I've gone through different recipes and can't choose one way to go/how/when to season it, so you guys get to tell me what to do!
I have a 3kg duck from Quebec, limes, 1 lemon, garlic, ginger, turmeric, shallots, onions, green peppers, chives, green onions, carrots, celery, cherry tomatoes, parsley, marinated artichokes, cabbage, a lot of different spices (not too specific though & spice mix (dry rub)
What would you do with the fat after (except use it on everything)?
