It isn’t really a casserole as much, more of a sausage in a gravy-esque sauce so delicious you’ll wish your stomach has no limit. I am bigging myself up here but in all seriousness it is one of my fave comfort meals and it has got quite a good compliments, including a raving review from my younger brother, call it bias, I call it a man with impeccable taste! As per, this recipe is super simple and dead cheap, so get cooking!
Ingredients

Sausages (I cook 2 per person but that is just personal preference, also the sausages we buy are the big bag of frozen ones from Iceland!)

1 Large Onion

2 Sticks of Celery

1 Stockpot

1 Cup of Plain Flour

Worcestershire Sauce
-
Tomato Purée
-
Soy Sauce
-
1/2 Schwartz Flavour Packet – Sausage Casserole (optional)

3 Carrots
-
Pepper, Paprika
Method
1) Begin as we usually do by sautéing your chopped onion (in a sloosh of vegetable oil of course)
2) Add your chopped celery and cook them slowly along with your onions.
3) Add a splash of water as a splash of soy sauce, then sprinkle the flour in slowly until you end up with a horrendous looking kind of thick paste.
4) Make up your stockpot with a litre of water, I use a vegetable stockpot.
5) Chop the carrots up and get them simmering, meanwhile add the stock little by little until the mixture is about the consistency of a slightly runny porridge (I really don’t know how better to describe it!)
6) Add more of the stock, a squeeze of tomato purée and a about 2 tsps of Worcestershire sauce. This is where you can add 1/2 the packet of schwartz, the pepper and paprika.
7) Add your carrots to the thick sauce and give it all a good mix.
8) Cook the sausages under the grill, once done, chop them up and add them too the mixture.
9) Now you could serve this with more mixed veg, or what I prefer is some good ole mashed potato. Enjoy!
