Recipe for vegetarian, vegetable sausage

I am making sausages next week and while I have good recipes for Merguez and Thueringer I am looking for something to stuff into a sausage which is not meat for my vegetarian girlfriend. Ideally no tofu or saitan. Anybody got a an idea or recipe, maybe?
