Looking for Dry Pot sauce recipe

Not sure if this is allowed or not but I can't seem to find a sauce recipe. I had a Frog Legs dry pot at a restaurant and me and my dad wanted to put the sauce on our smoked pulled pork. The restaurant makes the sauce with the fish so I couldn't get any extra to take home and try it. Does anyone have a spicy sauce that keeps you craving more even though it's so spicy.

New Years Eve dinner ideas

Hey guys, I wanted to cook my girlfriend dinner on New Years Eve since we will have a place to ourselves. She isn't a big meat eater but as long as it isn't shrimp she will be ok with it. I'm not the best cook but I have experience in the kitchen. Looking for a easy-Intermediate recipe. Something that might impress her. She cooks for me all the time. I want to do something nice for her.

Thanks for any help.

Ghormeh Sabzi - Stew of Herbs

This dish is among the most delicious Iranian food recipes. I never tasted such combination of flavors in any other dish like Ghormeh Sabzi. The Fenugreek is the superstar here! So if you don’t have this specific ingredient try to cook it when you have it. It worth the patience!

Talking about patients, you should be Veeeery patient while cooking this dish. This isn’t something new, in fact, Iranian recipes are literally: slow cooking foods and Ghormeh Sabzi is a classic. Although I’m using a pressure cooker but be aware that you will need about 2 hours to cook this dish! ⌛️ p.s. this dish is served with Iranian rice and it’s great with white plain yogurt

Ingredients | Servings: 2-3
* 1 tsp Turmeric
* 500g/17oz lamb
* 1 tbsp Dried Fenugreek leafs
* 100g/3.5oz Red beans
* 2 Onions
* 200g/7oz chopped parsley
* 200g/7oz chopped Leek
* 6-7 Dried lemon
* 1 tsp cumin

Preparation
1- Soak the red beans for 4-5 hours (or the night before)
2- Chop 1 onion
3- In a pan add turmeric, salt, pepper, and oil put it over medium-high heat
4- Add chopped onion and stir-fry until it becomes soft
5- Add the chopped leek and parsley (they are frozen coz i always keep them in freezer to last longer)
6- Wash the dried fenugreek to make sure it’s clean and ADD IT TO THE PAN
7- Add the half teaspoon of Cumin, stir fry all the ingredients for about 20-30 mins
8- In a pressure cooker cook beans and meat with an onion with cumin for 1 hour
9- Add to the pot the herbs and simmer them for 20 mins
10- Add soaked dried lemons to the pot and let all of the ingredients cook for another 30mins to 1hour

It's done and serve it with a nice basmati rice with saffron
Enjoy!

My Diet Burrito Bowl

Am I the only one at a complete loss by the bodybuilders that swear by Chipotle meals every day? Personally, every time we go to Chipotle, I have to prepare myself for gaining at least two pounds, having a food hangover, and feeling instant regret. Plus, all that sodium. Woof.

I lived next to Chipotle all next year and gained about ten pounds eating it every night. In an effort to curb my craving for burrito bowls, I came up with a “diet” burrito bowl recipe. Years later, I still use it. As an added bonus, it’s a great go-to for weekly meal prep. Mostly because it is probably the most half-assed recipe of all time.

The ingredients:

1 Bag Tri-Color Quinoa

1 Can of Black Beans

1 Can of Black Olives

1 oz. Cilantro Leaves

2 Peppers, Red & Green

1 oz. Taco Bell Taco Seasoning

1 bag of Organic Valley Shredded Sharp Cheddar Cheese

1 Scoop of light sour cream and/or Guacamole

Cook the quinoa according to the instructions on the back Once it’s done, drop it into a large container with the black beans and black olives Dice the peppers and chop cilantro leaves Drop peppers, cilantro leaves, and seasoning into bowl Mix all aforementioned ingredients When you’re ready to eat, scoop out your portion and heat in the microwave for 90 seconds Once it’s hot, add sharp cheddar cheese and toppings of your choice And now, you’re officially a burrito expert. And probably contributing to Chipotle’s plummeting stock. Enjoy!

