Quick blueberry or strawberry snack ideas?

Love blueberries and strawberries, but hate eating them alone. I’m looking for a quick 3 or 4 ingredients I can throw together to make a good blueberry or strawberry snack. Any ideas? The best dip for Ruffles.

This is my crack. The process is ugly but the result is godly.

Ingredients

  • 2 bricks of Philadelphia Cream Cheese, warmed.
  • 4 Wyler's Beef Bouillon cubes
  • Yellow Onion

Process

  • Using a handmixer and a large bowl, beat the cream cheese until soft.

  • Grate about 1-2 tblsp. of yellow onion into the bowl (Yes, grate. Think applesauce consistency).

  • Place the beef cubes in a mug with 2 tblsp water, cover with paper towel, and microwave for 20 second intervals, stirring/breaking down in between, until fully liquid. Pour into bowl.

  • Beat the entire mixture again until uniform.

  • Transfer to Tupperware and store in fridge overnight. Serve with Ruffles or Pretzels.

You won't regret it!

Indian meat shop BBQ recipes - Please help!!

Hey everyone. Just wondering if someone can help me with this. I live in Vancouver BC and we have a lot of indian pre-marinaded meat shops here. I was looking for the recipes and was wondering if any of you have successfuly recreated one of them. I can make the basic tandoori chicken bbq recipe but they have all sorts of other marinades, such as:

Black trumpet, lobster and chanterelle mushrooms recipes?

I recently bought black trumpet, lobster and chanterelle mushrooms. Does anyone have recipe ideas/suggestions?

I've never eaten any of these mushrooms before, so I'm not sure if they could all go together or if I should make separate dishes. Since I've never had them I kind of what them to stand out, and to be able to taste the difference between the three varieties. I'm leaning towards using them all together and pairing them with seared scallops or monk fish. Also keeping the mushroom prep really simple and just sauteing just butter, lemon, salt, pepper. I have fresh bay leaves, tarragon and thyme that I could all or none of as well. Then maybe having a thick white wine/creme leek sauce.

Suggestions on the herb pairing/combo?

Looking to try out different types of seasoned rice

Growing up we always ate rice. Either jasmine rice or Spanish rice if we were getting fancy. But now in my house we were rarely eating rice because it has always been just a filler as I never learnd to make Spanish rice. However I just tried to spice things up with some lentils, sofrito, sazon, onion, garlic, salt and pepper and it was amazing. Close to what my stepmom used to make.....close.

I want to try out different rice recipes cause the added depth of the meal really made a huge difference. So what are your favorite seasoned rice recipes?

Hello everyone! I love international foods. I’m from Canada and can pull off most English dishes pretty well. I want to expand my cooking at home into other cultures though - so that I don’t have to go out to restaurants to get it! Does anyone have an recipe blog or cookbook recommendations for other cultures? Looking for traditional and authentic recipes. Looking for a Thai recipe suggestions

I have recently been requested by family members to cook a Thai dish. The only thing is my family tends to be picky about their tastes. I am currently looking for a recipe which will satisfy both meat/fish and vegetable lovers alike. Need some recipe advice for chicken marinade I’m using for tacos

I’m experimenting with a sauce that I put cut up raw chicken in and then cook the chicken for tacos. I blend up a can of adobo sauce with chipote chili’s in it and throw in some cumin brown sugar salt pepper and lime juice and then cook the chicken, it’s pretty good but I’m wondering if anyone has some ideas to elevate it.

Ive made pesto with pine nuts but I prefer it with walnuts. I like the pesto flavor better with walnuts. Give it a try.

A comfort food that my grandma used to make consisted of couple handfuls of basil, olive oil, cream cheese, 1/2 to 3/4 of a whole head of garlic and warm water. Blend all together in the blender. Pour over spiral pasta with steamed green beans. Top with grated Parmesan cheese. The fresh garlic gives it a real zing!

[REQUEST] Recipes for a carnivore/ very picky eater.

