[Request] Light bittersweet recipe

Hey guys. First time posting here. My friend is depressed and is recovering from a suicide attempt. She agreed with me cooking for her and her parents. I love her dearly, and I want her to have a great night. She and her parents enjoy bittersweet food. What recipe can I make them that is not too hard to make??? Delicious Casserole

-2 c cooked organic grits -4 c coconut oil -1 c flour -5 c shredded mozzarella cheese -2 c heavy whipping cream -1 lb collard greens -Cooked waffles -2 cans black eyed peas -1 red bell pepper -2 green bell peppers -1 lb green beans -5 c mashed sweet potatoes -2 lb fried chicken -4 c peaches -1 packaged of cooked macaroni and cheese -5 c white rice -Paprika -Red pepper -Oregano -Thyme -Rosemary

Add ingredients to baking dish. Preheat over to 760 F and cook for an hour.

When done, top with

-Onion rings -Ritz crackers -Sour cream

Pancakes

Hey everyone,

I've been making pancakes for years (from scratch and from boxes) but recently I've been starting to get sick of them. I had pancakes at a friends house and they were almost like cake, almost exactly like the pancakes at Sunset Grill (which I love!!!) The friend made them from scratch and I assume Sunset Grill does too.

Recipe request: Vietnam Street Food - Mini Egg Batter Cakes

Hello everyone!

My partner recently lost his grandfather and with him also lost a beloved childhood recipe his grandfather would make for him. I would love to surprise him with this dish but I'm not sure what is going on here. Could someone help me out?

Florida or Cuban-American appetizer, perhaps something with shrimp and or citrus? Thanks for your help.

Tomorrow we have our themed monthly family dinner: "Florida" this month. Main dish will be Cuban sandwiches with sliced pork & ham. Sides are a citrus slaw & a fruit plate. Dessert is a frozen key lime pie (plus a chocolate cake for a young birthday girl). I forgot I'd signed up to do an appetizer, and was reminded today! SOS.

I'm a good cook, but not very good at deep frying. Dish must be prepped/cooked at my home, and travel only a 10 min drive.

Criteria: - Goes well/ok with wine and/or beer

  • Light in Flavors (ok if calorie-rich)

  • Not a cheese plate (we do that too often)

  • Not a salsa & chips

  • Not guac (we do that all the time)

  • Not pork (main is pork-heavy)

  • Room temp or oven warmed ok

  • Shrimp might be nice

  • Not bread-heavy? (main is a sandwich)

  • Bit time intensive prep/bake ok

  • Expenisive/"exotic" ingredients ok

  • Adventurous/Fusion ok

Prep shot

Nothing ground breaking here but a goto for when you don't want to go out but still want to treat yourself. Do with Lobster tails if you ballin. Simple preparation and if you have a SO you can make them do the hard part which is the risotto while you focus on not overcooking or under cooking the meat.

Ingredients:

-Beef filet ( 1.5 inch thick)

-Shrimps (peeled )

-Risotto (1 cup)

-½ Onion (diced)

-2 tbsp Butter

-Wine (optional, just need a splash or glug)

-Chicken or vegetable broth or stock ( 2 cups)

-Cherry tomatoes (handful)

-Olive oil

-Salt & Pepper

-Mt massive steak seasoning( Honey powder, smoked Spanish paprika, garlic, guajillo chiles, onion, salt, pepper, mustard powder, thyme)

-Skewers

Prep steps:

  1. Set steak out 1-2 hours before so it gets up to room temp,
  2. Clean grill grates, or cast iron pan
  3. Dice onion
  4. Skewer shrimp, lightly oil, sprinkle with seasoning
  5. Skewer toms, brush with oil
  6. Preheat grill, hot as it can go

Drink wine, breath.

Cooking Steps:

  1. Place onions/ butter & some EVOO in a pot, turn on high, stir a bit. Once the onions are soft and have some color, pour risotto in. After a minute or 2, quick splash or glug of wine, let the alcohol cook off, then add 1 cup of broth, stir. Once the first cup is mostly absorbed, add half a cup at a time of the remaining broth while stirring, do this until all the broth has been absorbed 20-30 minutes. Once it reaches desired consistency (see photo) take off heat and keep warm. salt and pepper to taste.
  2. Drizzle a little olive oil on the steak and drop on the grates, 10-15 minutes depending on thickness and if it got up to room temp. Try not to mess with it, you can flip four times or just twice depending on if you are grilling or using a pan. If grilling rotates the steak while you turn to get the cross-hatching.
  3. Once steaks are resting, grill the shrimp skewers till opaque, 3-4 minutes. These cook real quick, don't look away. Let the cherry tomatoes just barely blister.
  4. Put on the plate like you know what you are doing, salt bae that meat and parm the risotto, enjoy.

Pro move, keep your oven on 200-250 and put your finished product in there, take a shower and calm down from all the meat grilling. Then you are clean like its a date night and its kind of like someone else cooked it since all you need to do is plate and eat!

