Toasted Reggiano Custard

I had a legitimately life changing meal this week at Alden & Harlow in Cambridge. The one thing I can’t stop talking about is their Roasted Carrots served with a Toasted Reggiano Custard with Burnt Onion Jam. I want to try and recreate it, but, honestly, I have no idea where to start.
