How to Italian cuisine - learn how to cook: Pasta pancetta e patate

This pasta, is so simple and yet so good, this is the kind of food that makes Italians the best in the kitchen ;)

Ingredients:

- 500g Pasta

- 2 Slices of Pancetta (5mm tall)

- 2 medium Potatoes

- Half onion (small)

- Basil as needed

- Parmesan as needed

- Olive oil

- Lard (Dessert spoon)

Recipe:

Start by boiling some water in a pot, as soon as the water reaches the temperature, start cutting the potatoes in little dices and add them to the water. In a "wok" pan (or big pan) add oil and lard and start heating in the meantime start slicing the pancetta into dices and also prepare the half onion by slicing that as well. Add the two ingredients to the pan start with the onion and as soon as it becomes softer add the pancetta and brown it. When the water from the potatoes start boiling again ad a dipper of potatoes with the water from the pot as well. Then start smashing the potatoes inside the pan, this is used to make the pasta more creamy, if you don't desire that avoid this passage. Drop now the pasta inside the pot and let it cook until it's ready. All these passages should be in sequence or the potatoes will start dissolving inside the hot water, you don't want this or when you drain the pasta the potatoes will get stuck in the holes of the colander. As soon as the pasta is ready as said before, drain it well and add them to the pan, we advise not all at once but one or two times. Mix everything in the pan, and add parmesan grated cheese. Keep mixing and serve in a plate, add some more parmesan and some leaves of basil and you are finished go ahead and eat this delicious recipe! See you next Friday for a new video!
