I used to have a recipe for French onion soup that was vegetarian and included no broth. It required 10lbs of yellow onions and Gruyere cheese on top of the bread. It has been years and I can’t find the recipe. Does anyone know what I’m referring to? I want to say it’s from Mark Bittman or Cook’s Illustrated but I can’t find it.
