Recipes for limited diet?

Hello all! So I have a host of health issues and have whole chunks of food categories I can't eat. My doctor has recommended a Mediterranean diet, which is fine in theory - I love seafood so I'm cool with a fish-based diet. The issue is that all the recipes I find have a lot of things I can't eat, and taking them out would leave the food really bland. So I'm hoping for some suggestions!

The main things that pop up that cause issues:

I cannot eat any spicy food. Like at all. Pepperoni is almost too spicy for me. Spicy food always made me very sick so I have zero tolerance for it now. (however that is not to say I don't love seasoning - just can't eat anything remotely hot)

I hate peppers. Even the non-spicy ones I think are really gross.

I am incredibly allergic to onions. Dried chopped/ground onions seem to be okay if they're mixed in with things, but I can't do raw onion and I cannot cook onions.

I suck at cooking. I can bake and make some simple things on the stove but I'm still very much a novice. So while I'm definitely willing to try and do my best, overly complicated recipes will probably be a fail.

Hopefully you guys have some recommendations! I would love to be able to eat some more varied meals 😩
