Looking for interesting uses of turkey broth

Hi cooks and chefs of Reddit!

I absolutely love turkey broth, and while I still haven't got tired of the "alphabet pasta + broth" thing and enjoy every bowl of it, I would like to try cooking something more interesting with it, especially something that would use Asian noodles (like udon or soba) as well, but am open to all ideas, complete recipes or suggestions of uses, simple and complicated alike!

I tried to do a Web search, but DuckDuckGo treats my queries like "recipes OF turkey broth" instead of "recipes WITH turkey broth", no matter what wording I try.

Okay, so my favorite thing to eat in the entire world is the herb crusted salmon dish from Cheesecake Factory. What makes this dish my favorite is the "delicious lemon sauce" that it comes with. Gingerbread Cake With Caramel Sauce & Vanilla Cream Cheese Icing

If you’re a fan of gingerbread cookies, then this is a great variation to get your gingerbread fix in a cake form. This cake provides a mild ginger taste, lightly spiced with all spice and cinnamon. The molasses mixed through the cake provides a dense texture. Iced with a wonderful vanilla cream cheese icing proves a beautiful sweet offset to the cake. Top and drizzled with caramel sauce simply blends amazingly to finish the cake to perfection.

Ingredients:
Gingerbread Cake
• 225 g Butter softened
• 3/4 cup Brown Sugar
• 1/2 cup White Sugar
• 1 cup Molasses
• 2 large Eggs
• 3 cups Plain Flour sifted
• 1 1/2 tsp Ground Cinnamon
• 1 1/2 tsp All Spice
• 1 1/2 tsp Ground Ginger
• 1 1/2 tsp Baking Powder
• 1 1/2 tsp Bicarb Soda
• 1 1/4 cup Milk
Vanilla Cream Cheese Icing
• 450 g Butter softened
• 500 g Cream Cheese softened
• 4 cups Icing Sugar
• 1/4 cup Thickened Cream
Caramel Sauce
• 1 cup White Sugar
• 1/4 cup water
• 75 g Butter
• 1/2 cup Thickened Cream

Instructions:
Gingerbread Cake
1. Pre-heat a fan forced oven to 180°C (350°F).
2. Grease and line with baking paper two 20cm (8 inch) round springform baking pans.
3. In a large bowl add butter, brown sugar & white sugar and using an electric mixer, beat butter until light & fluffy.
4. Add molasses & eggs and continue beating until fully combined and smooth.
5. In a separate bowl, add plain flour, baking powder, all spices & bicarb soda and mix together until combined.
6. Add flour mixture and milk to the butter mixture. Combine with butter mixture in alternate additions and combine fully after each addition. Add the flour and milk in about 3 additions each.
7. Pour mixture evenly into the two prepared pans, smooth the mixture in each pan and place into oven
8. Bake for about 35 minutes or until a skewer inserted into the centre of the cake comes out clean.
9. Remove from oven and cool in baking pans for about 10 minutes before turning out onto wire racks to cool completely

Vanilla Cream Cheese Icing
1. In a large bowl add butter and using an electric mixer, beat until light and fluffy.
2. Add cream cheese and continue beating until fully combined.
3. Add icing sugar, one cup at a time and continue beating until fully combined.
4. Add thickened cream, a little at a time, and beat through until you achieve the required consistency to ice the cake.

Caramel Sauce
1. Make caramel sauce per the caramel sauce recipe link below. Allow caramel sauce to cool before coating and drizzling on cake.

Cake Assembly
1. Place one cake on a plate and layer with vanilla cream cheese icing
2. Invert and place second cake on top and layer top and sides with cream cheese icing. Note: you may find it easier to layer the cake by initially icing for a crumb layer, then refrigerating for 15-20 minutes to allow icing to firm. Then remove from refrigerator and continue icing.
3. Return to refrigerator for 15-20 minutes before adding the caramel sauce
4. Remove from refrigerator and coat the top of the cake with caramel sauce and drizzle down the sides of the cake. Place in refrigerator to allow caramel sauce to set.
5. Remove from refrigerator and pipe icing decorations on top of the cake.
6. Place and store in refrigerator to allow icing to firm and remove from refrigerator only when ready to eat.

Ingredients

• Defrosted, readymade shortcrust pastry- 2 rolls

• Biltong- 100 g, chopped (size as you desire). You can get it online from BullAndCleaver.com

• Onion- 1 large (chopped thin)

• Butter- 30 ml

• Milk, cream or mixture- 375 ml

• Eggs- 3 (large)

• Cheddar cheese- 250 ml (grated)

• Salt and pepper to flavor

Method Of Preparation

• Keep your oven preheated, at a temperature 160oC

• Get muffin tins or mini quiches and roll out the pastry lightly on to it. Cut out any extra portion with a knife or cookie cutter.