I’m a 19 y/o very picky eater and I very much hate it. I live in a city in the U.S near Cleveland that doesn’t have many big name food places, I can’t even get food delivery besides pizza (not even Uber Eats) I dislike almost all vegetables, cheese on any meat, ranch, salads, basic things that almost everyone loves. Here’s a list of things I mainly eat chicken,beef/hamburgers, steak, rice, mashed potatoes, corn, fries, eggs,. I know there isn’t much to work with but I’m getting tired of eating the same things. I’m a huge fan of BBQ things as Im bbq sauce, chips, seeds, etc. I was just wondering if there was anyone like me and maybe had some recipes for some bomb tasting meats. A Spanish friends mother that I know would make great tasting chicken and pork with rice, I think it was with Goya seasoning or something. I also like Chinese food and haven’t tried much variety but I know I like general Tso’s chicken, Chinese fried rice, and sweet and sour chicken. I think my favorite food would be a hamburger with bacon, I’ve tried fried onion rings, pork, fried mozzarella patty and steak on burgers. Any recommendations or a point in the right place would be appreciated :)

Is it possible to add light-colored food coloring to dark chocolate fudge and have the color turn out right?

I want to make this watermelon fudge recipe but want to use the box of fudge mix I bought from the store instead of making it from scratch like the recipe says. To get the watermelon colors I was going to use the pink and green food coloring of course and also buy some watermelon extract to get the watermelon taste as the recipe states. Would my way work or would the pink and green dye not turn out pink and green at all when mixed into the dark brown colored fudge?

Homemade Katzu Curry with deep fried and breadcrumb coated Tofu

Ingredients (4 servings):

…for the curry…

  • 1 Large Carrot

  • 1 Large Potato

  • 2-3 Red Onions

  • 3 Bay Leaves

  • 1 Clove Garlic

  • 1 cm Ginger

  • 3 tbs Curry Powder

  • 2 tbs Tomato Paste

  • 1 tbs Tumeric

  • 1 ts Nutmeg

  • 1 ts Veg Stock Powder

  • 1 pinch Oregano

  • 1/2 ts Cayenne Pepper

  • 1 ts dried Parsley

  • 1 ts Pepper

  • 1+1/2 ts Salt

  • 3 tbs All Purpose Flour

  • 250 ml Water

  • 350 ml Coconut Milk (actual milk, not the one in the can)

…for Katzu Tofu...

  • 500 gr Extra Firm Tofu

  • 4 tbs Soy Sauce

  • 100 ml Oat Milk (or the one you like)

  • All Purpose Flour

  • Crumbled Corn Flakes (or Panko Bread, which is more appropriate)

  • Vegatable Oil for frying

Method:

  1. Press the tofu if yours needs to be pressed and cut it in cubes of approx 1cm high and 3-4 in lenght.

  2. Place it in a container and marinate in soy sauce for at least 1 hour.

Let’s now make the curry!

  1. Rougly chop the veggies and put them in a large bowl, microwave friendly.

  2. Grated both the garlic and the ginger, add bay leaves, tomato paste, veg stock, oregano, parsley, salt, pepper and cayenne, and finally the water.

  3. Microwave for 8 to 10 minutes at 800W.

6, Once the veggies are cooked, remove the bay leaves and add in the same bowl the coconut milk, all the remaining spices and the flour. Blend it with a stick blender until smooth, then cook again in the microwave for extra 3:30 minutes (this will allow thicken the sauce).

Note: If you’re not happy with the consistency, and you prefere it slightly thicker or runnier, add more flour or milk/water, blend it again and microwave for another minute or so.

Now it’s time to make the Katzu tofu!

  1. In a pan heat the vegatable oil.

  2. Prepare 3 bowls:

– one with the flour

– one with the oat milk

– one with the corn flakes crumbs

  1. Coat every chunk of tofu first in flour (making sure it’s well coated), then dip it in milk and finally in the crumbs (we want it to be completely coated this time as well).

  2. Deep fry for around 2-3 minutes each side and place it in a plate with kitchen paper, to absorb the excess oil.

  3. Serve with Jasmine rice and a wedge of lemon and enjoy

Hi guys! I'm going back to college soon and this will be my first year without a meal plan. I've been doing pretty good at cooking for myself all summer but I tend to make the same three things (wedge salad, veggie fried rice, pork tacos).

[Request] Ideas for a picky person?

Hi all. I am at my wit's end. My husband is an extremely picky person. For the first 2 years together, the majority of our meals were takeout or frozen stuff at home. We've recently moved to a house with a kitchen I can actually cook in & I've become a stay at home mom. I'm a decent cook, he loves when I make steak or lasagna. I've just run out of original ideas. Any help would be appreciated.

Here's what he refuses to eat: Mustard Cabbage Peppers Olives Mushrooms Onions (he'll eat it cooked/tiny pieces) Lunch meat (pb&j sandwiches for lunch) Any kind of salad - potato, chicken, egg.

[request] What to do with strong crab / fish / prawns stock?

