Looking to make a tasty hot sauce with no to minimal onion.

Hello! I am an absolute lover of restaurant style hot sauce, the ones that are not straight sauce, per say, but have a little thickness to them. I just recently got into cooking and I have been having so much fun and I want my next "project" to be a tasty hot sauce as I would use it on pretty much everything! My wife is deathly allergic to onions, though she is not a fan of spicy foods the oils in the air will even bother her allergies. What is a great recipe for a hot sauce possibly similar to the sauce at Serrano's Mexican Food, if anybody is familiar with that restaurant (I live in AZ, I'm sure they are all over though). Does anybody have any delicious recipes to share?

Note: As far as the onion allergy goes, it is only the oils. So if I can sub in onion powder or saute them way down (while she is out) that would be fine, too. Thanks in advance, I am really looking forward to having my own fresh hot sauce!

Also, if there are any beginner-type cookbooks highly recommended I would love to check some out but I get so lost since I am new to the scene like not knowing which ones are credible, etc. I would love to cook for her as she has been cooking for me as long as we have been together because I used to be awful at it!

Recipes for picky child (me)?

Hello! I'm 14 years old and I'm a quite picky eater. My mom always makes the same dishes every day, because I don't really like anything else. I don't think that's fair for her. I was wondering if you here at r/recipes knew of a few recipes for a picky child such as myself?

Here are some of the dishes I like.

Lasagna

Spaghetti and meatballs

Gulasch (But like a special version that's only rice, meat and the 'meat-sauce')

Asparagus soup, but not the actual asparagus. Just the soup

Most fast foods, of course.

I dont really like vegetables (big surprise), unless, of course, they're chopped into small unnoticeable pieces. Brocolli and peas are cool though.

I'm sorry if this doesn't fit here. I'm just looking for recipes so my mother and I don't have to eat the same things every day.

[Request] After an illness I got way too skinny and am now looking to gain weight. What are some recipes that can help me to achieve that?

I was sick for 4 weeks and lost (for my conditions) a lot of weight. I always was really skinny but that never interfered with my day to day life.

Now I have a BMI (yes, yes not that reliable, whatever) of 15 and I feel bad.

So, I'm looking for food recipes to increase my weight. Anything goes, I have no allergies and eat every type of food.

Optimal would be something that I can eat besides my regular meals with my family, but individual dishes are also great.

How to spot a good online recipe?

How can you know if an online recipe is really a good one? Almost all the recipes I see on sites like allrecipes have a rating higher than 4.5/5 but I know I've definitely tried some of these and they haven't turned out great (not that I'm the world's best cook). Whenever I look up a recipe, almost every one I find has a great rating but how should I choose the one I follow?

Chicken with Rice and Beans

Ingredients

  • 4 Chicken Thighs
  • Salt
  • Black Pepper
  • Red Pepper Flakes
  • Green Onions
  • Kalamata Olives
  • Black Beans
  • Rice
  • Wild Olive Oil
  • Chicken Broth

Directions

  1. First off, start the coals on the grill now. I am a huge charcoal fan and really like the Cowboy lump charcoal. It works really well for me. So the first thing I do is get the coals going. Don’t put any chicken on the grill until they are super hot and spread out.
  2. Cook your rice! - Rice takes a little while. We have an amazing rice cooker that cooks rice perfectly every time. For 4 thighs, I do 2 cups of rice with 2 cups of chicken broth. Get that going.
  3. Prepping those thighs. Last night I made 4 thighs. In a large bowl, throw the thighs in and sprinkle a liberal amount of salt and black butcher pepper (probably 1-2 tables spoons of each). Then add about half as much red pepper flakes as you added black pepper. Add about a tablespoon of olive oil. Toss the thighs to coat them evenly.
  4. Prepping Rice Mixture. So we want to make our rice sexy. For 2 cups of rice, chop up 6 green onions and about a quarter cup of Kalamata olives chopped fine. We are going to use Kalamata olives in place of salt in our rice.
  5. Grilling the Chicken Thighs. Grill chicken to 165 degrees. I personally grill to about 160 and let it rest. When I grill I keep the skin side down about twice as long as the other side. I want the skin to be super crispy when I eat it. In the picture, I got this thigh a little dark… but I still love that taste.   6. Finish the Rice. All you need to do once the rice is done is add a can of black beans and stir that up. Then add your green onions and Kalamata olives. Mix this up evenly.
  7. Putting it all together! Finally, put your rice in a bowl and lay a nice crispy chicken thigh on top of it. Drizzle the entire dish liberally with some of that wild olive oil. I use Greek olive oil by Liokareas.