• Bake the lined pastry blind for about 10 minutes

• Heat butter in a pan, put the onions and sauté them until soft. Put this onion-butter mixture a spoon each on to the baked pastries.

• Next, top the pastries with cheese and biltong

• Mix the milk and eggs in a vessel and pour them into the pastry cases, a little less than the brim.

• Add a pinch of salt and black pepper from above

• Transfer the pastry cases to the preheated oven for about 12 to 15 minutes, or until they set completely

• Serve hot, with a bit of grated cheese on the top. This marvelous creation could also be served cold.

Prepare this healthy and absolutely delicious biltong snack for your kids, guests and friends etc. and be prepared to see their amazed expressions for the taste it delivers.

Greek Potatoes with Lemons and Oregano

I stumbled upon this recipe while trying to use up a surplus of dried oregano. It's an incredibly flavorful side dish that takes literally 5 minutes to prepare and goes with lots of main dishes. The lemon juice brings out the flavor of the potatoes and spices really nicely. I find it easier to mix the potatoes in a bowl before transferring to a baking sheet. Yellow potatoes can easily be substituted if you can't find Yukon Gold.

 

Ingredients
4 large Yukon Gold potatoes
4-6 garlic cloves, minced
1/4 cup extra virgin olive oil
Juice from 2 fresh lemons
1/2 cup water
1 tablespoon dried oregano
Coarse sea salt to taste
Black pepper to taste

 

Directions
1. Preheat oven to 400 degrees F. Line a large baking pan with non-stick aluminum foil or spray with a non-stick spray.
2. Wash potatoes and cut into large chunks, quarters, or wedges (your choice).
3. Put the prepared potatoes, garlic, olive oil, lemon juice, water, oregano, salt, and pepper into the prepared baking pan; toss well to coat and then spread out in a single layer. The garlic will drop into the water/oil solution and its flavor will permeate the potatoes, and this way, it also will not burn.
4. Bake for 40 minutes until a nice golden-brown crust has formed on the potatoes. Carefully turn the potatoes to prevent them from sticking and to brown them evenly. Season lightly with a bit more salt and pepper and just a light sprinkling of additional oregano.
5. When the potatoes are done, remove from oven, and serve.

Romantic date night dinner ideas?

Hi guys, in a few weeks I'm going to be returning home after a summer internship. It'll be my first time being home in three months, and my first time seeing my partner in two. It's been really hard for both of us, and we've been pretty lonely.

For that reason, when I get home, I want to make them something really special, and set up a nice, romantic date night for our first night back together. Does anyone have any ideas for something I can make that would be really special and delicious, and perfectly romantic for two?

I'd rate myself as a pretty good home cook -- I can cook most things better probably than the average person, but I'm no chef. And money isn't a huge object here since it's such a special occasion.

Zucchini, Corn and Sweet Pea Farro Risotto

Ingredients:

2 1/2 tablespoons extra virgin olive oil, divided

1 zucchini, diced

1 cup fresh corn kernels (from about 2 cobs)

1 shallot, minced, diced

2 garlic cloves, minced

1 cup farro

1/2 cup dry white wine

4 cups chicken stock, warmed

1 cup fresh steamed peas (or frozen peas, thawed)

2 ounces (1/4 cup) mascarpone cheese

4 ounces Parmesan, grated and divided

salt and pepper to taste

garnish:

1 zucchini, thinly sliced lengthwise with a potato peeler, optional micro greens, optional

Directions:

* Place a large skillet over high heat and add 1 tablespoon oil. Add diced zucchini and corn and slightly char/sauté for 2 to 3 minutes. Season with salt and pepper and transfer mixture to a small mixing bowl. Set aside. * Pour remaining oil into the large skillet and place over medium-high heat. * Add shallots and garlic and sauté for 2 to 3 minutes. * Reduce the heat to medium, add farro and toast for 4 to 5 minutes until fragrant, frequently stirring. Lightly season with salt and pepper. * Deglaze pan with the wine and stir. Allow the liquid to almost completely evaporate. * Ladle hot stock over farro mixture until barely covered. Allow mixture to simmer, stirring frequently. Once half of the liquid has evaporated add another ladle of stock and continue stirring. * Once all broth has been used and grains have softened, but are still chewy to the bite, stir in the mascarpone and 2 ounces of grated Parmesan. Season with salt and pepper. * Stir zucchini, corn and peas into the farro risotto and adjust seasonings. Top with remaining parmesan, zucchini ribbons and micro greens. Serve.

Uttapam or ooththappam or Uthappa (Tamil: ஊத்தாபம் ) is a dosa-like dish from South India made by cooking ingredients in a batter. Unlike a dosa, which is crisp and crepe-like, uttapam is a thick pancake, with toppings cooked right into the batter.

Ingredients

Note: We made around eight medium size Uttapam. Please adjust quantities as per your need.

