INGREDIENTS

8 flour tortillas taco size 8-9 inch

1 1/2 lbs chicken breasts skinless, boneless

3 bell peppers red, yellow, green

1 medium onion

1 tsp cumin powder
-
1 tsp garlic powder or minced garlic

2 tsp paprika
-
salt and pepper to taste

1 tbsp vegetable oil

Garnishes for serving (optional)

6 lime wedges

1 tbsp fresh cilantro chopped sour cream
INSTRUCTIONS
1- Preheat oven to 400F degrees. Set aside a large baking sheet. 2- Cut chicken breasts into 1/2" x 2" strips using a sharp knife, and set aside. Then cut onions and peppers into similar sized pieces. 3 - Place peppers, onions and chicken onto the baking sheet. Sprinkle on cumin, garlic, paprika, salt and pepper. Drizzle with oil and top all ingredients to coat evenly. 4 - Bake for 15 minutes. Remove from oven, and push the ingredients aside to make about 6-inches of space for the tortillas. Return to bake for 5 more minutes. 5- Remove from oven and squeeze optional fresh lime on top. Add chicken mixture to hot tortillas garnish with cilantro and sour cream. Serve and enjoy!