Yesterday we got some quick access to some crab claws, a red trout (I think), some large prawns and a few squid. Because we had to leave really quickly I threw it in a slowcooker with some whine, garlic, tomato cubes and unions.

So some really strong stock was the result (after I filtered it), I kept all the "fishy" parts, as I do not have a easy way to crack the crabs I was wondering what kind of dish could be made with this stock?

Inspiration for your next thing?

Hey all, I have a fairly simple question: Where do you find inspiration for what to make next? Mostly I just browse through and when I see the image of something that looks really good I click on it, check out the recipe, and if I still like it I'll bookmark it until I get the chance to run to the store, pull that recipe back out, and try it out.

This has worked pretty well until recently when I've started baking a lot more. I mostly do desserts because I have the most fun with those. So yeah. I've been looking around quite a bit trying to figure out the type of things that I want to make next and how to keep up a list. Thanks all. :)

Also, for clarification, I'm not against remaking old recipes that I and others have greatly enjoyed... I just also like finding and trying out new things-- as I'm sure many of you do as well.

Quinoa With Crispy Dill Tofu

Ingredients

  • 2 cups cooked quinoa - even better if it's been allowed to cool in the fridge for awhile
  • 1/2 of a medium yellow onion, coarsely chopped
  • 5 green onions, chopped
  • 14 oz package of tofu
  • Small bunch of chives, chopped
  • 1 cup of fresh dill, minced
  • Juice from one lime (about 1 tablespoon)
  • 4-5 garlic cloves, minced
  • 1/4 cup panko or bread crumbs
  • 2 tablespoons corn starch
  • Extra virgin olive oil
  • Kosher salt and black pepper

Instructions

  1. Preheat the oven to 400f.
  2. Drain the tofu and slice the length-wise into 3 rectangles. Place the slices of tofu on a paper towel covered plate, cover with a paper towel and put another plate on top. Plop something heavy on top to help press the water out of the tofu. Let the tofu drain for 20 minutes minimum, up to 3 hours.
  3. Cut the tofu up into cubes, about 1/2 inch each and put in a large bowl.
  4. Add abaout 1/4 cup of extra-virgin olive oil, 3/4 of the dill, garlic, chives, panko, corn starch, salt, and pepper.
  5. Bake the tofu on a baking sheet for 20-25 minutes, stirring halfway through, until brown and crispy.
  6. Meanwhile, heat a medium pan. Add some olive oil and saute the onion with a little bit of salt. Add the quinoa to the pan and cook, stirring occasionally and browning the quinoa.
  7. When the tofu is done, add it to the quinoa, stir to combine, garnish with the green onions and the rest of the dill and serve.

Looking for a particular potato salad recipe

My husband and I went to eat at the Delta Blues Smokehouse in Houston, TX today for lunch. They have a potato salad that is delicious. It has a very strong mustard and a very strong vinegar flavor. It also has for sure lots of raw onions and scallions or green onions in it. There is a hint of sweetness that is not overpowering. I can't pick apart the rest of the seasonings because of the strong vinegar and mustard. But there are definitely a few other things in there.

Most of the mustard potato salads we come across are very mild. Does anyone have a recipe that is heavy on the vinegar and heavy on the flavor? If there is a better subreddit for this request, please let me know.

Artisan Black and Tan Beer Bread Recipe

Ingredients

1 12 oz. bottle of Yuengling Black & Tan beer
½ cup warm water (between 110° and 115° F)
2 tsp. Fleishmann's Active Dry Yeast
1 cup + 4 cups flour plus extra for kneading or shaping bread
1½ tsp. kosher salt
1 tsp. Chia seeds (optional)
cornmeal (optional)

Directions

The Starter

In a large mixing bowl add yeast, 1 cup flour and 1/2 cup warm water. It's going to be sticky but make sure it's mixed well. Cover with a clean, dry kitchen towel. Put in a warm dry place for 20 to 30 minutes to rise. Add the rest of the ingredients Add the rest of your flour, Kosher salt, Chia seeds (optional), and bottle of Yuengling Black & Tan beer. I prefer to pour half the beer, mix well, then add the rest of the beer.

Cover with clean, dry kitchen towel and put in a warm dry place for the second rise. Depending on your location or temperature, the dough can take anywhere from 30 minutes to 2 hours to rise. Be patient! The dough will be ready once it doubles in size.

Pre-heat oven to 375° F

Add a pan of water on the lower rack to create steam in the oven.

Shape your bread and place on a flat cookie sheet that's covered in parchment paper and sprinkled with corn meal.

Score the top of the dough to accommodate for "oven spring."