Crab cake style thanksgiving leftovers cake.

Sorry if this breaks some rules but it's a recipe passed down from my 81 year old Portuguese grandma who's measurements are basically... "some" of this, "lots" of that, and "maybe this too"

This is a generic crab cake recipe for reference about measurement sizes.

I'm posting so maybe people have a recipe to make use of leftover thanksgiving/ christmas dinner food. Once again, I do not have direct measurements and I'm sorry for being a terrible person.

Mix into a large bowl.

  • 1. Shred up left over turkey or cut into cubes. (Depending on preference)
  • 2. Add mashed potatoes and stuffing .
  • 3. Add ingredients to compliment mixture. (Green onion, bacon, onion, parsley, salt, pepper) Basically whatever you enjoy.
  • 4. Add in eggs. Seems to be 1 egg for a pound of mixture.
  • 5. Get your hands dirty and really mix everything together.
  • 6. Scoop into little balls like cookie dough and get ready to cook.

Depending on how you like your food you can either

  • Broil for 15mins in oven.
  • Pan sear in skillet/pan 5-6 mins per side.
  • Fry in oil until golden brown.

If you're wondering what the mixture ratio should be, it's quite easy.

  • Do you like Turkey more? Add more turkey than potato/ stuffing.
  • Do you enjoy stuffing more? Add more stuffing
  • Do you enjoy proper measurements in a recipe? 81 year old grandma doesn't care.

Use cranberry sauce as a dip if you enjoy. Thanks for reading and I hope I did ok.

Crockpot Mac n' Cheese

This is a recipe from my mom. Not sure where she got it, but I love it and make it all the time. Extremely easy recipe, and it's very creamy and tangy mac n' cheese with a great mouthfeel.

Ingredients:

1 lb. Elbow Macaroni

1 stick butter

1 and 1/2 lb. sharp cheddar cheese

1 & 1/2 cup milk

1 can (12oz.) evaporated milk

2 tsp. seasoned salt

2 tsp. dried minced onion

salt and pepper to taste

Instructions:

  1. Boil macaroni until tender.

  2. Add all ingredients to crockpot set to low.

  3. Cook 2.5-3 hours until done.

I'm experimenting making it with 1 pound of sharp cheddar and a half a pound of habanero jack right now. I'll update when it's done in a couple hours.

Recipe hunt!

Alright Reddit I’m searching for a specific recipe from my childhood. The recipe was for beef jerky from a small grocer in Empire, Michigan. I believe it was called Deerings Market. The jerky was cut thick in meaty strands and possibly oven dried but to a point where it was still quite moist inside for a jerky. We kept it refrigerated because of this. I believe it came in pepper and teriyaki?? Anybody heard of/had this recipe?

Second Step |Fry salted meat|

Heat 2 cup oil and light fry salted meat.

Third Step |Marinating|

Add all spices, ginger, garlic and lemon juice into yogurt and apply on the fried beef. Leave it 6-7 hours. You can even prepare a night before your event. After this, we only need roughly 2 hours for steaming.

Final step |Steaming|

If you have steamer, you can use. Depending on your steamer setting. It needs very slow flame to be done. I’m following this method for steaming. Take a large skillet, two sieves and 2 glass water. Set sieves and pour 2 glass water. Set marinated beef on the top sieve and put the skillet on the burner. Let the water simmer and cover lid. Now set a very low flame. Leave it for about 2 hours. Done!

Melt in your mouth Shortbread cookies with Toblerone chocolate and pecans ♥

These shortbread cookies are absolutely delicious and are guaranteed to melt in your mouth. They are super simple to make and don’t require much time to prepare. Feel free to get creative with your toppings and add ins. For this recipe, I used chopped pecans and a piece of Toblerone chocolate for some extra sweetness. Enjoy!

What you’ll need: • 1 cup of unsalted butter, at room temperature • ½ cup + 2 tbsp of icing sugar • ¼ cup of cornstarch • 1 ½ cup of all-purpose flour • ½ tsp of salt • 1 tsp of vanilla extract • ¼ cup of chopped pecans • ½ of a Toblerone bar

What to do:

  1. Preheat the oven to 350°F. Prepare a large non-stick baking tray (you may want to add a light layer of PAM cooking spray).