Looking for some reasonably quick new recipes suitable for 1

I'm a single dude living by myself, looking to expand my recipe repertoire. I've never been particularly interested in cooking and have a fair amount of limitations which has made it difficult to find new recipes that seem to work for me. That said, I certainly wouldn't mind learning some new cooking techniques as needed. I'll list out my rules here, please leave a suggestion if you have something you think would fit the bill!

Right now my rotation consists of turkey tacos, parmesan breaded pork w/ pasta (red sauce) and green beans (frozen), basil pork pasta (red sauce), chicken fried rice, and carne asada w/ rice and green beans (frozen). The chicken fried rice is my most recent addition and definitely the most complex to make.

  • No seafood
  • Nothing salad based
  • Must be high protein
  • Ready in around 30 minutes or less. Nothing that requires significant pre-prep, leaving in a slow cooker all day, etc... I just don't plan ahead that far
  • Can't involve ingredients that go bad quickly. I'm cooking for 1 and don't usually go grocery shopping more than once every week or two. For my current meals I buy my meats in bulk and freeze them in portion size.
  • Can't require a BBQ

Help me find Indonesian/Malaysian rice recipe?

My husband talks about a rice dish his mom used to make, he thought she got it from a Malaysian or Indonesian friend. From his description, it sounds like a simple chicken stir fry/curry type recipe served over rice, with leeks or scallions, lots of peppers and maybe some veggies. Slow Roasted Maple-Bourbon Pork Butt

I don't have fancy pictures or a gif or anything to get you to try this. All I have is my word that this is the tastiest cut of pork you'll ever have, and it's super cheap.

  • ~4 lbs pork butt
  • 2 tbsp ground cumin
  • 1 tbsp cinnamon
  • 1 cup maple syrup, separated
  • 1/2 cup bourbon
  • 1/2 cup butter

Cook time: 10-12 hours.

Set oven to 210F. Place the pork butt on a roasting rack over a pan, fatty side up, in the oven. Cross-hatch the top of the pork butt with a knife. Rub with cumin and cinnamon. Pour 1/2 cup of maple syrup over the butt. Grab your own butt and jiggle because you're a sexy beast. Baste pork butt occasionally (about every hour is enough).

At 5 hour mark: In a small sauce pan, melt butter. Add bourbon and 1/2 cup maple syup. Let simmer for about 15 minutes. Pour reduction over the pork butt. Continue to baste every every hour or so.

Don't bother letting it rest: it doesn't make much difference. Just eat the fucking thing.

Help deconstructing/recreating a recipe for yellow curry with shrimp?

There's this type of yellow curry from a Thai place nearby (Marnee Thai in Ann Arbor) that I absolutely love!! But I don't really have the funds to be ordering it as often as I'd like to (every day tbh).

I can tell you for sure that it has potatoes, onions, peanuts, and shrimp in it, and it's pretty sweet. Does anyone have/know of a curry recipe similar to this? Most recipes I found online don't have all of these things.

Whats the best homemade tortilla recipe?

I've been choosing to make my own lately because it's cheaper, and while I'm fine with the recipe I have I wondered if there was a better one out there.

I do:

  • 2 cups flour
  • 1/4 cup vegetable shortening
  • pinch of salt
  • 2tsp baking powder
  • Mix and rest for 30 min
  • cook on high makes 8 tortillas

Thoughts on this? My only gripe is that it does come out less flavorful than some tortillas I've had. I also have not had much success making spinach tortillas with this. I've read that lard is more flavorful and effective, my only concern is I don't use much lard in my general cooking, and this would be the only thing. I'm concerned that if I got a tub of lard it could go rancid before I've gone through it.

