We had a cafe where I went to University called Gracie's Atomic Cafe. They most the most delicious salad as a meal. Here is the recipe which I got from the owner.
Ingredients
- 1 can artichoke hearts – drained and quartered
- 1 large avocado – cubed
- 1/2 cup cubed fresh mozzarella
- 1 or 2 sliced green onions – green and white parts
- 1 small can black olives – drained
- 1/2 pint cherry tomatoes or 2 ripe tomatoes quartered
- 1/2 small red onion – in thin rings
- 8 oz pepperoni – sliced - I use uncured now
- chopped fresh basil
- 2 heads Boston lettuce – tear the leaves
- 1 -2 cloves garlic minced
- 2 tbs red wine vinegar
- 1 tsp Dijon mustard
- 1/2 cup olive oil
- salt and pepper
Steps
- Whisk garlic, vinegar, mustard, olive oil, salt and pepper in serving bowl for dressing.
- Add artichokes, olives, tomatoes, red onion and avocado to dressing. Mix well to coat and marinade for at least 1 hour or overnight.
- Add all other ingredients, except lettuce and toss well. Add lettuce and toss just before serving. Serve with french bread and lemonade or wine.
