Introduction:
Uttapam or ooththappam or Uthappa (Tamil: ஊத்தாபம் ) is a dosa-like dish from South India made by cooking ingredients in a batter. Unlike a dosa, which is crisp and crepe-like, uttapam is a thick pancake, with toppings cooked right into the batter.

Ingredients
Note: We made around eight medium size Uttapam. Please adjust quantities as per your need.
- 4 Large cup sooji ( semolina )
- 1 small bowl chopped tomato
- 1 small bowl edible oil
- Salt as per your taste
- 2 Nos. chopped green chilli
- 1 small bowl chopped onion big
- 1/2-1 small bowl fresh coriander
- 1 small bowl curd
- 1 big cup or
- 1 small glass water
Cooking
- Put curd in sooji (Semolina) and mix well.
- Now add water slowly in steps and keep mixing as shown.
- Add salt and mix.Keep adding water slowly in steps and also keep mixing as shown.
- After mixing it and when paste is ready, leave it for 15-20 minutes.
- Now paste is ready and it has consumed almost whole glass water.
- Add tomato, onion and green coriander. Mix well.
- Add oil in pan and spread it over the pan to enusre Uttpam doesn't stick or burn.
- Once oil is hot, add paste and spread according to the size of Uttpam you want.Also Uttpam is noramlly thicker.
- Let it cook on low medium flame till it starts becoming solid and its bottom start becoming very light brown as shown.
- Now flip it gently as shown and make sure you don't break it.
- After that cook till its bottom becomes light brown in color as shown. Also ensure that it is not burning or getting overcooked.
- Once it is brown as per your requirement turn off the heat.
- Transfer it to the serving plate.
- You can enjoy Uttpam with tomato sauce or home made chutney.
