soup recipe that I made once 6 years ago and then lost by the time the next year rolled around. And I fail miserably - as in throw the whole lot away because just unpleasant fail!

This pumpkin soup was amazing, it tasted like Christmas in a bowl. It included spices like nutmeg, cinnamon, maybe ginger. I have a feeling that it used coconut milk but I can’t be sure. I do remember roasting the pumpkin before adding onto the soup and blending.

Here these are Christmassy flavours but I think they might be Thanksgiving flavours too so I’m hoping that someone might be able to help! Pumpkin isn’t hugely popular in the UK so I’m hoping some international input might be more successful than the recipes I’ve been trying!

chili suggestions

I came home to a bag of assorted spicy pepper on my door knob, have no idea who put them there as i dont have many friends but i guess they all know i like hot peppers, im also very broke atm and figure i'll stretch the rest of my food out into making chili. im a good cook but have never made chili before. this is what i plan on doing plz let me know you you have any suggestions besides tomatoes or noodles.

  1. turkey, bratwurst and 80/20 hamburgers thawed and mixed together.. just working with what i got
  2. chilies
  3. kidney and chili beans
  4. someone told me to try peanut butter, so i guess that.
  5. chili powder, garlic powder,oregano maybe a little brown sugar if i had any
  6. tomato paste
  7. water
  8. about as many onions as i can fit

topped with cheese and sour cream with crackers, also i dont have any large pots so it will be cooked in a crock pot.

Recipes for dietary restrictions

I'm currently on the following dietary restrictions as per dietitian with my medical specialist:

- no tomato or tomato products

- no beans

- no nuts

- no whole wheat or bran foods

- no oranges or grapefruit or bananas

- no chocolate (boo hoo)

- cola products

- potatoes only if peeled and cubed before boiling, water drained, and then boiled again

These are what I can eat:

- rice

- white flour

- canned fruit

- other fruit restricted, e.g. max 1 apple a day

- milk and yogurt 1/2 cup at a time total 1 cup a day

- clementines

- non-cola sodas max 1/2 cup a day

Leaving out what's not relevant to recipes, does anyone have recipes that would be suitable?

What Should I Do With All My Chilis?!?

Yesterday, I found myself at the chili stall of my local farmers market. I settled on some Habaneros and some Mirasols and was set. I went up to pay, and the vendor told me she had something “special” for me behind her counter- to which she pulled out a big ole bag of chilis I didn’t recognize. They turned out to be Thai Chilis. I walked away with about half a pound of them.

What do I do with these things?!? They look and smell amazing, but I’ve never cooked with them. For reference I’m vegetarian. Thanks y’all!

Corned Beef w/ Cranberries and Mustard?

My (deceased) mom used to make a dish for the High Holidays that I'm trying to re-create, but I can't find anything similar online, I'm hoping someone could help me.

The dish she would make was a Corned Beef with a mustard and cranberry sauce. The way she would make it (I think) is by first making the sauce, then pouring it over the meat and then would place the meat in a pan on a wire rack with water at the bottom and then wrap the whole thing in tin foil.

Does that make sense? Does anyone know how to do something like this and can help me figure it out? I live at altitude, if that matters too.

Introduction to non vegetarian

I've been a meat eater most of my life, but my mom is quite a religious (Hindu) woman and though she hasn't ever tried to dissuade me from eating meat, she's remained vegetarian all her life.

Recently, her mom passed away and she's like "I wanna try new things in life before I die". And trying to cook and eat non vegetarian food is on her to do list. The problem is that she'd not touch any kind of mutton/pork/fish etc, beef is banned in the country and it's quite difficult to get your hands on many varieties of fowl. So my options are (until now) limited to chicken. So can anyone suggest me a spicy(ish) chicken recipe with an Indian twist which will make her first time eating non vegetarian food memorable (and will hopefully open up wider culinary options for her)

Is there a trick to slicing open arepas?

I have just discovered arepas. The ones I make at home are great but I have been having a terrible time slicing them open to fill. I have tried all different knives and wetting or buttering the blade but it is always a huge problem of the knife getting totally gunked up before I can properly slice the arepa open. Is there a trick to it?

Looking for Korean/Japanese recipes

My girlfriend works at a Korean restaurant on campus, and we are curious about trying to cook some dishes for ourselves.

Problem is, we don't know what recipes are good to try. I was hoping you guys could make some suggestions.

We're both white Americans, so this is not food we are used to cooking ourselves. Our University campus is diverse enough that there are a number of good Asian markets near us, so access to ingredients isn't an issue. Our favorite dish there is Ddeok Man Du (rice cake soup w/ dumplings) She really likes seafood soups like jjampong, where I prefer more savory flavors like a tonkatsu.

Any and all suggestions are appreciated.

