Ingredients
1.5 lbs/700g Beefchuck, cut into 2in cubes
2 Carrots, peeled & sliced
1 Celery Stick, sliced
1 Medium Onion, chopped
2 Potatoes, diced
1 Jalapeno Pepper, minced
10oz/30cl Amber Beer
Brown Sugar
Dijon Mustard
Herbs De Provence
Thyme
Salt & Pepper
Instructions
- Marinate beefchuck in mustard and brown sugar for 30 minutes.
- In large pot, cook beef until partly cooked on all sides, set aside
- Add onion and let sweat for a bit (2-3 min) then add potato, celery and carrots
- Replace meat and add beer
- Add the jalapeno
- Add the herbs, thyme, salt and pepper to taste (about 1tsp each except pepper (1/2tsp))
- Let stew on medium heat for 40-60 minutes
- Serve with a Sarsaparilla (optional)
