I followed this recipe, but with some changes inspired by the other recipe.

2 eggs
1 ¾ cups buttermilk (added 2-3 TBSP vinegar)
¼ cup butter, melted
3 TBSP sugar
1 teaspoon cinnamon
¼ teaspoon baking soda
1 cup amaranth flour
1/2 cup flour
2 teaspoons baking powder
1/8 teaspoon salt
2 tsp vanilla extract
didnt need to butter the waffleiron, and they turned out amazing