I won't trust extremely positively reviewed recipes any more

tl;dr in the bottom. I am not sure if this is the suitable subreddit for this but I am going forward with it. I tried a hot sauce recipe that was highly rated (above four and a half stars from about 20 people) that was displayed as the first search result on my Google search. The final product was lacking in flavor and needed major modifications to fix. I gave it a bad review and was informed that the comment was pending until the mods of the website approve it. It even listed an anti spam filtering tool as the used method and provided a link to how it processes data. The problem is the comment hasn't yet been approved. I tried again to no avail, providing more insight to why I disliked the recipe. Then it came to me (how obvious) that the website filtered out bad reviews. So I attempt o verify my hypothesis and simply write a plain positive review, and just a day after it gets approved and is visible on the website. Jow shameful! tl;dr Some recipes websites filter out bad reviews, so don't trust sketchily highly rated recipes; I experienced it first hand. And yes, I know it is common sense.

PSA: Make your aged egg nog this weekend so it's ready in time for the holidays!

Eggnog is often sort of just… gross. Grocery store nog is gooped up with thickeners and artificially colored until it’s more mustardy than the yellow you’d expect from eggs blended with ten times their weight in dairy. Liquor store nog tastes like canned milk — and the booze is either over-the-top or not enough to be worth the price tag. Try this recipe for a nog you can be proud of – and enjoy! Aging the eggnog with the alcohol in it will remove any risk of pathogens, such as salmonella.

With this recipe, your homemade eggnog can be the least gross. Age for 6+ weeks and you and your family (21+) can enjoy truly perfect nog — with not much effort. Especially if you have a KitchenAid stand mixer. Swing-top bottles are not required but definitely advised. This homemade eggnog will blow your mind!

Instructional Video

INGREDIENTS

  • 12 egg yolks
  • 6 egg whites
  • 1 pound powdered sugar
  • 3 cups brandy
  • 1 cup bourbon
  • 2 quarts half and half
  • 1 quart whole milk
  • 1/2 teaspoon salt
  • 2.5 teaspoons nutmeg

INSTRUCTIONS

  1. Cream together the egg yolks and powdered sugar in a stand mixer. If you have no stand mixer, whisk constantly throughout entire mixing process. Then you'll be motivated to buy a stand mixer.
  2. Very slowly whisk in brandy, bourbon, cream, and milk (in that order).
  3. Separately, whip the egg whites, salt, and nutmeg until thoroughly combined and fluffy. Fold into the other mixture. Note: At this point you may need to switch to a larger vessel, unless you have a very large stand mixer.
  4. Funnel into swing-top bottles.
  5. Age six weeks in your fridge.
  6. Enjoy!

Homemade Chicken Noodle Soup Recipe

Noodles:
3 eggs
1 tablespoon water
1 tablespoon milk
1/2 teaspoon salt
1 tablespoon lard, melted and cooled
2 to 2 1/4 cups all-purpose flour
1 scant teaspoon baking powder

Soup:
2 tablespoons olive oil
2 onions, chopped
3 carrots, quartered and sliced
3 ribs celery, sliced
1 chicken, cut into pieces, fat not removed (6 to 7 pounds)
2 quarts (8 cups) chicken broth
4 cups cold water, more or less as needed
4 sprigs fresh parsley
3 sprigs fresh thyme
1 bay leaf
Salt and pepper, to taste

To make noodles, combine eggs, water and milk in large bowl. Beat well with electric mixer on medium speed for 1 minute. Add salt and lard, and beat well.

Non-american sites for Italian and other european recipes

Hi,

I'm looking for some recipe sites that give an authentic view of European cuisine, especially Italian, Spanish, Portugese, Greek, and French.

Unfortunately, most of the recipe sites I come across on Google and Reddit are American sites (especially on YouTube). A lot of these are great! But I am really looking for 'authentic' (or close to) recipes from these regions if possible, added bonus if the site has some background on the dish.

I recently came across Akis Petretzikis who has some great Greek recipes, and can't wait to try.

I'm using Larousse Gastronomique for my introduction to French cuisine, fare, and techniques which has been great.

I made a walnut torte for my grandfather in 2002. The recipe was from Bon Appetit. We still talk about it and how good it was. He’s 90 and I would like to make it for him again, but I can’t find the recipe!!! Can anyone help?

Could have been late 2001 or early 2003, but I’m pretty sure it was 2002. It was not a big featured recipe, it was like a rustic European country side recipe. The crust had lemon zest and I used a springform pan.

Creamy Caramelized Onion and Mushroom Pasta

Ingredients:

2 large sweet onions halved and thinly sliced

2 Tbsp. Butter

Sea salt

1 1/2 Tbsp. Fresh rosemary, chopped

1/2 Tbsp. Fresh thyme

2 cloves garlic, minced

1 C. Mushrooms, sliced thin

1/2 pkg. Pasta of choice (I used penne)

1/4 C. Reserved pasta water

1/2 C. Whole milk

1/2 – 1 C. Fresh parmesan, grated

Melt butter over medium high heat. Add onions in layers, sprinkling salt in between each layer. Let cook about 10 minutes without stirring.

Reduce heat to low, stir onions and let cook until a rich brown color is achieved, stirring once in awhile, about an hour.

Push onions to the side of the pan and add the garlic, cooking until fragrant, 30 sec.

Raise heat to medium and add rosemary, thyme, and mushrooms. Combine everything in pan and cook until mushrooms are softened.

