Keto Pumpkin Pie

Cook Time: 40-50 minutes

INGREDIENTS

1/4 cup of almond flour

1 tablespoon coconut flour

1/4 cup of butter

1 tablespoon Stevia

2 egg yolks

Pinch of Chia seeds

1/2 teaspoon of Baking Soda

1/2 cup of Pumpkin Puree

1/8 cup of heavy cream

Pinch of cinnamon

Salt to taste

Whipped cream, for serving (optional)

DIRECTIONS

Preheat the oven to 360°.

In a large bowl mix the almond flour, coconut flour, butter, chia seeds and baking soda together to form a thick dough. Using a plastic wrap cover the

bowl and place it in the refrigerator for 20-30 minutes.

Pour the mixture into a pie pan and using wet fingers press the dough to cover the pan evenly at the bottom and sides.

In a small bowl mix the stevia, pumpkin puree, heavy cream, egg yolks and salt. Whisk the mixture well and pour the mixture on the pie evenly.

Bake the pie for about 15-20 minutes till the middle and crust is golden.

Serve with whipped cream if desired and enjoy!