Brief story/background/context: My sister lives a few hours away and has a 5 month old baby. Whenever I see her, I tend to make a cooler full of frozen meals for them because they don't always have time to cook.

But sometimes being a mom takes its toll. So for the next package I give her, I want to include a special emergency meal. I want it to be a single, delicious meal that can sit in the freezer for a month or two and will require no cooking beyond throwing it in the oven or microwave or on the stove for a bit. It shouldn't be something that needs to be thawed a day in advance or really much of any advanced planning on her part. This is meant as a sort of "in case of emergency, break glass."

It's a tall order, and I'm willing to spend as much time as needed to prepare it. (Multi-day recipes are fine.) But I'm hitting a brick wall of ideas and hoping you can help. Thanks for reading.

BONUS: I'm also going to include some kind of dessert. I might just resort to mochi because it packages well and I'm not overly concerned about it sitting in the freezer for a while.

In need of: An easy Filipino food recipe that includes chicken that I can make for my BF’s dad!

I (F24) am meeting my boyfriends (M44) dad and brother for the first time. His dad is blind and has been for decades. I’ve asked my bf what he likes/hobbies and he said that he usually keeps to himself, enjoys technology, and really likes Filipino food. His dad is Filipino, so I thought the best way I can form a positive connection with him is to cook him Filipino food! I don’t think I’ve ever had Filipino food before and although I love to cook I have yet to make any so I want to try for the first time! Want are some easy Filipino recipes that include chicken? Is my salsa tartufata (some sort of truffle spread) still edible?

It is unopened and has a best before date of March 2019. However I can see through the glass that there is a greenish layer on TOP of the black truffle spread... is the spread still edible once I remove the TOP layer of “mould”? What are the red flags that will signal to em that I must not consume it and must throw it away? Found it in the refrigerator.

If it’s edible, would appreciate if one can share ways I can eat it... I have two bottles of it!

Looking for a tradition Mexican cookbook - any recommendations?

I'm an amateur cook who loves to experiment with odd flavor combos. Tonight I perfected my Cinnamon and Sugar Asparagus!

I tried something weird a few years ago and I knew I had something awesome on my hands immediately. I just needed to find the right order to add the ingredients and the times and temps.

Again, I'm aware Cinnamon and Sugar Asparagus sounds super weird or gross, but try it. It ends up tasting almost like sweet asparagus french fries. I can't explain it, but you'll see. They are like high-class candy!

  • Get a 10 inch or larger frying pan up to 80% heat (whatever that is on your stove).

  • Add about 3 Tbsp of olive oil. I've tried a few oils over the years and they all give a decent twist on the taste - some of them pretty nice - but old faithful is the best in this case.

  • Add in your asparagus (the typical fistful with rubber bands around it). Sorry I don't have an exact weight, but most grocery stores sell it this way. If you think you got a larger than normal bushel, increase all ingredients accordingly.

  • Lightly fry the asparagus for about 5 minutes until they start turning bright green.

  • Drizzle balsamic vinegar over the asparagus. I'm usually pretty generous here, maybe a Tbsp or more sprinkled evenly over all the stalks.

  • Lightly fry for another few minutes until it starts to get a bit soft. Add a sprinkle of sea salt. Fry for a short while before beginning the next step to let the salt and vinegar sink in.

  • Next, add a thin layer of cinnamon over the stalks, from head to toe. Do the same with whatever kind of sugar you want. I just used castor sugar so that it would dissolve quicker and cover the asparagus fully, and I think it works the best.

  • Use some tongs and really move the stalks around vigorously, making sure all the ingredients become an even coating over every little crevice. It's all about cooking the asparagus most of the way, and then sealing in the juices with the coating near the end.