  2. In a large mixing bowl, add 1 cup of unsalted butter (at room temperature) and beat with a fork until light and fluffy.

  3. Slowly, one spoonful at a time, add the icing sugar to the softened butter and beat with a fork after each addition. Continue until all of the icing sugar has been added.

  4. Slowly, one spoonful at a time, add the cornstarch to the butter and sugar mixture and beat with a fork after each addition. Continue until all of the cornstarch has been added

  5. Add the vanilla extract to the bowl and mix.

  6. In a separate bowl or measuring cup, mix the salt and all-purpose flour. Slowly, one spoonful at a time, add the flour and salt mixture to the large mixing bowl and beat with a fork after each addition. Continue doing this until all of the flour has been added.

  7. Stir in the chopped pecans (or any other nuts/add ins you prefer).

  8. Gather the dough into balls and flatten slightly so they are just about the size of your palm. Place the dough on the baking tray so that they are evenly spaced out (about 1-2 inches apart).

  9. Take one piece of Toblerone chocolate and slightly press it into the top of the cookie dough.

  10. Place the baking tray in the oven for 18-20 minutes. Keep an eye on them as you don’t want them to brown too much.

  11. After 18-20 minutes, remove the cookies from the oven, and allow the cookies to cool (this step is essential! The cookies will be very soft and fragile when they are hot so they need a chance to harden). Once they have cooled, indulge! 😊

[Request] non-lasagna dishes for a 14" lasagna pan

My girlfriend got me a 14" lasagna pan for Christmas, since I love to cook. She, however, does not like lasagna (can only tolerate light amounts of cheese).

I was hoping someone on here had a good recipe that could utilize my new pan and my girlfriend would still enjoy. I was thinking about pork tenderloin in a teriyaki glaze with asparagus and rice. Open to any other suggestions, and thank you in advance.

Hello,

I'm planning to make a 4 cheese pizza (quattro formaggi) I searched a lot and couldn't find an answer.

I have these types of cheeses 1- Mozzarella 2- Emmental 3- Parmesan 4- Gruyere

There are lots of recipes with Mozzarella + Parmesan + Emmental/Gruyere + 4th another type. I fear combination of emmental and gruyere won't be good. So my question is; my type of cheeses are compatible?

Beef Wellington on a budget

Ingredients:

2 8oz bacon wrapped filets 1/4 package of sliced mushrooms 1 Sweet Onion finely diced 1 Garlic Clove sliced thin. 1 package of Pillsbury pie pastry

Step 1: heat iron skillet over high heat. Septated bacon from filets, and place them into a small skillet, let cook over medium heat.

Place the filets on the skillet, and cook to 90% of your desired doneness. Searing both top and bottom, as well as the sides. Sprinkle daily and pepper on the meat as it sears. This should take about 10 minutes.

While meat is cooking, cook bacon over medium high heat, add sliced garlic, mushrooms and onions. Stir the mixture often to store the bacon cooks all the way. Once bacon is cooked to a crisp, remove from the heat.

Once the meat has reached the desired temperature, remove from heat, and let it cool down all the way to room temperature.

Next, preheat your oven to 450 degrees,. Carefully unroll the pie pastry, and place the filets in the middle of one pie crust, ladling the mushroom mixture on top, then folding the pastry over to seal the meat inside.

Place on a greased cookie sheet and bake at 450 for 10 to 15 minutes until done.

I've got vegetables - now what?

Currently at my mom's and she has me asked that I prepare the vegetable side dishes for tomorrows dinner. I'm not very good at cooking so I'm here looking for help! We have: green beans, mushrooms, asparagus, brussel sprouts, and broccoli. I initially thought to just throw everything together and roast it all but I'm also up to try a couple seperate dishes, for example: roasting the mushrooms, broccoli & brussel sprouts and then doing bacon wrapped asparagous. No clue what to do with the green beans though. Anyways - I'm definitely up for suggestions! Bonus points if they can be made the night before (however roasting seems like it wouldn't be good prepared in advance). Thanks!

