[Request] taqueria-style black beans

We recently learned that our one-year-old baby loves black beans from taquerias -- he will just devour their beans and rice. Tried to make this at home and had poor luck so far. Can someone suggest a good recipe that he will like that is also reasonably healthy?

Here's what we tried so far:

Plain black beans

Sorted and washed 1 lbs of dry black beans. Soaked overnight in cold water.

Put this into a rice cooker, then heated for 90 minutes. Beans were tender.

Critic's review: He was eager to try these. He picked up a bean and put it into his mouth, then tasted it for a moment, then spit it out. He knows he likes black beans so he tried this again, over and over for about five minutes.

(We sanity-checked that no bean was too big for him to swallow whole.)

Beans and rice with salt pork

Sorted and washed 1 lbs of dry black beans. Soaked overnight in cold water.

Got something from the grocery store labeled "salt pork fatback" -- which seems like it's conflating two things?. It's very salty and says that in a 56g serving there's 50g of salt and 2350mg of sodium. Seemed like it would be a good flavor source. We cut 1/4 lbs of this salt pork into cubes, then fried it in a pan on low-medum heat for about 20 minutes until browned.

Mixed the soaked black beans, with the contents of the salt pork's frying pan (the cubes of pork plus the fat), in the rice cooker. Added 1.5 cups of brown rice.

Put this into a rice cooker, then heated for 90 minutes. Beans and rice were tender, with cubes of very soft pork remaining.

Critic's review: He ate one bean and seemed to like it. He tried to eat a second bean and gagged and spit it out. He refused to try more beans and refused to try any rice. The adults thought it tasted pretty good, though.


So -- what else should we add? Should we just double the amount of salt pork, or add some other seasoning? I'm open to any suggestions as long as it's healthy-ish.