  • Finish lightly frying until the stalks begin to wither and the cinnamon/sugar coating begins to char a little bit. Don't let them get too blackened, as the sugar will burn and the taste takes a nosedive. I really wish I just took a picture, but I didn't think of posting until after we ate and my wife and I loved it.

I hope a few people try this and like it as much as we do! It's the first "I could be on to something" recipe I've ever created.

Looking for Rye bread recipes.

Just a week ago was Rye harvest for our family farm and now I have all the Homemade Rye flour I want. (A little gritty but pretty powder like)

I’m interested in any recipes, however I’d prefer recipes that use a 8 inch Dutch oven as a loaf pan. (I have one seasoned so good that bread Literally slides out.)

Also any at all help is appreciated!

1 teaspoon cinnamon

1 cup amaranth flour

1/2 cup flour

1/8 teaspoon salt

2 tsp vanilla extract

Recipe for vegetarian, vegetable sausage

I am making sausages next week and while I have good recipes for Merguez and Thueringer I am looking for something to stuff into a sausage which is not meat for my vegetarian girlfriend. Ideally no tofu or saitan. Anybody got a an idea or recipe, maybe?

I'm an amateur chef who loves to experiment with odd flavor combos. Tonight I perfected my cinnamon and sugar asparagus!

I tried something weird a few years ago and I knew I had something awesome on my hands immediately. I just needed to find the right way to add the ingredients and at what times and temps.

Again, this is super weird, and you're probably thinking it sounds gross, but try it. They end up tasting almost like sweet asparagus french fries. I can't explain it, but you'll see. They are like high-class candy!

  • Get 10 inch or larger frying pan up to 80% heat (whatever that is on your stove)

  • Add about 3 Tbsp of olive oil. I've tried a few oils over the years and they all give a decent twist on the taste - some of them pretty nice - but old faithful is the best in this case.

  • Add in your asparagus (the typical fistful with rubber bands around it). Sorry I don't have an exact weight, but most grocery stores sell it this way. If you think you got a larger than normal bushel, increase all ingredients accordingly.

  • Lightly fry the asparagus for about 5 minutes until they start turning brighter green.

  • Drizzle balsamic vinegar over the asparagus. I'm usually pretty generous here, maybe a Tbsp or more sprinkled evenly over all the stalks.

  • Lightly fry for another few minutes until it starts to get a bit soft. Add a sprinkle of sea salt.

  • Add a thin layer of cinnamon over the stalks, from head to toe. Do the same with whatever kind of sugar you want. I just used castor sugar so that it would dissolve quicker and cover the asparagus fully, and I think it works the best.

  • Use some tongs and really move the stalks around vigorously, making sure all the ingredients become an even coating over every little crevice. It's all about cooking the asparagus most of the way, and then sealing in the juices with the coating.

  • Finish lightly frying until the stalks begin to wither and the cinnamon/sugar coating begins to char a little bit. Don't let them get too blackened, as the sugar will burn and the taste takes a nosedive. I really wish I just took a picture, but I didn't think of posting until after we ate and my wife and I loved it.

I hope a few people try this and like it as much as we do! It's the first "I could be on to something" recipe I've ever created.

Toasted Vegetable and Brie Sandwich

Ingredients

  • 2 zuchinni, sliced lengthwise
  • 1 lg sweet potato, sliced lengthwise
  • salt & pepper to taste
  • 2 Tbsp olive oil
  • 1/2 sweet onion, thinly sliced
  • 4 slices sour dough bread
  • 4 Tbsp mayonnaise
  • 4 Tbsp dijon mustard
  • 1/2 round brie cheese, sliced
  • 2 handfuls of arugula
  • 2 Tbsp butter

Directions

  1. Preheat oven to 400 degrees
  2. Toss the zucchini and the sweet potatoes in 1 Tbsp olive oil and season with salt and pepper
  3. Arrange the zucchini and sweet potatoes on a baking sheet and bake for 20 minutes
  4. Sautee the onion in the remaining olive oil until tender, about 7 minutes
  5. Spread the outside of each piece of bread with mayonnaise
  6. Spread the inside of each piece of bread with dijon mustard
  7. Layer the sandwich with brie cheese, arugula, zucchini, onions, and sweet potatoes
  8. Over medium heat, melt the butter in a cast iron skillet
  9. Toast the sandwiches on both sides until golden brown

[Request] Other uses for Thai Bird Chilies? Preferably oriented towards grilling...

