INGREDIENTS:
For the crepes:
2 cups of milk
4 eggs
3 tbsp melted butter
Pinch of salt
1 tbsp sugar
1 tsp vanilla extract
1.5 cups flour.
For the cinnamon bananas:
2 bananas
2 tbsp butter
1 tbsp cinnamon
2 tbsp honey
PROCEDURE:
For the crepes:
- Add the milk and eggs into a large bowl. Whisk to combine.
- Add melted butter, pinch of salt, sugar, and vanilla extract. Gently mix just a bit more until it’s incorporated.
- Add the flour, and mix mix mix again until the batter is runny and has no more clumps.
- Cover your batter and rest in the fridge for a minimum of 30 minutes, or overnight.
- Turn your stovetop onto medium heat, and spray with any nonstick spray.
- Pour about 1/3 cup per crepe onto your pan.
- Tilt your pan around so the batter is evenly spread around your pan in a thin layer.
- Cook for about 2 minutes, then flip!
- Cook for another 2 minutes on the other side, and when it looks like it’s starting to brown just slightly - it’s done!
- Repeat for remainder of the batter.
For the bananas:
- Slice your 2 bananas.
- On medium heat, add the butter to your pan and move it around the entire pan while it melts.
- Add the cinnamon, mix it in.
- Add the honey, mix it in.
- Then add your banana slices, making sure that every piece is coated in that yummy sauce on the bottom.
- Cook for about 4 minutes, keep checking the bottoms that they aren’t burning.
- Flip, and cook the other side for 4 minutes - and that’s it!
