I've been in search for a recipe for what I've seen called a "mocha cake" in the more old school Italian-American bakeries in the metro Boston area. I mention location because when I talk to people not from the area they have no clue what I'm talking about, so it's possibly a regional thing? It's a family favorite and more recently I've had a hard time finding them.
This is not a chocolate-coffee flavored cake - that would be much too easy and not worthy of a post.
Best description of this cake is a slice of a raspberry jellyroll rolled in coconut on the outside. Each slice is topped with a generous swirl of frosting (presumably where the "mocha" part comes in, though I've never had one that was super intensely flavored) and a dollop of raspberry jam and/or lemon curd.
I've had the hardest time trying to get the frosting right - it doesn't seem like a normal buttercream but I'm not sure. Anyone have an ideas on where I could start to recreate these?
