The best dish that I ever made (recipe)

Spiced fish with tahini/yogurt/lemon sauce and spiced onion salad (in a tortilla):

Please note that I have adjusted these spice quantities to suit "my flavor requirement". The original recipe didn't use anywhere as much as I prefer---I actually doubled it across the board. You can adjust these quantities to suit your taste.

Get 4 large tortillas. Get cooking oil spray (or just straight cooking oil if unavailable)

Fish quantity: 4 basa fillets (or use tilapia if basa is unavailable)

Spice mixture to coat fish:

2 tsp smoked paprika 2 tsp coriander 2 tsp cumin 2 tsp black pepper 1 tsp cayenne pepper 4 tsp extra virgin olive oil

Spiced onion salad:

2 cups thinly sliced white onion 2 tsp salt 8 tbsp chopped fresh parsley 8 tsp lemon juice 4 tsp extra virgin olive oil 1 tsp smoked paprika

Tahini Yogurt Sauce:

4 tbsp plain yogurt (1% or 2% fat) 3 tbsp tahini 2 tbsp lemon juice 4 tsp extra virgin olive oil 1 tsp ground cumin (I may be misstating quantity here---start at 1/4 tsp and increase until it suits taste) 5-10 dashes of tabasco sauce (keep sampling and add more to adjust to one's taste)

Onion Salad instructions:

Toss onion with salt. Let stand for 20 min. Rinse under cold water. Drain. Pressing to remove excess moisture. Toss with parsley, lemon juice, oil and smoked paprika.

Fish spice instruction: Mix the spices together. Add the oil to the spice mixture and then mix that. Then spread the spice-oil mixture onto both sides of the fish fillets.

Cook the spiced fish fillets in the frying pan as they are. If you have a griddle appliance, please use the griddle instead of the frying pan (as it will be a little easier because you can cook all the fillets simultaneously). Leave the residual spice and oil on the surface after cooking (don't clean it).

Put each cooked fish fillet on one large tortilla. Fold the tortilla over the fish fillet (enchilada-style). Spray the cooking oil spray onto the griddle/pan surface (or brush the straight cooking oil onto surface). Place the folded "fish-tortilla" onto the surface. Brown each side of the folded "fish-tortilla". If you are using a "folding griddle", then fold the griddle to brown both sides simultaneously.

Peel off one side of the "browned tortilla" to expose one side of the fish. Add the yogurt-tahini sauce on top of the fish surface. Then add the spiced onion mixture on top of that. Close the "browned tortilla" (so it looks like an enchilada).
