This is a traditional Neapolitan (Southern Italy) recipe, you can prepare it with all kinf of pasta, the traditional way is with Maccheroni or Spaghetti, better if with tomato sauce.
Ingredients for 2:
- 2 dishes of Leftover pasta
- 2/3eggs
- Parmesan Cheese
- Salt
- Black Pepper
- Extra Virgin oil
Beat the eggs, parmesan, salt and black pepper with a fork, then add it to pasta and blend with your hands (or a spoon)
In a pan put the E.V Oil and let it fry, then add the pasta with eggs, cover and let it cook at medium heat for 3-4 minutes.
Once the crust is made turn the frittata and let cook for other 3-4 minutes. Control with a fork if it's cooked and then serve.
P.S. for every dish of pasta add 1 egg
