What complex dishes you know of that are traditionally done in a simple manner with few ingredients?

An example is Fettuccine Alfredo that is commonly made with heavy cream, but traditionally is made off the stove by combining pasta water, butter and parmeggiano reggiano.

Any more dishes like that with a simpler "origin recipe" that ends up being much more elegant and tasty than their modern complex iterations?
