Southwest Chickpea Salad

Ingredients

  • 1 15oz Can Chickpeas
  • 1 15oz Can Black Beans
  • 1 15oz Can Corn
  • 1 Large Bell Pepper Diced
  • 1/2 Red Onion Diced
  • 2-3 Jalapenos, Seeds and Membranes Removed, Finely Diced
  • ~20 Cherry Tomatoes, halved
  • 1/2 Bunch of Cilantro, chopped

Dressing

  • Juice from 1.5 Limes
  • 2 Tblsp Olive Oil
  • 1 Tsp Cumin
  • 1/2 Tsp Garlic Powder
  • 1/4 Tsp Cayenne
  • 1/4 Tsp Paprika
  • Salt and Pepper to Taste

Directions

  1. In a large bowl, combine 1 diced bell pepper, 1/2 diced onion, 2-3 finely diced jalapenos (seeds and membranes removed), 1/2 bunch chopped cilantro, ~20 halved cherry tomatoes with 15oz cans of blacks beans, corn, and chickpeas (drained and rinsed).

  2. In a separate smaller bowl, combine juice from 1.5 limes, 2 tblsp olive oil and spices

  3. Pour dressing into the large bowl with the rest of the ingredients and mix adding salt and pepper to taste.

  4. Let sit for at least 30 minutes before serving (better if left overnight)

Note: Adding 3 large avocados just before serving works well.
