Make ahead spanish dishes for large party??

Hello!

I'm getting married!!! I'm also cooking for the party of about 25 people. I'm trying to figure out the menu and would like some suggestions on recipes that I can make ahead and just pop in the oven to heat/finish them the day of the wedding. We are doing this in my home so I'm not worried about transport or anything. So far I've got this...

1. Brisket tacos - can just leave in the over all day cooking
2. Bean/Corn Salad - can make day before
3. Chili - can make day before
4. Green Salad - can have MIL make day of

What I'm looking for is another main and another side. I had a pasta dish but it wasn't spanish food. I also had a broccoli/cauli casserole. Again not spanish. So I would love to keep it spanish/tex/mex. Any help would be great. Thanks in advance.
