Authentic beef/lamb or chicken shawarma recipe (Gold for answer!)

I am desperately trying to find authentic beef/lamb and chicken shawarma recipes.

There are too many variations online and I can’t tell which are good. I want the REAL flavor. I’m tired of seeing fake recipes where the only ingredients are paprika or store bought shawarma mix.

Can anyone help me with either a beef/lamb or chicken recipe?