Orange Cream Profiteroles With Chocolate Sauce

Found this at https://www.reddit.com/r/foodandcooking

For the pastry :

  • 200 ml Water
  • 85 g Butter
  • 115 g (4oz) Plain flour
  • 4 teaspoons of Caster Sugar
  • 2 Eggs
  • Half a teaspoon of Salt.

For the Cream :

  • 600 ml of double cream
  • 3 - 4 tsp of orange Essence

For the Chocolate Sauce :

  • 200 g Milk or Plain Chocolate *100 ml water
  • 4 ozCaster Sugar

Method

For the Choux Pastry :

Put the water , Butter & Sugar into a saucepan and heat gently. Mix the salt into the flour When the butter has all melted and the water is almost boiling , turn up the heat and quickly add all of the flour and salt. Remove from the heat , and with a wooden spoon mix together until all of the ingredients form a glossy ball of pastry that does not stick to the pan. Set the mix aside in a separate bowl to cool off for 10 minutes. In another bowl , beat up your eggs and set aside. When the mixture has cooled you can add your eggs and start combining them with a fork. The eggs will not mix in at first so keep mixing until they eventually combine to make a shinny thick but slightly drippy pastry dough.

For the Cream Filling :

Tip the double cream into a large jug or bowl. Add the Orange Essence and mix with a whisk until the cream is thick and has peaks when you lift the whisk out. If you prefer , you can use an electric whisk or blender for this job.

For the Chocolate Sauce :

Put the water and sugar into a saucepan and bring to the boil. When the water is boiling , reduce the heat to a simmer. Place a glass bowl on top of the pan and add all of the chocolate to the bowl. Allow the chocolate to fully melt , then remove the lot from the heat. Combine the water from the saucepan into the melted chocolate and mix together well to make a thick chocolate sauce.

Making the Profiteroles :

Heat your oven to 180 c. Put some lightly greased oven paper onto a flat oven tray. Fill up your piping bag with the choux pastry mix. With no nozzle attached start piping out the buns onto the oven tray. The circumference of the uncooked profiteroles should be no more than a 10 pence piece. Make them small as they will more than double in volume. Make sure that you leave at least 1 inch between each profiterole. Cook the profiteroles in the oven for 25 minutes until a nice rich brown colour. Cool the buns down on a wire rack for a few hours before adding the cream. Get your cream into a piping bag , and make a small hole in the bottom of each bun. Using a piping bag with a long thin nozzle pipe the cream into each profiterole.

(request) Help! Looking for recipe for German gooey chocolate cake with crust

Hi guys,

I lived in Berlin for a time and there was a restaurant that had this ultra-dense, almost gooey chocolate cake with a crust and a layer of slightly harder chocolate covering the whole thing. The crust was deeper brown than a normal pie crust, and tasted kind of like caramelised shortbread. As a whole, it's unbelievably good.

In pictures I've found, it says the cake is made with nougat and schmand (like sour cream but higher fat, https://eifelmausi.com/2016/09/08/schmand-vs-sour-cream/)

Here's some images of the cake I've found around the internet: https://imgur.com/a/2c5MU https://plus.google.com/photos/photo/114082080737421845747/6335331725547927586

Does anyone have any ideas where to start? Know of a recipe similar?

Frangelico substitute in torte?

Hello!

For our Christmas dessert I have planned to make a chocolate and hazelnut torte with a hazelnut cookie base, covered in chopped hazelnuts and gold dust.

The torte requires (amongst other things) frangelico and liquid gelatine.

I have got all the ingredients except the frabgelico! I can not find it anywhere. Waitrose say they used to but do not stock it anymore. I have been to 4 other shops and can not find it.

Can anybody recommend an alternative? I do think it needs to be alcoholic seeing as I am using gelatine. (Otherwise I would just use hazelnut flavouring) but I don't want to affect the setting.

Thanks in advance! And merry Christmas!

Help completing an incomplete recipe please!

