I know this sounds absurd, but hear me out.
Seriously this was an absolutely incredible topper for a pad thai dish.
I even tried the eggs/peanut butter by themselves and they were surprisingly yummy. Maybe too sweet for a breakfast in its own (hence why it was used as a topper )
Got the idea because when I thought about pad thai I ordered at restaurants. They usually have peanuts and I always want an egg or sometimes extra egg in my pad thai.
Basically tonight I made a basic pad thai dish
I didn't have the stuff to make a homemade pad thai sauce so I just used the Thai brand pad thai sauce you can get at most stores. Its good enough in my opinion.
Just cooked the rice noodles and then stir fried the noodles together with some spices, onions and other veggies. I normally use chicken but i wasn't sure how that would taste in combination with the peanut butter eggs. Wanted to start as simple as possible for such an absurd idea.
For the eggs, I just whisked together 3 eggs and around a tablespoon of peanut butter together. It should look like a traditional peanut sauce in coloration, maybe a little lighter.
I scrambled the eggs and they came out a nice tan color.
Then I plated some pad thai in a bowl and topped the dish with some of the peanut butter scrambled eggs and it tasted absolutely phenominal.
I know it sounds like extra steps than just adding some fried eggs and some peanut sauce to a pad thai, but honestly the texture and consistency of the scrambled eggs topper just went really well with the noodle dish.
I also think this may be a good topper for some fried rice!
I dont fully recommend the eggs by themselves. They were still good, but they were just a little too much on the sweet side for me to have as a breakfast, but it is definitely a protein packed meal that still tastes good and fills you up quickly.
But using them as a topper on Asian inspired dishes was something that was so much better than even my curious little mind expected.
Just wanted to share something that was defintely out of the box but ended up tasting really delicious!
