Chicken Stock Rice - What can I add to make this dish tastier

I got this recipe where I saute onions , carrots and stir fry the chicken. Then I add in uncooked rice and chicken stock. Bring all of them to a boil and simmer for about 15 minutes. The result is sticky rice that taste like chicken essence and chicken. It tastes too one dimensional and boring since its so chicken-y. I’m not sure what I can add to make this dish more flavourful?

I was thinkinf bell pepper to make the dish sweeter?
