I am wanting to make aligot sometime soon and I have some questions. What is the best cheese to use? From what i’ve read tomme fraiche is a good one but i’m having trouble finding some in my area. Also what potatoes are best? I’ve seen recipes use everything from fingerling to new potatoes. Which do you recommend? Thanks in advance! This will be my first attempt at making French food and I am really looking forward to it!