My mother used to make a chocolate mousse using milk chocolate, butter, and eggs. I can't remember if she used sugar or not, and I can't ask her as she's passed on. I'm struggling to find anything resembling this online, everywhere I look it's either no butter or cream or no eggs.

Trying to figure out a recipe

Hey all, so here's the deal. My grandpa used to make this weird egg cake thing for us when we all felt bad and I'm really really trying to figure out what it was and how to make it. I never got the recipe or learned how to make it before he passed away, so I come to you all for help.

I remember that he used around 6 eggs, some flour, and some salt, but I have no idea aside from that. It had the texture of a dense cake. I know this is not much to go on but hopefully someone can help out.

Simple Pumpkin Puree

It is that time of year again, pumpkins everywhere. Personally, I love to use things when they are in season, and this puree serves as a great base for any number of recipes. I have a few low carb recipes on [ketoto.me](ketoto.me) that use this puree, I would love if you check them out.

Ingredients:

1 Pumpkin (I used a medium/small pumpkin)

Directions:

  • Preheat oven to 325
  • Cut pumpkin in half and remove the seeds and fibrous strings, set aside (makes excellent roasted pumpkin seeds)
  • Line a baking sheet with foil, and cover the pumpkin halves with foil (cut side up)
  • Roast for 1 hour - or until tender, test with a fork for a soft pumpkin flesh
  • Remove from oven and let cool, scoop out the pumpkin meat (I used an ice cream scoop) and blend until pureed

Macros (Makes about 5, 1 cup servings but varies on pumpkin size):

  • Protein: 2
  • Fat: 0
  • Net Carbs: 10
  • Total Carbs: 20

Question about Ramen with a food allergy

So my girlfriend is a massive fan of traditional ramen. I would like to surprise her by making it for her birthday. I know that umami is a big component of the dish which traditionally comes from mushrooms. The only issue is that I am deathly allergic to mushrooms. Is there something that I can substitute in for the mushrooms? Or is there a recipe that just doesn't use mushrooms?

Lazy man's Risotto (Italians look away plz!)

Risotto is kinda hard to make. You have to do a lot of work and it takes a long time but it's so delicious and cheap! So what does a lazy person do?

  • Some rice (Jasmine rice is best but any kind will work probably)
  • Some kind of meat and/or vegetables (Minced meat, pork, chicken, onions, mushrooms, whatever)
  • One cube of bouillon/stock (any kind works but I prefer vegetable version)
  • Water
  • Optional: Extra seasoning (whatever you want, pepper/oregano/etc works nicely)

Boil the rice. About half way through you put your meat/vegetables in a cooking pan. Once the meat/vegetables are done, add about 250cl water and add your bouillon cube. Once the rice is done you add that to the cooking pan. Now you let it all boil quite heavyin the pan, until almost all the water has been reduced. Stir/turn once in a while.

When it looks/taste kinda like a risotto, it's done.

Bonus: This dish is absurdly cheap! Rice and bouillon cubes are almost free. The meat/vegetables can be very inexpensive as well.

Beer pizza dough for restaurant

Hey guys, so I recently started managing a kitchen at a local bar/restaurant near me and it has a nice pizza oven and mixer. Since I have a decent background with pizza, I decided to make that the focus. I thought beer dough might be cool to use for specialty pies but I can’t tell if the recipes I’m finding would keep well for a day or 2 or otherwise be viable to make and keep on a regular basis. Any recipes or tips would be really helpful and much appreciated. I usually use about 10-20 lbs of flour every 1-3 days for dough if that helps paint a picture of the type of recipe I’ll need.

Chicken on the rocks (shawarma bowl) recipe suggestions?

I just cooked a whole chicken and I thought it'd be really nice to make my own chicken on the rocks with the leftovers (if you are outside the Greater Toronto Area and that means nothing to you, I believe they're also called chicken shawarma bowls).

I've moved away from home down there and miss the food from a chain called Osmow's which is famous for its chicken on the rocks, a shawarma dish consisting of a bed of basmati rice topped with chicken and a layer of garlic sauce that you mix together into a creation of deliciousness.

Does anyone have suggestions as to spicing the chicken or how to make the garlic sauce (or if there's any good brands I might be able to purchase)? I think it's related to tzatziki but not quite the same. Much appreciated!

ISO of the recipe to the grilled Mexican chicken like you’d find from El Pollo Loco or alike.

I'm hoping that it will consist of vital wheat gluten, pea protein, some cornmeal, some canned pumpkin, a no-calorie sweetener like erythritol, baking soda/baking powder, and that's about it.

Can anyone suggest some ingredient proportions to make this come out ok? I'm looking for a very moderate amount of cornmeal, and more high protein wheat gluten/pea protein.

Sorry if this is the wrong place to post this but, I ordered a new nifty book off of Amazon to put all of my loose recipes in, but I'm having a really hard time finding a word document recipe template that has 4 recipes on one page. I'd really like to get all the recipes re-typed due to age of the old newspapers, etc, but the one I found does not print front to back correctly. I can find my way around a word document, but I am not good at creating margins and what not. HELP please. :)

Looking for a good Jalfrezi paste recipe.

