Butternut Squash "Mac & Cheese" - Lactose Free

I can't remember where I found this recipe, but I made it last night and it was GOOOOD.

INGREDIENTS

2 cups peeled and diced butternut squash

1/4 cup soy milk or any unsweetened plant milk

2 tbsp olive oil

1 tsp onion powder

1/2 tsp garlic powder

1 or 1.5 tsp sea salt

4 tbsp nutritional yeast

1 tbsp lemon juice

1/4 cup goat cheese

Fresh parsley & diced tomato (optional)

DIRECTIONS

Steam butternut squash for about 10 minutes or until it's soft.

Place steamed squash in a blender with the rest of the ingredients and blend until smooth

Mix together sauce and cooked pasta of choice

Serve with fresh parsley & diced tomatoes (optional)

NOTE

\Add additional goat cheese, salt. pepper and lemon juice to taste*