  • 4 Large cup sooji ( semolina )
  • 1 small bowl chopped tomato
  • 1 small bowl edible oil
  • Salt as per your taste
  • 2 Nos. chopped green chilli
  • 1 small bowl chopped onion big
  • 1/2-1 small bowl fresh coriander
  • 1 small bowl curd
  • 1 big cup or
  • 1 small glass water

Cooking

  • Put curd in sooji (Semolina) and mix well.
  • Now add water slowly in steps and keep mixing as shown.
  • Add salt and mix.Keep adding water slowly in steps and also keep mixing as shown.
  • After mixing it and when paste is ready, leave it for 15-20 minutes.
  • Now paste is ready and it has consumed almost whole glass water.
  • Add tomato, onion and green coriander. Mix well.
  • Add oil in pan and spread it over the pan to enusre Uttpam doesn't stick or burn.
  • Once oil is hot, add paste and spread according to the size of Uttpam you want.Also Uttpam is noramlly thicker.
  • Let it cook on low medium flame till it starts becoming solid and its bottom start becoming very light brown as shown.
  • Now flip it gently as shown and make sure you don't break it.
  • After that cook till its bottom becomes light brown in color as shown. Also ensure that it is not burning or getting overcooked.
  • Once it is brown as per your requirement turn off the heat.
  • Transfer it to the serving plate.
  • You can enjoy Uttpam with tomato sauce or home made chutney.

Orange Beef

Wok cooked stir-fry dishes are a great easy way to create a wonderful blend of beef, vegetables and marinade for a great weeknight dinner. This dish can be prepared and cooked in around 25 minutes. The beef is coated in corn flour and cooked in the wok to produce tender beef strips. The capsicum and onion add some crunch and depth of flavour. The Orange marinade contains, zest, juice, sugar, soy sauce, ginger and garlic. The marinade really shines to provide an amazing burst of beautiful orange citrus flavour. The marinade is not overly sweet and perfectly complements the beef. A very addictive dish!

Ingredients
• 4 tbsp Vegetable Oil
• 500 g Beef Strips
• 3 tbsp Corn Flour
• Salt to taste
• Pepper to taste
• 1 Red Capsicum diced
• 1 Brown Onion diced
• Jasmine Rice to serve
• Spring Onions garnish
Orange Marinade
• 2 Oranges juice from 2 oranges
• 1 Orange Zest zest from one orange
• 3 tbsp Caster Sugar
• 5 tbsp Soy Sauce
• 2 cloves Garlic crushed
• 1/2 tbsp Ground Ginger

Instructions:
1. Heat vegetable oil in wok over medium high heat.
2. In a large bowl add corn flour, salt & pepper and stir to combine.
3. Add beef strip and mix to coat with corn flour.
4. Add beef strips to wok and cook until browned and cooked through (about 6-7 minutes). Stir occasionally a scrape bits off the bottom of the wok.
5. Remove beef from wok using a slotted spoon to leave the oil in the wok. Set aside.
6. Reduce heat to medium and add capsicum & onion to wok and cook until just starting to soften. (about 2 minutes)
7. Add orange marinade (instructions below) to wok and stir to mix through.
8. Add beef to wok, stir to mix through and cook for about 2 minutes to heat beef through and allow marinade to thicken.
9. Remove from heat, serve with Jasmine rice and garnish with spring onion.
Orange Marinade
1. In a bowl add orange zest, orange juice, caster sugar, soy sauce, garlic & ground ginger. Stir to fully combine.

Crispy pizza crust help

My pizza crust tastes good but it comes out kind of tough for some reason.

3/4 cup warm water 1/2 tsp granulated sugar 2 tsp yeast 2 cups bread flower 1 tsp salt

I don't let it rise for an hour out of impatience, is that imperative?

I bake 400-500F for 5 min take out crust add ingredients then put back in for 10-15 minutes. (Allows me to cook the crust for longer without burning the ingredients)

The orginal Taco Bell ground beef recipe (prior to YUM Brands)

Hi Reddit, I originally submitted what I thought was a very close recipe, but darn, this one is truly spot on. Enjoy!

Start with 1 or 2 (approx.) pounds RAW FRESH GROUND BEEF 80/20 Put entire amount into a skillet that has a lid Now add ALL of this below to that - 1 packet of LAWRY's Taco Seasoning & 1 Tablespoon of TONE's Taco Seasoning for 1 LB. For 2 LBS. add 2 packets of LAWRY's & 2 Tablespoons of TONE's Add 1 Tablespoon of tomato paste for 1 LB. For 2 LBS. add 2 Tablespoons of tomato paste Add 3/4 cup water for 1 LB. (adding more as necessary) For 2 LBS. add 1 1/4 cup water Add 1 heaping Tablespoon of dried minced onion for 1 LB. For 2 LBS. add 2 heaping Tablespoons of minced dried onion Add 1/4 cup of buttermilk (OR in a 1/4 cup put 3/4 milk to 1/4 white vinegar) to 1 LB. For 2 LBS. use 1/2 cup Add 1/4 teaspoon of MSG for 1 LB. or 1/2 teaspoon of MSG for 2 LBS.

