I'm looking to make hash browns in bulk, buying a 50# bag, shred and freeze until needed.
I see that you can freeze, but you have to be careful. So one says to boil the potatoes until almost soft, then shred. Another says shred, soak, rinse, dry, freeze.
I assume it's the water that's the issue when freezing, so I don't know why some boil first. What's the benefit if boiling before you shred and fry?
The freeze will be in standard "food saver" vac bags.
Also, how long can you let them sit in a strainer to air dry without having any problems. I'm pretty sure they were too wet when I 1st tried as it took forever to cook.
Edit: would baking help before freezing? I'm looking for a quick, simple process after thawed.