I used to use Patak's Jalfrezi paste but I wanted to try out making Jalfrezi entirely from scratch. The canned paste has the flavour dead on, IMO, so I wanted to replicate it. There are a few recipes I found online, but none of them great the flavour profile just right. I'm willing to experiment, so hit me with your best Jalfrezi or Curry paste recipes!

What pairs well with grilled polenta?

I am cooking for some friends tomorrow and definitely want to make grilled polenta for them. However I don't know what meat/vegetables to pair to it. I only add pecorino and rosemary into my polenta as flavouring. Does anyone have the golden tip?

Mango Sticky Rice (Khao Neow Ma Muang)

Mango Sticky Rice

Ingredients

  • 1 cup Sweet Rice
  • 1 Mango peeled and cut
  • 1 cup Coconut Cream/Milk If using canned coconut milk, use the thick creamy part at the top of the can
  • 1 tbsp sugar (Can be to taste)
  • 1/2 tsp salt (Also to taste)
  • toppings chia seeds, hemp hearts, rice crispies, etc optional

Instructions

  1. Soak rice in water for at least 3 hours. When done drain rice.
  2. Steam rice until soft, usually about 20 min. This will vary depending on your steamer.
  3. While rice is steaming, in a small sauce pan heat the coconut cream on medium to low heat. Once the cream starts to break down and become more liquidy, set the heat to low.
  4. Add salt. Slowly add a little sugar at a time. Stirring until dissolved. Taste. Add more sugar if it's not sweet enough for you. Keep cream sauce warm while rice is still cooking - leave on low and stir occasionally.
  5. Once rice is done, transfer to a bowl and pour the coconut cream sauce on the rice and mix thoroughly. Leave some sauce leftover to drizzle over the mango and rice for plating.
  6. Scoop as much rice as desired onto a plate or bowl. Add sliced mangoes. Then drizzle remaining coconut cream sauce over mangos and rice.
  7. Top it with whatever you like to add some crunch or extra flavoring. I topped mine with chia seeds and hemp seeds. In Thailand, they used something similar to rice crispies in some places.

Getting rid of a bunch of dry vermouth?

So about every 6-12 months I make the mistake of buying a bottle of dry vermouth to make Martinis. I make one and say, "That's . . . not bad?". So now I have a bottle of vermouth that if I'm lucky I'll use half of over the next month. What recipes will help me get rid of this bottle?

I have a bunch of chicken thighs. What's your favorite recipe, besides simple herb baking/bbq?

I've gotten pretty good at the standard baked chicken thing with the herbs and crispy skin and all that, and I'd like something a little more complicated than BBQ sauce and grilling them, but I bought a buttload of chicken thighs anyway and now I don't know what to do with them.

Convert me to mac'n'cheese

Ok, I'm am Aussie, and macaroni and cheese just isn't really a thing down here. Certainly not like the USA where it seems to be almost up there with your bacon religion.

Anyway, I've tried it twice, both times it was pretty underhwelming. One was a microwave one, expected that to be crap, it lived up to that. The other was from Red Rooster, it was pretty crap too.

Anyway, after we recent dental work I'm on soft foods for a couple of weeks and figured I'd throw in one last try of the macaroni. But so it doesn't disappoint me again, are there any recommended recipes here?

I figure someone must have "nannas amazingly good Mac'n'cheese recipe that we've loved since kids" kind of Thing.

Suggestions for wheat-free "killing time" recipes?

Hi!

We just recently moved to a new city and I'm currently Funemployed. I don't want to fall into a trap of sitting on the couch eating bonbons so I'm looking for constructive things to fill my time with (as a break from learning how to paint, working my way up to a proper chin-up, and volunteering).

I love puttering in the kitchen and making giant batches of tedious yet delicious things to fill our freezer with.

However, Hubs has recently been diagnosed with a wheat allergy, so my gotos when I want to putz around, like homemade pierogis, or spanakopita, or gnocchi, or ravioli, are now not on the table.

I'm looking for suggestions and recipes for savory 1-2 bite things that involve multiple steps, without wheat. If there's any wheat-free versions of spanakopita/pierogis etc that you can vouch for, I'd love that. If it's a complicated and frustrating recipe, even better.

Best way to cook basmati rice?

Hi! I need help to cook basmati rice to be fluffy and tender like it is cooked in India. I've tried the covered method + the cooked in water then rinsed method (I thought I got a very good result with the latter but my husband said that what he ate in India was even better:(), the grains were soaked for 30 min before cooking. Does anyone have any good ideas for breakfast (that aren't eggs)?

For some reason, I can't stand the taste or feel of eggs - they're mushy and bland and just not good. But with how early I wake up, I do need to have some kind of breakfast that isn't just a poptart, and I've heard that sausages and pancakes and whatever else aren't all the best for you.

So do you guys know of any good breakfast recipes, or a way to make eggs more tolerable?
