Ingredients:
- 1 small yellow onion
- 3 jalapenos
- 3 habaneros (optional)
- 4 cloves of garlic
- 1 can of refried beans
- 1 can of chipotle peppers
- Mexican cheese
- Cumin
- Smoked paprika
- Cayenne pepper
- Oregano
- Salt
- Chop all veggies.
- Puree chipotle peppers.
- Sautee the vegetables in vegetable oil over medium heat with a pinch of salt. Add the garlic last so that it doesn't burn. Add a half tbsp of smoked paprika and cayenne, 1 tbsp cumin, 1 tbsp oregano. Sautee for a couple more minutes.
- Add the pureed chipotle peppers. Wash the can out with a bit of water and add to vegetables.
- Add 1 tbsp oregano.
- Add refried beans, mash to mix. Cook for a few minutes over medium heat.
- Add a half cup of mexican cheese. Stir in over medium heat until melted and serve,