Made this excellent Serious Eats Thai-Style Beef With Basil and Chilies (Phat Bai Horapha) Recipe last night, but only used ten Chilies of a packet of a 6 oz container of them.

Initial searches run into confusion with these vs. sweet chili sauces, or recipes that end up calling for Sriracha instead. Plus I’d prefer to move away from stir-fry on the stove top, as it’s grilling season now where I live.

I don’t have a deep familiarity with Thai cuisine, but I’m sure there are plenty of marinades to be made with them, pre-grilling, or sauces to be added, post-grilling. Maybe even dressings for salads or rice noodles. So I’m asking the reddit hive mind for suggestions.

Any Great smoothie ingredients/recipes that give a long lasting energy boost and lift mood?

So I want to experiment with smoothies and maybe even find a new love. Are their any smoothie ingredients/recipes for a great tasting smoothie that has plenty of energy to fuel your day and also help with some symptoms of depression? I've heard things like spinach and bananas but I'm not sure what goes well together.

What do you add to plain white rice in a rice cooker to spice it up?

Looking for recipes to use fresh orange juice

So I tried a recipe that called for hollowed-out orange halves to use as bowls. I thought that I was going to use the juice somewhere in the recipe, but turns out it never got used :/

Point is, I now have 3 pints of fresh-squeezed, orange juice, and I need recipes to use it. I’d like to avoid recipes that also call for orange zest (the last thing I need is to buy MORE oranges). I’m a bit tired of sweets at the moment, so while I’ll appreciate any input I’m currently looking at more savory recipes.

Let me know what ideas you have.

[Request] taqueria-style black beans

We recently learned that our one-year-old baby loves black beans from taquerias -- he will just devour their beans and rice. Tried to make this at home and had poor luck so far. Can someone suggest a good recipe that he will like that is also reasonably healthy?

Here's what we tried so far:

Plain black beans

Sorted and washed 1 lbs of dry black beans. Soaked overnight in cold water.

Put this into a rice cooker, then heated for 90 minutes. Beans were tender.

Critic's review: He was eager to try these. He picked up a bean and put it into his mouth, then tasted it for a moment, then spit it out. He knows he likes black beans so he tried this again, over and over for about five minutes.

(We sanity-checked that no bean was too big for him to swallow whole.)

Sorted and washed 1 lbs of dry black beans. Soaked overnight in cold water.

Got something from the grocery store labeled "salt pork fatback" -- which seems like it's conflating two things?. It's very salty and says that in a 56g serving there's 50g of salt and 2350mg of sodium. Seemed like it would be a good flavor source. We cut 1/4 lbs of this salt pork into cubes, then fried it in a pan on low-medum heat for about 20 minutes until browned.

Mixed the soaked black beans, with the contents of the salt pork's frying pan (the cubes of pork plus the fat), in the rice cooker. Added 1.5 cups of brown rice.

Put this into a rice cooker, then heated for 90 minutes. Beans and rice were tender, with cubes of very soft pork remaining.

Critic's review: He ate one bean and seemed to like it. He tried to eat a second bean and gagged and spit it out. He refused to try more beans and refused to try any rice. The adults thought it tasted pretty good, though.


So -- what else should we add? Should we just double the amount of salt pork, or add some other seasoning? I'm open to any suggestions as long as it's healthy-ish.

Potato salad question

I want to make a potato salad. Ive never had potato salad because mayo and mustard.

Trying to google the basics of a potato salad doesn't give me the info on looking for.

I was thinking this might work and would like feedback!: red potatoes (boiled with garlic), Italian dressing, chives, bacon, hard boiled egg or 2(chopped), chopped onions and bell peppers.