Remember you can use approximate packs of ground beef like 1.21 lbs. 2.35 lbs. etc. etc. NOW start the cooking ! You want to non-stop chop with a spatula (metal preferred) the ground beef so it ends up being TINY little pieces. Start the heat on MEDIUM to get going, then as beef starts to brown, lower heat to SIMMER with lid later. For a while you will be CHOPPING & MIXING constantly. Goal is to blend all ingredients THOROUGHLY without leaving any clumps. Just keep mixing chopping stirring. ADD more water if necessary ! Never let beef dry or burn ! Add more water if needed. Then when meat gets all brown. SIMMER covered on LOW. Then check continuously as it simmers to make sure it stays with enough liquid. Here is the SECRET to knowing when it is ready. You will see the MAGIC orangy/red OIL start floating on surface ! That is when it is done ! Leave the oil DO NOT DRAIN ! Takes about 30 minutes to an hour.

Then ENJOY ! It stays in fridge a LONG TIME ! I ate mine for more than a week. Just heat up the portion again

What do you call this egg dish?

So a classic omelette is when the fillings are folded in the middle. Is it still considered an omelette if the other ingredients are mixed into the egg batter? If not, then what is this called?

PITA (pain in the ass!) pickles. An old time-y, nine day, totally worth it recipe.

This is one of those wife's mother's mother's mother's etc recipe. We made these pickles last year around this time and took them to Saskatchewan for my wife's grandmother's 90th birthday party. We took 4 large mason jars and it wasn't enough. Family who haven't had these pickles in decades knew exactly what they were before the jars were opened.

K, here we go.

  • 6 lbs (2.8 kg) cucumbers cut into 3/4" (19 mm) rings, and cored with a spoon.

  • Brine: 1 lbs (450 g) salt in 9 pints (4.25 L) of water

  • Submerge the cucumber rings with a plate or something and leave for 5 days, then drain.

  • 2 tsp (10 mL) alum in 1 gallon (3.8 L) boiling water. Drop in the rings and leave overnight. Rinse with cold water.

  • Syrup: 3 pints (1.4 L) vinegar, 2 cups (0.5 L) water, 9 cups (2.2 kg..ish) sugar, 2 tsp (10 mL) mustard seed, 3 cinnamon sticks, thumb-size ginger root sliced, 1 oz (30 g) whole allspice

  • Boil the syrup, cover the rings in the syrup and leave overnight. Reboil once daily for two days and pour the hot syrup over the rings (i.e., don't boil the proto-pickles).

  • Put cucumber rings into sterile jars, pour boiling syrup into jars, and put hot, sterile lids on.

These are sweet, with a definite allspice flavour, but it's not overpowering. We made 16 large mason jars of these last year and ran out half-way through the year. We'll probably wind up doing two dozen this year.

(Essentially) Sugar- Free Banana Nut Muffins

Yields 12 standard sized cupcake/muffins

Ingredients

- 1 1/2 cups all purpose flour - 1 1/8 teaspoon baking powder - 1 teaspoon baking soda - 1/2 teaspoon salt - 3 medium -large bananas (mashed) - 12 packets of Splenda - 5 packets Pure Via Stevia - 3 tablespoons non-fat instant (powdered) milk - Sprinkle of cinnamon (or more if you'd like) - 1 egg - 1/3 cup melted butter - Splash of vanilla extract (about a teaspoon or more if desired) 

Optional Ingredients

- Chocolate chips (sugar-free if desired) - Walnuts 

Directions

1. Preheat oven to 350 F, lightly grease (I used butter) muffin pan 2. Combine flour, baking powder, baking soda, salt, instant (powdered) milk 3. In a separate bowl, mix mashed bananas, egg, butter, Spenda, Stevia, cinnamon and vanilla 4. Mix dry ingredients into the wet, 1/2 a cup to 1 cup at a time 5. Add chocolate chips, fold in thoroughly 7. Divide batter evenly into muffin tin 8. Sprinkle walnuts on top 9. Bake for about 20 minutes, bakings times can vary. Check completion by inserting toothpick (or butter knife if you're a heathen like me) 

Notes

I have been struggling to develop a decent "sugar- free" banana bread recipe as all others have ended in disaster. Though we don't have diabetes, the husband and I both have diabetes in the family. I also have a good amount of dental issues so the less sugar the better (some sugar substitues still cause cavities, these two do not). This recipe is an adaptation to this one I found from allrecipes.com

I labeled this "essentially" sugar-free because there will still be natural sugar in it from the bananas, so please be aware of that.

