It's come to my attention that my girlfriend is not eating anywhere near enough protein each day. Over the last year she has been slowly going off meat, and at the moment only really only will eat fish and beef (and crispy Peking duck), but rarely and in small amounts. She is also quite fussy and doesn't like:
- Eggs
- Protein shakes
- Tofu
- Quorn
- Cow's milk
- Halloumi (she likes it but doesn't like the fat/salt content so won't have it regularly)
which obviously makes things harder. She otherwise eats really well (loads of fruit and veg). She will happily eat beans, chickpeas, edamame, quinoa, and lentils, but the problem is finding nice recipes with these (lots of the ones I've looked at online aren't great or take a long time to prepare/make).
I've suggested protein bars too but she's concerned they have too many calories (I know).
If anyone can suggest some tasty recipes or snacks that can boost her daily protein uptake that would be awesome! The simpler the better as she works long hours and doesn't have much time to make extravagant meals. Thanks in advance!