So I got this carrot soufflé recipe from my mom ages ago. She doesn't remember it, so no help there.

I'm just missing the amount of butter and eggs that go in. My instincts say...two eggs? Also, I'm thinking the butter should be melted?

Here's what I have:

2 cups of cooked carrots 1 tsp salt 1/4 cup honey 1 1/2 cup cream 3 tbsp cornstarch ?? Eggs ?? Butter

Blend carrots with salt, honey and part of cream Mix cornstarch and the rest of the cream, add to blender Then add well beaten eggs and butter Transfer to greased 2 qt baking dish, bake at 400° for 45-55 minutes.

Any guesses? Thanks!

[Request] Looking for tips to recreate ill grandmother's cake.

Hi, everybody.

So over a decade ago, my grandmother taught me how to make this cake that she would make every Christmas and Moon Festival for our family. She would literally spend hours in the kitchen churning out these cakes to give to extended family in the area. One year, she taught me how to make it. But being a kid at the time, I've long forgotten. About a year ago, she suffered a fall and since then, she has not been... all there. This year, I'd like to make the cake for my family, but I honestly have very little experience with baking. So I'm hoping you guys can point me in the right direction or figure out some of the portions for the ingredients. Before I get into the description, I should mention that she was by no means a baker. She grew up in the rural parts of China and probably learned this recipe from her mother and the recipe might seem a little strange...

The ingredients she used were really simple. I remember eggs (not separated), (a lot of) brown sugar, flour, and possibly butter.

The other strange thing is that I remember she used to measure with mugs. Yeah, like coffee mugs. Back when she taught me, she added ingredients in 1/2 mug or full mug measurements into a stand mixer.

I also remember she would pour the batter into a pan and steam it. The result was a really dense, moist, and jiggly cake much like Japanese Cheese Cakes. I know I could just make that for the family, but I'd really like to find a way to preserve this recipe or at least some version of it. I know it's not the best recipe, but it holds a lot of sentimental value for me. I'd really appreciate any help at all.

Thanks so, so very much.

Chisesi-style Cajun Ham

Chisesi is a popular Greater New Orleans Area meat processor. This recipe is closely based on a copycat Chisesi Cajun Ham recipe from The Times Picayune, NOLA.com. You will need a Cajun Injector like this one to inject the marinade into the ham.

Ingredients

1 8-to-10 pound ham

For Cajun marinade:

1 cup vegetable stock

6 tablespoons cup liquid crab boil

2 teaspoon vinegar

4 tablespoons Tony C's Salt free seasoning

For the Citrus Glaze:

4 or 5 Oranges, Satsumas, or Tangerines, peeled, segmented, pith and seeds removed

1/4 cup butter

1/4 cup dark brown sugar

1/4 cup honey

1 teaspoon minced garlic

Steps

Combine the vegetable stock, crab boil, vinegar, and Tony C's. Use a glass mason jar type container with a lid that seals well enough to shake the liquid without leaking. Shake well to combine.

Put the ham on a rimmed baking sheet to collect the marinade that will leak out the ham. Use an injector and keep injecting everywhere. Insert the needle into the ham, push the plunger gently as you slowly pull the needle back. Collect the marinade from the sheet pan and continue to inject. Once it is as injected as you can get, wrap the ham in plastic and refrigerate for a minimum of 4 hours to as much as 24 hours.

To make the glaze. Place the prepared citrus fruit in a processor, and pulse once or twice. You want chunks and juice, not pureed. In saucepan over medium heat, combine butter, brown sugar, honey and garlic. Raise heat and bring to a boil. Lower heat and whisk until sugar dissolves.

Add chopped citrus pieces with all the juice, whisking until well blended. Bring to a boil, then reduce heat to a medium until mixture begins to reduce and thicken, about 30 minutes. Stir occasionally to prevent sticking.

When ready to bake, preheat the oven to 325 degrees.

Place the ham in a lightly greased deep roasting pan. Bake uncovered for 1-1/2 to 2 hours, or about 15 minutes per pound. Remove ham from oven. Warm remaining glaze and paint ham with it.