I haven't tried other forms of sweeteners except for Erythritol which did not turn out well. I'm fully aware that everyone has differing opinions about sugar substitute brands and substitutes in general, feel free to experiment and see what works for you.

I haven't tried this recipe without powdered milk, however, it is there to help sustain rise because the sweeteners can inhibit it.

Sorry if there are any formatting issues or baking issues. I'm but a humble experimental cook/baker who only ever cooks for two. It's hard to find sugar-free recipes without 99% also being "gluten free, vegan" etc. It's fine if you prefer that but I do not have a gluten allergy and certainly am not vegan, so there are a lot of extra and unnecessary steps that add time and money. I just wanted something more attainable for those who are diabetic or simply watching their sugar intake.

Homemade Nutella!

Made this today and it was fantastic. Perfect on apples or toast. May try baking with it.

Ingredients

1 lb hazelnuts 3.17 oz good quality dark chocolate 1/2 cup almond milk 1/3 cup coconut oil 2-3 tbsp honey 1 tsp vanilla 1 tsp salt

Instructions

Roast hazelnuts at 300 degrees for 20 mins

Add hazelnuts, chocolate, milk, and oil together in bowl of food processor. Blend until desired consistency adjusting milk and oil quantities as needed.

Add remaining ingredients, pulse to combine. Store in airtight containers in refrigerator and enjoy!!

Some kind person who lives in my town has been sharing the fresh rhubarb in her garden at my workplace. Healthy Pad Thai Inspired Fried Rice!

This is a super quick and easy recipe for delicious fried rice that allows for much creativity. I used whatever veggies i had in my fridge and it turned out great!

Ingredients: 2 cups brown rice (cooked) 1tbsp peanut oil 1tbsp garlic 1 large egg 3 parts lime juice 1 part fish sauce 1 part sriracha 1 or 1.5 parts brown sugar 2 parts soy sauce 1 cup veggies (peppers, green onion, corn, zucchini. carrots, etc) (chopped)

Instructions: 1. Heat oil in a wok for 1 minute and then add garlic 2 Fry until aromatic and then add egg. Scramble egg until cooked through 3. Add veggies and allow to cook for about 2 minutes 4. Add rice and sauce and mix constantly for 3 minutes 5. Garnish with cilantro, lime wedges, or peanuts and serve!

[Request] It's 4 in the morning, do you have any dessert recipes that I can make without leaving my house?

The dessert-related stuff I have in my kitchen are:

  • Butter
  • A lot of yogurt (not sweetened or anything like that)
  • 3 plums
  • Lemons (unfortunately they turned out not very juicy)
  • Eggs
  • About 1 cup of rice
  • All-purpose flour
  • Granulated sugar
  • Olive oil
  • Almonds (salted)
  • Walnuts
  • Powdered vanilla extract
  • Dough riser powder (I don't know what that's called in English)
  • Plenty of cocoa powder
  • About one teaspoon of powdered ginger
  • Powdered cinnamon
  • A weirdly large amount of shredded coconut
  • A metric ton of tea (earl grey)
  • Pre-ground coffee (both extra fine and medium coarse ground sizes)

I'm hoping for something other than a simple dry cake. Also, I don't have an electric mixer or any other fancy gadgets. Thank you!

[Request] Authentic British Banoffee Pie recipe

Hello! I was recently in Ireland and stumbled upon one of the most delicious pies I've ever tried--the banoffee pie (apparently it originated in the U.K., but I've never seen it in any American bakeries or restaurants). I'm determined to recreate what I experienced and googled the recipe. There are quite a few recipes out there, all with slight variations. Many user comments on the recipes mentioned that they found them "missing something," or not quite authentic. Help please - I am looking for a potato and onion dish I once had, likely of Swedish origin?

Hi, Reddit! First time on this sub so apologies in advance if I do anything wrong. I have a recipe question so I hope this is okay!

A few years ago I was staying with a friends' parents (longer story, not relevant here). The guy was a retired opera singer, born in Sweden, who had traveled all over to sing opera. He made lots of recipes that were new to me and I loved - their whole way of eating was wonderful, fancy cheeses and salads instead of dessert, to my American tongue it was a delight.

I wrote down many of the recipes but there's one I did not write down how to make and want to make again. Honestly for all intents and purposes it was most like a large latke - I am Jewish myself - here is what I remember. He grated a bunch of (I think russet) potatoes, and then a bunch of onion, and then added other things I don't remember - eggs? Spices? not sure - and fried it all up in one big pile in a frying pan in lots of oil. Less oil than you'd use for a latke, and this was one GIANT potato pancake, essentially, instead of a lot of little ones. And I CAN remember the name of it, but I've tried googling and I must be spelling or pronouncing it wrong somehow. The word and pronunciation that I remember is "rushke". If I wrote it out for pronunciation it would be like "roosh-keh".

In all likelihood with a little effort I could probably make some amalgamation of the dish - it is, again, basically a giant latke, lol - but it was so good when he made it and I feel like there's a secret I've forgotten and want to remember!

