Ingredients
- 2 zuchinni, sliced lengthwise
 - 1 lg sweet potato, sliced lengthwise
 - salt & pepper to taste
 - 2 Tbsp olive oil
 - 1/2 sweet onion, thinly sliced
 - 4 slices sour dough bread
 - 4 Tbsp mayonnaise
 - 4 Tbsp dijon mustard
 - 1/2 round brie cheese, sliced
 - 2 handfuls of arugula
 - 2 Tbsp butter
 
Directions
- Preheat oven to 400 degrees
 - Toss the zucchini and the sweet potatoes in 1 Tbsp olive oil and season with salt and pepper
 - Arrange the zucchini and sweet potatoes on a baking sheet and bake for 20 minutes
 - Sautee the onion in the remaining olive oil until tender, about 7 minutes
 - Spread the outside of each piece of bread with mayonnaise
 - Spread the inside of each piece of bread with dijon mustard
 - Layer the sandwich with brie cheese, arugula, zucchini, onions, and sweet potatoes
 - Over medium heat, melt the butter in a cast iron skillet
 - Toast the sandwiches on both sides until golden brown