Slice and enjoy!

Sauce:

60 g / 4 tbsp unsalted butter

1/3 cup / 50g plain flour (all purpose flour)

3 cups / 750 ml milk, warmed

2 cups / 200g shredded cheese (my favourite is gruyere, next is cheddar and Colby) (Note 2)

1 cup / 100g shredded mozzarella cheese, or more other cheese of choice (Note 2)

3/4 tsp salt

Seasonings (optional):

1 tsp garlic powder

½ tsp onion powder

½ tsp mustard powder

Instructions

Pasta:

Bring a large pot of water to the boil. Add macaroni and cook per packet directions MINUS 1 minute.

Drain, return pasta to pot, add butter and toss until melted. Set aside to cool while making the Sauce.

Topping:

Mix together Topping. Set aside.

Sauce (video is helpful):

Preheat oven to 180C/350F.

In a large saucepan or in an ovenproof skillet (I use my 26cm/9" Lodge cast iron skillet), melt butter over medium heat. Add flour and cook, stirring constantly, for 1 minute.

Add about 1 cup of the milk and mix to dissolve the paste into the milk. Then add remaining milk and mix until lump free (use whisk if required). Mix in salt and Seasonings if using.

Cook, stirring/whisking regularly, for 5 - 8 minutes until thickened to a cream consistency. When the Sauce coats the back of a wooden spoon, you should be able to draw a path with your finger.

Remove from stove, add cheese and stir - cheese doesn't need to melt.

Adjust salt to taste.

Assembling:

Pour Sauce into pot with Macaroni. Stir quickly, then pour back into the skillet (I did this) or a baking dish. Sprinkle with breadcrumb topping.

Bake for 25 minutes or until top is light golden. Don't bake too long otherwise you'll bake away the Sauce!

Serve immediately!

Recipe Notes

  1. Panko breadcrumbs are larger pieces than normal breadcrumbs which creates a really nice extra crunchy topping. It can be found in the Asian section of supermarkets here in Australia. If using normal breadcrumbs, use cup measures not weights (because they weigh more).

  2. The Main Cheese (2 cups) should be a flavoured cheese. My favorites are: cheddar, Monterey Jack, Colby, provolone and Gruyere (I used this in the video). Gruyere is my favourite - it's not cheap here, so it's a treat! You can actually use any cheese you want, just make sure that it's a melting cheese (e.g. don't use feta, cream cheese, processed cheeses. I also don't recommend Swiss or Masdaam cheese, doesn't melt that well into sauces). AUSTRALIA: Do not use Tasty Cheese! I have found that some brands can result in the sauce being a bit floury. Some are ok, some are not - safer to say don't use Tasty Cheese. I like to use mozzarella for the 2nd cheese (1 cup). It melts really well into the sauce, has that nice stretch, and isn't as oily like other cheese can tend to be. However, you can just use more of the Main Cheese.

  3. Tossing the cooked pasta with butter provides a light coating that helps prevent it from bloating while baking in the sauce. This is also the reason why I let the pasta cool before mixing in with the sauce. You could just make the sauce while the pasta is cooking.

  4. MAKE AHEAD: Mac and Cheese is best made fresh but if you need to make ahead, this is the best way. Cook pasta and toss in butter, cool. Make cheese sauce per recipe, then cool with LID ON (important, to avoid evaporation). Make topping. Store all components separately in the fridge until required. Mix sauce and pasta, top with topping then bake per recipe.

  5. REHEATING: Mac and Cheese if best served fresh, and the best way to make ahead is in Note 4. But if you can't do that, then take it out of the oven as soon as the top is light golden at about 20 minutes. Then it will be saucier than cooking for the full time which is fine. Cool completely uncovered, then cover in cling wrap and refrigerate. Then remove from fridge 30 minutes before reheating. Best way to reheat is in the microwave, covered in cling wrap, on medium for 8 - 10 minutes or until the centre is hot (stick knife in to check). Then grill/broil just for a few minutes to get that top crisp again - add a few dabs of butter or even spray with oil if you think it needs the encouragement to perk up again!