Bake for 40 minutes. When center temperature is between 200 and 210° F, it's done. Place on cooling rack. Serve and eat.

Sugar Free Low Carb No Churn Ice Cream Recipe

Ingredients

Ice Cream:

  • 3 large eggs (separated)
  • ½ cup (40 g) erythritol or other low-carb sweetener
  • 1½ cups (300 ml) heavy cream
  • 3 oz (100 g) cream cheese
  • 1 TBSP vanilla extract (sugar free)
  • 1-2 TBSP vegetable glycerin

Sugar-Free Chocolate Sauce:

  • 1 cup (200 ml) water
  • ½ cup cocoa powder
  • ¼ cup sweetener
  • 2 TBSP vanilla sugar free syrup

Instructions:

Ice cream:

  1. Separate the egg whites from the egg yolks. Whisk the egg whites using a hand mixer. As the egg whites thicken, slowly add the powdered sweetener. Whisk until they create stiff peaks.
  2. In another bowl, whip the cream until soft peaks form. Do not over whisk the cream.
  3. In a third bowl, mix the egg yolks with the vanilla extract and cream cheese.
  4. Slowly fold the whisked egg whites into the whipped cream. Then add the egg yolk, cream cheese mixture and gently fold in using a spatula until combined.
  5. Place the mixture in a freezer-friendly container and freeze for at least 3 hours.

Sugar-Free Chocolate Sauce:

  1. Combine water, sweetener, cocoa and syrup in small pot.
  2. Bring to boil and reduce heat
  3. Simmer on low for about 5-7 minutes until mixture thicken up.

Searching for a specific Strawberry Pretzel Pie Bar recipe

The bottom is either crushed or very short sticks of pretzels, the kind with big bits of salt. It was kept from falling apart with honey I believe. It made for a perfect salty/sweet combination.

The middle was some kind of cream cheese. There was quite possibly more to it than just that, but it's been a while since I had it.

The top was strawberries and I think strawberry gelatin with it.

When I got it, it was very cold and seemed like it had been stored in a freezer, though I noticed there were no ice crystals and it wasn't hard at all. Definitely fresh, but I know nothing about making food, so it very well could have just been in a super freezer proof container that I've never heard of.

I doubt it'll help identify the recipe much, but I got the bars from a food truck. They haven't had them since and haven't had any dessert items on the menu for a while.

Fresh Fruit Tart's Pastry Cream question.

Recently I tried a Fruit Tart from a Martin's grocery store near me, and I loved the way it tastes. However (I wish I never did) when I looked at the ingredients I saw that it had High Fructos Corn Syrup, which is an ingredient that I avoid like la plaga, so I decided to try my hand at being a patissier and attempt to make my own. I was pretty successful, I didn't burn the cream as I cooked it, I managed not to eat my berries before it was done, it was all good.

One difference that I noticed was that my tart had a much more pronounced dairy taste than the one I purchased from Martin's was.

My question: is there any way for me to remove or reduce the dairy taste in the recipe?

I am Looking for Some Vegetarian Based Recipes to add to my Daily Diet

Simply put, I don't like vegetables that much. I don't go out of my way to exclude them, but when I do each veggies, they either come loaded with salt, butter, or some sort of spiciness to make them taste better.

I'm trying to increase my fiber intake, and improving my diet overall, although I'm not vegetarian, I figure having at least one veggie centered dish a day will help with my veggie intake, so any good tasting vegetarian dishes would be appreciated. (However, I do favor recipes that involve roasting, or grilling, and anything that adds spiciness, as that's the method I like my vegetables the most)

Looking for a recipe for Chili Jam/Jelly

I'll have more chilis from my balcony than I'll be able to handle within the next few weeks and I am looking for a recipe to turn them into jam/butter/jelly. There are plenty of recipes online but since I have never made any kind of jam before, I can't tell if it is a "good" recipe by just reading it. (Something that I am usually able to do with regards to cooking).

I'd be really thankful for any recommendations/links to good recipes for a spicy jam. It could also be tomato-based or based on peppers.. I'm pretty open to any suggestion. Thank you very much in advance.

Looking for fish recipes for someone who doesn’t like fish

I’ve always been a little put off by fish. But I’m interested in trying to work it into my diet, for the health benefits. I believe I could learn to like it.

  1. No canned tuna.
  2. Nothing deep fried.
  3. The healthier the better. Omega 3s and whatnot. Definitely more interested in whatever fish have the most nutritional value.
  4. But also less of a fishy taste if possible.