Anyone have any idea what I'm talking about?

Pork Marsala

Pork Marsala is a surprising simple to make dish that produces a result that is truly spectacular & tasty. The pork tenderloin provides a juicy, tasty meat to underpin the dish. The mushroom marsala sauce is what makes this dish so special. The sauce is lovely mix of mushrooms, spring onion, butter, garlic and white wine. These are simmered to an amazing flavour combination. Finally, with cream and parsley mixed through, you have a truly special creamy sauce that turns a simple meal into a special occasion. This dish can be prepared and cooked in 30-40 minutes, so when you are time poor, this is a great meal to make that your family will appreciate and make them think you have spent a lot of time making a special dinner.

Ingredients:
• 600 g Pork Tenderloin
• 2 tbsp Olive Oil
• 3 tbsp Butter
• 2 Spring Onions thinly sliced
• 250 g Mushrooms thinly sliced
• 2 cloves Garlic crushed
• 1 tbsp Plain Flour
• 1/2 cup Marsala Wine I used an alternate white wine
• 1 cup Chicken Stock use stock cube
• 4 tbsp Thickened Cream
• 1/4 cup Fresh parsley diced
• Salt to season
• Pepper to season

Instructions:
1. Slice the pork tenderloin into 5cm (2 inch) thick medallions.
2. Flatten each medallion using your palm.
3. Heat olive oil and 1 tbsp butter in a large frying pan over medium high heat.
4. Once butter is melted add pork medallions and cook until browned, about 2-3 minutes each side. Remove from pan and set aside. Keep warm.
5. Add remaining 2 tbsp butter to the pan and once melted add spring onions and cook for about 1 minute. Stir occasionally.
6. Add garlic and cook a further 30 seconds. Be careful not to burn the garlic.
7. Add mushrooms and stir to coat with butter. Cook for about 3 minutes only stirring occasionally. Continue cooking until mushrooms have browned and liquid has mostly evaporated.
8. Sprinkle the flour over the mushrooms and stir to mix through. Cook a further 2 minutes.
9. Add wine and stir to mix through. Continue cooking until wine has nearly evaporated.
10. Add chicken stock, stir to mix through and cook for a further 4-5 minutes.
11. Reduce heat to low, add cream and parley. Stir to mix through.
12. Add pork medallions back into the pan and cook a further 3-4 minutes. Season with salt and pepper. Only turn the medallions once.
13. Serve pork over pasta or mashed potatoes and spoon mushroom sauce over pork.

Important Details

No. of ingredients- 8

Serving per preparation- 18

Time required- 30 minutes

Ingredients

• Defrosted, readymade shortcrust pastry- 2 rolls

• Biltong- 100 g, chopped (size as you desire). You can get it online from BullAndCleaver.com

• Onion- 1 large (chopped thin)

• Butter- 30 ml

• Milk, cream or mixture- 375 ml

• Eggs- 3 (large)

• Cheddar cheese- 250 ml (grated)

• Salt and pepper to flavor

Method Of Preparation

• Keep your oven preheated, at a temperature 160oC

• Get muffin tins or mini quiches and roll out the pastry lightly on to it. Cut out any extra portion with a knife or cookie cutter.

• Bake the lined pastry blind for about 10 minutes

• Heat butter in a pan, put the onions and sauté them until soft. Put this onion-butter mixture a spoon each on to the baked pastries

• Next, top the pastries with cheese and biltong

• Mix the milk and eggs in a vessel and pour them into the pastry cases, a little less than the brim.

• Add a pinch of salt and black pepper from above

• Transfer the pastry cases to the preheated oven for about 12 to 15 minutes, or until they set completely

• Serve hot, with a bit of grated cheese on the top. This marvelous creation could also be served cold.

Prepare this healthy and absolutely delicious biltong snack for your kids, guests and friends etc. and be prepared to see their amazed expressions for the taste it delivers.

[Request] Looking for Suggestions for Banana based dishes

Hey Reddit! First time posting on this sub :P...

Anyway, my family has just come into possession of 3 full cases of moderately green bananas. (From a Food-sharing group that my Mom participates in)

I'm looking for ideas of dishes (mostly desserts) that can make use of the bananas before they go bad. Most of these will probably be made by my sisters/mother (I'm a guy with near-zero cooking experience), but if something is really simple, I might try my hand at it as well.

Also, if anyone has suggestions for desserts as above that can be tailored to a restricted diet, that would be great. (My Dad loves bananas, but eats Gluten Free, Soy Free, Dairy free. Uses Honey and Almond Milk whenever possible, uses coconut oil, etc. A little peanut butter is OK, and he has special chocolate that he can eat a little bit of).