Cook pasta according to package directions. Drain but reserve 1/4 C. Of the water.

Add pasta water to onion mix and stir to combine. Slowly stir in milk and cook until slightly thickened.

Remove from heat and stir in cheese until melted.

Combine pasta and sauce, topping with additional cheese if desired.

Alternative uses for top round steak?

Hello all! I recently bought 30lbs of top round steaks(labeled london broil) for $2/lb and am looking for some new recipes to use it with

So far I've used it to make: -Beef and broccoli -Beijing beef -Fajitas/carne asada -Philly cheesesteaks(it's supposed to be made of ribeye but I cut it thin enough to taste amazing) -Chili -Jerky -Steak -Various soup and roast recipes

I'm looking for anything tasty but a recipe that includes something semi-healthy such as brown rice or beans would be ideal. I love cooking so labor is no big deal. I just really like using this cheap meat to make seemingly expensive meals. Thanks for any recommendations!

Pork Shoulder Sauce Request

Hi Folks,

I have a pork shoulder I (over) cooked sous vide. 165 @ 48 hours. It was soaking in soy sauce and black pepper. Looking to take it out and throw it in the oven on high with some sort of sauce on top.

I usually take the juices from the bag and mix that with some bbq sauce, hot sauce, and whiskey on the stove and then put a few layers on while it's in the oven on max. It's very tasty but I'm looking to change it up and use a different sauce.

I have a bunch of apples and oranges, probably an onion, a couple underripe mangos, tomatoes, tomatillos, some tiny bell pepper looking things, garlic cloves, salt, pepper, gochugaru, indian red pepper (not sure what the name would be in english but it has a distinct flavor), oregano, sambal olek and sambal bajak, hoison sauce, and probably some other random things!

Ideas? I could totally go for anything but would like to cook this sooner than later.

Weird Recipe?

I make this thing called the Roadside omelette. What you'll need is

Eggs

Turkey bacon

Cinnamon

Brown sugar

Scallions

Milk

I'm going to try and make this really fast.

first you fry up 4 strips of turkey bacon cut them up into little pieces and set them to the side.

Next you chop up 1 scallion and set it to the side.

you crack your 3 eggs, and put them into a bowl with .5 cup of milk, 2 tbsl of cinnamon, 3 tbsl of brown sugar and mix it all together until the yolks are beat. and then you know how to make an omelette.

I know it sounds weird but I really like it.

I need some egg help!

So I just bought a dozen eggs at the grocery store for the week. While taking the packages out of my car, a bag fell, that particular bag had the eggs in it! Upon inspection they all cracked. But it's not a complete loss.... My question is what can I make with 1 dozen eggs.??( Other than ...eggs)

Butter Cream Chicken

Butter Cream Chicken

Total time: 45 minutes

INGREDIENTS

6 chicken breasts (thankfully our butcher carries the hormone-free, etc. variety), cut into cubes

6 tbsp grass-fed butter (I use Kerrygold)

1/4 cup chicken stock (be sure to check nothing has been added to it that shouldn’t be)

1/4 cup heavy, full-fat whipping cream

3/4 tsp of dried thyme

Kosher Salt (or Sea Salt) to taste

Freshly ground black pepper to taste

Method

Add one tbsp of butter to a skillet on medium heat and allow it to melt. Add the first half of the chicken to the skillet and cook until done (about 4-5 minutes or so on each side).

Chicken Cooking

Remove from the pan and put aside (tent it to keep it warm). Add another tablespoon of butter and cook the second batch of chicken using the same method. Set aside.

Don’t clean the pan!

Add in 4 tbsp of butter and the chicken stock. Cook it over medium-high heat until it comes to a boil. Scrape all the bits that were stuck to the bottom of the skillet from cooking the chicken and stir it into the mixture. Then add in your heavy whipping cream and allow to once again come to a boil

Buttercream sauce

Add in the dried thyme and continue to boil the sauce, reducing it until it becomes slightly thickened.

Add your cooked chicken into the sauce and boil for a few more minutes (this both reheats the chicken and helps you thicken up the sauce).

Spoon out the chicken with the sauce onto plates and serve immediately.

I paired mine up with some primal garlic cauliflower and it was a great combo. This one was a definite keeper.

Singaporean Satay Sticks - Recipe Request

We recently visited Singapore and fell in love with the satay sticks from the evening market in the street beside Lau Pa Sat/Telok Ayer Market - does anyone, please, know a rough recipe for these?

I understand each vendor has their own recipe, I'm looking for something close - and I'd guess there's a trick to cooking them.

I've recently gotten a charcoal grill and would love to be able to recreate one or all of the 'meats-on-sticks' (as my kids call them). Any help would be appreciated!

Regarding two recipies I'm having trouble locating.

I heard something years ago of a 'Japanese or Chinese meal bread thing'. I'm thinking Hot Pockets but bigger and would have many different ingredients. I don't know what they are called so it's hard to find recipes or if they sell them.
Also, Okinomiyaki with regards to common items instead of cultural ones. There are so many. I've never had one and I'm looking to make and try one as cheap as possible.
