I see green chilis listed in a lot of recipes posted here but I’m not sure what that means. I’m from New Mexico and here that means hatch green chili, which I think comes from a type of chili called big Jim’s? When I’m at the store those are what are labeled green chili, even in the can or frozen. But considering hatch is harder to come by not in the New Mexico area, I’m assuming it’s not what the recipes are aiming for. What green chili’s should I be buying?