I'm just cooking for my family, it doesn't have to be SUPER fancy. I just want something prettier/more upscale than what we usually feed our crowd with! We are tired of the same things over and over at every family dinner. I have eaten a lot of seafood recently so I would prefer beef, poultry or pork for this meal. I am well versed in basic kitchen skills, learning a new trick doesn't scare me either. . .so please don't hold back recipes requiring fancy techniques. Any idea is a good idea! Thanks in advance!

big crowd picnic ideas?

hey all i posted this in eatcheapandhealthy as well. wanted to get this subs ideas as well. we are having a team picnic and we are told to bring food to share. there will be 100+ people there. i am not sure if we are expected to have 100 servings to everything. this is my first time and i am getting overwhelmed. i dont have a budget to make 100 sandwiches (how much would a tuna salad sandwich be per serving?) .i thought about mac and cheese but since its outdoors, it might get dry and mushy. i thought about nachos but i cant imagine taking in multiple sheet pans or taking up that much room. and after that, i am out of ideas.

if anyones got any experience with big picnics or bbqs or parties, please help me out!

Sweet and Peach BBQ Chicken Tenders

Homemade Peach BBQ Sauce + Sweet and Peach BBQ Chicken Tenders

For this meal you will need:

Ingredients

1/2 medium – onion 1 medium – bell pepper, red 3 medium – peach 3 clove – garlic 1 tablespoon – olive oil 1/4 cup – vinegar, cider 2 tablespoon – Worcestershire sauce 1/3 cup – honey 1 teaspoon – mustard, ground 1 teaspoon – chili powder 2 pound – chicken breast 1 – cooking spray 

Directions

Dice half an onion, 1 red bell pepper, and 2 cups worth of peaches. Mince garlic. Heat a large frying pan over medium-high heat. Add 1 tablespoon olive oil, then diced onion and red bell pepper. Saute, stirring occasionally, for 10 minutes. Add 2 cups diced peaches. Saute for 5-10 more minutes, until everything is very soft. Add 3 cloves minced garlic and saute for another minute. Remove from the heat and spoon the mixture into a blender. Add the remaining ingredients and blend well. Now slice 2 pounds of chicken breasts into thick strips or “tenders.” Poke each piece with a fork several times. Combine half of the sauce and the chicken in a large container. Cover and allow to marinate for 30 minutes to 8 hours in the fridge. To cook, heat a frying pan over medium-high heat and spray with cooking spray. Cook the chicken for 4 minutes per side, adding extra sauce near the end of cooking. OR to grill, use medium-high heat and brush the rack with oil. Cook for 4-5 minutes per side, brushing with extra sauce at the end. 

Serve with remaining sauce – and you’ll still likely have a good amount left over.

Best Chili you'll ever eat

Ingredients: -2 large yellow onions -2 lbs ground beef -2 cans of diced tomatoes (28 oz) -1 package of thick cut bacon (chopped) -5 cloves of minced garlic -2 red peppers (diced) -chipotle peppers in adobo (diced) -3 tbsp chili powder -1 tbsp smoked paprika -1 tbsp cumin -2 tsp cayenne pepper -shredded cheese to taste

Instructions: -in a large pot fry off bacon..add onions and red peppers -in a separate pot or skillet brown ground beef and some garlic (strain after browning) -Add meat into the large pot with onions, bacon and peppers -Add chili powder, smoked paprika, cumin, cayenne pepper and more garlic -Add diced tomatoes - Let simmer for about an hour and stir occasionally taste and add more seasoning if necessary - serve in a bowl and add shredded cheese on top

This is my fathers recipe (he's a chef) and it's the best chili I've ever had. Vegetarians can skip the bacon and ground beef and it's still reallllly good 👍🏻

Slow Simmered Vegetable Soup

As we get deeper into the summer months I have been craving all the vegetables. Greens, beans and everything in between has been on our menu. Sometimes I like to just eat them raw with ranch or hummus, but other times, I like to make a meal out of my veggies like in this delicious and nutritious vegetable soup.

I have also been on a huge soup kick so I decided to take all the vegetables I love and make them into a soup. And what a fantastic soup it is! Not only does my Slow-Simmered Summer Vegetable Soup provide a ton of nutrition, but it also makes plenty for leftovers. I ate this for a week straight for lunch.

It does take a little longer to cook than most of my recipes because you really need to let it simmer long enough to meld all the delicious vegetable flavors together. I promise it’s worth the effort.

