Gold Bars - Old School Snack

When I was growing up, these things were sold in every school's snack bar for $.25. Recently I ran across them again in one of the local boutique cookie shops, and decided to see if I could recreate the recipe at home. Here's what I discovered:

Ingredients:

  • 1 16oz. jar (2 cups) peanut butter - Nutritionally it's better to use Natural peanut butter without added sugars, but for the sake of authenticity, you'll want to use the cheapest you can find.
  • 2 cups powdered sugar, sifted
  • 2 cups Rice Krispies cereal
  • 4 tbsp melted butter
  • 2 tbsp simple syrup or light corn syrup (simple syrup can be made by bringing equal parts water and cane sugar to a boil until the sugar dissolves completely)
  • 1 12oz. pkg semisweet chocolate chips
  • pinch of sea salt (change to 1 tsp sea salt if using Natural peanut butter)

Mix the butter and syrup in a large bowl, then stir in the powdered sugar and peanut butter. When these are thoroughly blended, fold in the Rice Krispies. Spread this mixture evenly into an 11"x7" or 9"x9" baking pan lined with parchment paper or plastic wrap. Melt the chocolate chips in a double boiler or in the microwave, and spread the chocolate evenly over the top of the peanut butter mixture. Refrigerate until the chocolate loses its sheen, then cut into squares. Chill until set completely, about 3-4 hours.
