Hi! This is my version of Elote (Mexican Street Corn). It's a great way to switch up traditional, ho-hum corn on the cob, which we have plenty of this time of year! Elote (Mexican Street Corn)Prep time: 15:00 Cook time: 00:20 Servings: 6 Main Ingredients6 ears of corn, shucked and cleaned of silk 1 C. mayonnaise 2 limes 1 bunch of cilantro, chopped 2 - 3 cloves of garlic, minced 1 c. queso fresco, grated (you can also use cotija cheese) 1/2 t. salt & 1/2 t. pepper Chili Powder, to taste Recipe Steps
Additional Notes1--You can also add the mayonnaise mixture to a squeeze bottle and squeeze over the corn instead of spreading. 2--Try using a flavored chili powder instead of plain chili powder.