This recipe works for diets like low-carb, and if you sub the chicken broth with vegetable broth it will be a vegetarian’s dream come true. This is also the perfect recipe for those of you that like to meal-prep on Sundays since it makes so many meals. Cook once, eat twice…or two or three times Slow-Simmered Vegetable Soup

Servings: 6-10 Ingredients:

48 oz. of chicken broth 2 Tbs. of olive oil 1 large onion 3 zucchini 2 yellow squash 3 large carrots, sliced 1 medium head of broccoli, chopped 2 cups of green beans, chopped 1.5 cans of Cannelloni Beans, drained 1 can of of chopped tomatoes 1 bag of frozen peas 3 bay leaves 2 tsp. of garlic salt 2 tsp. of onion powder 1.5 tsp. of oregano .5 tsp. of celery salt a handful of basil Optional: Parmesan or mozzarella cheese 

Steps:

  1. Add olive oil to a large pot or Dutch Oven and heat through.

  2. Add onions and cook until they are translucent. Then add the carrots and cook about about two minutes.

  3. Add the chicken broth and the rest of your vegetables.

  4. Bring to a boil then reduce the heat to medium and add your spices.

  5. Cook on medium for 30 minutes to one hour, stirring occasionally.

  6. Reduce the heat to low and continue to cook for 2 – 4 hours. Stir occasionally to make sure nothing is sitting on the bottom and burning. I ended up cooking mine on low for 6 just because we didn’t eat until 6 p.m. and I started making this in the morning. You want the vegetables to all soften and add their flavors to the broth.

Bacon Wrapped Stuffed Chicken

Are you tired of a simple Chicken Kiev form of stuffing a chicken breast? Though to be fair, watching the garlic butter melt out of the chicken as you cut through it makes you realise why it is so good!! This dish provides a variation of ingredients to a stuffed chicken meal. Additionally bacon is used to wrap the chicken rather than breadcrumbs. The result is fantastic. The chicken is stuffed with a simple mixture of cheese, avocado and sour cream. Wrapped in bacon, it is then oven baked to produce a beautiful moist, juicy, tender chicken. The chicken is then finished off under the grill to crisp up the bacon and transform a simple chicken fillet into a special meal packed with flavour.

Ingredients:
• 4 large Chicken Fillets breast fillets
• 1/2 cup Shredded Cheese I use a 3 cheese combo mix
• 1/4 cup Sour Cream
• 1/4 tsp Garlic powder
• 1/2 tsp Pepper
• 1 Acocado diced
• 8 slices Bacon streaky bacon

Instructions:
1. Preheat a fan forced oven to 200°C
2. Line a baking tray with baking paper.
3. Cut a slit, lengthwise in each chicken breast to create a deep pocket. Be careful not to cut all the way through. Create as big a pocket as you can.
4. In a bowl, add avocado, cheese, sour cream, garlic powder and pepper. Stir to fully combine. You will need to mash the avocado as part of this process.
5. Spoon the avocado mixture into the pocket of each chicken breast. Use toothpick to help seal the pockets shut. Use the toothpicks after you have wrapped each chicken fillet with bacon
6. Wrap each chicken breast with 2 slices of bacon.
7. Place each chicken breast on the baking tray and place in oven to cook for about 30 minutes.
8. Remove from oven and place under a grill for about 5 minutes or until bacon is browned and crispy. Cooking time will vary depending on your grill. Keep watch during this process to avoid overcooking the bacon.
9. Remove from grill, garnish with additional avocado and serve.

Mediterranean Dish - Tomato and Egg (In a cast iron skillet)

Total Time: 30 minutes

Serving size: 3-4 people

Ingredients

6 eggs

7 roma ripe tomatoes (any ripe tomatoes would do but keep in mind roma are smaller than most tomatoes)

3 table spoons olive oil

1 medium yellow onion

1 medium sized bell pepper

1 tablespoon tomato paste

1 table spoon red pepper paste (My husband and I love spice-if you prefer sweet-substitute with 1 teaspoon sugar instead)

1 teaspoon cumin

Salt and pepper to taste

1 teaspoon red pepper flakes

small handful of chopped parsley or cilantro for garnish

1-2 tablespoons heavy cream

1 table spoon garlic powder

1 clove garlic

Instructions

Using a medium to large pan or skillet; pour the olive oil into the pan and add the finely chopped up bell pepper, onion, and garlic on medium heat. Let that simmer for 5-7 minutes till onions are translucent in color. In the meantime, dice your ripe tomatoes and add to the pan. Let all those flavors simmer together for 2-3 minutes. Then you want to add your tomato paste, red pepper paste, heavy cream, and an array of spices to the pan; mix gently with everything else. Let this all cook together for about 5-7 minutes.

Once you see the tomatoes lose their shape and become one with the dish; as pictured then it's time to add the eggs.

You grab a spoon and make tiny pockets in the sauce and crack the egg in its place. I made 5 pockets around the edges of my skillet and one in the center. Salt and pepper the eggs. Put a lid on the mixture and cook egg as you please. My husband and I like our yolk to be cooked through and not runny but many like the opposite.

Once the egg is cooked as you would like, turn the heat off and let the dish cool for 2-5 minutes. Then garnish with fresh parsley or cilantro; we prefer cilantro.

You can serve this with a side of pita bread or eat as is! I hope you enjoy this jam packed flavorful brunch dish!