I'm down for experimenting but these are all things (I like) that are on hand.

In honor of Anthony Bourdain, I thought I’d share his (and my) favorite Cacio e Pepe recipe.

I’ve been making this dish for a long time using this recipe. It’s only brought me good memories. I’ve cooked for my extended family and had great nights talking over this Cacio e Pepe. None of that would be possible without Bourdain.

I know it’s a weird small thing, but this is how I’d like to remember him. He brought joy and happiness to a lot of people, even without realizing it.

Vegan Mini Tostadas

Ingredients

*1 tbsp olive oil

*1/2 cup yellow onion, minced

*1 clove garlic, minced

*1/2 tsp cumin

*1 cup tomato, finely chopped

*1 15oz can black beans, rinsed and drained

*salt

*pepper

*1/2 avocado, finely chopped

*3 tbsp cilantro, chopped

*2 tbsp lime juice

*36 tortilla bowl chips

*1/4 cup sour cream

*1/2 cup cheddar, grated

Instructions

Heat the oil in a skillet over medium heat. Add the onion and garlic and cook until beginning to soften, 2 to 3 minutes. Stir in the cumin and cook, stirring, until fragrant, about 1 minute. dd the tomato and black beans and cook, stirring occasionally, until the mixture has thickened slightly, 5 to 7 minutes. Season to taste with salt and pepper, then set aside to cool. Once cooled, stir the avocado, cilantro, and lime juice into the black bean mixture.

Spoon mixture into each chip, and top with sour cream and cheese if desired. Serve immediately to prevent the chips from getting soggy.

Filling can be prepared up to 4 hours ahead if refrigerated. Let come to room temperature before assembling and serving. Source and photo here

Recipe Request to prepare now, cook later (or freeze) for temporarily disabled.

My dad fell off a ladder over the weekend and broke both shoulders. He basically can't do a thing on his own so my mom has taken off work and is taking care of him. I'm trying to help out where I can, so I figured preparing meals that can be frozen or refrigerated and then reheated/cooked later would be a good route since I can't make it over there everyday to help.

I've done some meal prepping before and made crock-pot meals in freezer bags and froze them and then cooked them later, so maybe things like that or stuff that can be put in a casserole dish and just thrown in the oven later in the week?

He can't feed himself right now, so it should be things that are relatively easy to cut-up or bite sized. He's a little picky but not too bad. He won't eat onions, coconut or honey (he's wrong on all of those things, they are all delicious). Also probably shouldn't be too saucy, since that can be messy. Lastly, it should be relatively budget friendly!

Thanks so much! I've got a lot of other things on my plate so it's hard for me to research good recipes!

Ingredients

**Preparation:**10 min **Cooking:**8 min **Ready in:**18 min

Instructions

  1. Preheat oven to 400°F. Flip a muffin pan upside down and spray with cooking spray.
  2. Using a 2-3" biscuit or cookie cutter, cut circles out of tortillas (approximately 7 circles per tortilla). Bend into crunchy taco shell shape and wedge in between inverted muffin cups. Continue to fill in spaces with tortilla circles (you will need to cook in batches or use multiple muffin pans).
  3. Bake in oven for 7-8 minutes, until edges are slightly brown. Remove from oven and set aside.
  4. Remove skin from chicken and shred white and dark meat. Add to skillet on medium-high heat and add Korean BBQ Taco Sauce. Simmer 8-10 minutes until sauce thickens and chicken is warmed through. Remove from heat.
  5. Spoon about 1 Tbsp chicken onto each mini tortilla. Top with carrots, jalapeños and cilantro. Serve immediately.

Good fish and seafood recipes?

I’ve been allergic to fish and crustaceans my entire life, and just discovered this week that I am no longer allergic. I tried sushi this week and loved it, but I’m not a fan of the fishy tastes nor the texture of the imitation crab. I know it’ll take some getting used to, so I’m looking for some good fish recipes since I have no idea how to cook it! I don’t know what’s good fish or what’s bad fish.
