GREEN BEAN CASSEROLE

GREEN BEAN CASSEROLE

Prep time: 10 minutes

Cook time: 35 minutes

Ingredients

Serves 8

1 lb fresh green beans, trimmed and halved

½ cup almond flour

1 onion, sliced

2 shallots, sliced

8 oz cremini mushrooms, chopped

2 tablespoons butter

3 garlic cloves, minced

½ cup chicken stock

½ cup heavy cream

¼ cup Parmesan cheese, grated

1 teaspoon sea salt

½ teaspoon black pepper

Directions:

Bring a pot of salted water to a boil. Add the beans and cook for 5 minutes. Drain and add to cold water. Drain.

Mix flour, sea salt, and black pepper in a bowl. Add shallots and onions and toss well to combine.

Preheat oil in a skillet over medium heat. Add the onions and shallots and cook for 3-4 minutes.

Transfer to a plate. Add the mushrooms to the same skillet, along with butter and garlic, cook for 5 minutes.

Preheat the oven to 400 F. Add cream and stock to the skillet and bring to a boil. Reduce the heat to low and cook until thickens. Add Parmesan.

Add the beans and stir to combine. Transfer to a baking dish and top with onions mixture. Bake for 15 minutes. Serve.
