Homemade Farmer's Cheese.

The way I make Farmer's cheese:

1.Bring 4 cups milk (i use whole, but 2% or skim will work!) to just before a boil.

2.Remove from heat

3.Add an acid (lemon juice or white vinegar) I use around 2tablespoons for 4cups milk.

4.Stir while curds separate from whey.

5.Pour into a cheese cloth(or any fine fabric) covered strainer.

6.Gather ends of cloth, twist to form a little cheese ball bag.

7.Squeeze excess liquid out. (Optional, hang to drip for a few hours. I don't, I just squeeze until I like the consistency.)

8.Open cheese cloth, mix in salt to taste. (I use flaked sea salt. As it's a "dead cheese" iodized table salt is fine)

9.You can now use your hands to shape it, press it with a cheese or tofu press, mix it until creamy to use as cream cheese, or crumble it. Leaving more whey in it will give you a ricotta texture.

This is fast! 10 minutes, from start to finish, and you've got homemade cheese to use anyway you want to use a light cheese.

Good in the fridge for a week. (No live bacteria so you cannot age this cheese. If you want an aged cheese use Rennet in place of the acid and ask someone else, because I'm not that deep into cheese making yet! Lol)

Can you pan fry chicken with a yogurt base marinade ?

A Dish for all seasons - Spicy Chickpea Curry

Spicy Chickpea Curry - serves 4

3 Tbs. olive oil 1 medium onion chopped 2 cloves garlic minced 1″ piece of ginger minced 1 tsp. ground cumin 1 tsp. ground coriander 1/2 tsp. turmeric 1/2 tsp. cayenne pepper 1/2 tsp. chili flakes 1/4 tsp. ground cinnamon 2 x 400g cans chickpeas drained and rinsed 1 x 400g can chopped tomatoes 1 tsp. sea salt chopped fresh coriander to serve plain Greek yogurt

  1. Heat the olive oil in a large, heavy-bottomed saucepan over medium heat (I use a dutch oven). When the oil is hot, add the onion and cook for five minutes, until soft and translucent.

  2. Add the garlic and ginger, and cook for another minute. Add the cumin, coriander, turmeric, cayenne, chili flakes and cinnamon, and cook for another minute.

  3. Add the chickpeas, tomatoes, and salt to the pan and stir. If the mixture seems too dry, add a bit of water, maybe half a cup. Cover, turn the heat down to low and cook for 20 minutes, stirring occasionally and adding water if necessary. Let the curry sit for ten minutes before serving with rice, yogurt, and fresh coriander.

Chicken Enchilada With Shell Pasta

Chicken Enchilada with Shell Pasta is a very simple merging of Tex-Mex and Italian style ingredients. This is a really simple, easy to make meal that requires simple preparation and not too many steps to make. The chicken, tomato & pasta are a typical great combination. Add in black beans, corn and spring onion, and lightly spice with chilli to provide a wonderful subtle heated undertone to the meal. Mixed with Enchilada sauce as well as cheese and you have an amazing meal that will not disappoint.

Ingredients:
• 1 Rotisserie Chicken with meat shredded
• 300 g Medium Shell Pasta
• 400 g Diced Tomatoes 1 can
• 375 g Enchilada Sauce mild - I used 1 jar of El Paso Sauce
• 425 g Black Beans drained - I used 1 can El Paso black beans
• 400 g Corn Kernels drained - 1 can
• 2 1/2 cups water
• 3 Spring Onions thinly sliced & additional to garnish
• 2 tsp Ground Chilli
• 2 1/2 cup Shredded Cheese I use a cheese combo mix
• Sour Cream optional to serve

Instructions
1. Shred meat from a rotisserie chicken and set aside.
2. In a large saucepan over medium high heat, add shell pasta, diced tomatoes, enchilada sauce, water, spring onion and ground chilli. Stir to mix through.
3. Bring to boil then reduce heat and simmer for about 14 minutes. Stir regularly to continue mixing. Most of the water will evaporate during this period. Don't let it all evaporate and get too dry.
4. Add black beans, corn kernels and shredded chicken. Stir to fully mix through. Cook on simmer for a further 2 minutes then remove from heat.
5. Add shredded cheese, stir to mix through.
6. Garnish with additional spring onion & serve with an optional side of sour cream.

My husband's birthday is coming up & every year I like to make a sweet treat of his choosing. This year he requested fudge brownies. Normally I'd go out & buy a boxed mix, but I am feeling adventurous and would like to make them from scratch. I am not looking for anything too complicated though. Spicy Slow Cooker Black Bean Soup

Ingredients

  • 1 pound dry black beans, soaked overnight

  • 4 teaspoons diced jalapeno peppers

  • 6 cups chicken broth 1/2 teaspoon garlic powder

  • 1 tablespoon chili powder

  • 1 teaspoon ground cumin

  • 1 teaspoon cayenne pepper

  • 3/4 teaspoon ground black pepper

  • 1/2 teaspoon hot pepper sauce

Directions

  • Drain black beans, and rinse.

  • Combine beans, jalapenos, and chicken broth in a slow cooker.

  • Season with garlic powder, chili powder, cumin, cayenne, pepper, and hot pepper sauce.

  • Cook on High for 4 hours. Reduce heat to Low, and continue cooking for 2 hours, or until you are ready to eat.

Uk chilli recipes

Need some help I love chilli or is it chilli I like beans in mine. Anyways getting the dried whole chillies is an expensive ask in Northern Ireland, so I have ordered the four main chillies I have seen in recipies on here in powdered form I know it isn't perfect but saves a lot of cash. So I want to know can these just be dumped in? or at a certain time marinate the meat in them? Make a paste I don't know but would love some UK recipies as finding some of the American ingredients is a nightmare.

Looking for a Bengali style chicken curry recipe

I worked in a restaurant a few years back during uni and the chefs made a staff curry that was nothing like the food that they served to the punters. I've searched high and low but can't find it. Basically they fried onion, garlic/ginger with cinnamon and cardamom pods for the base then added the chicken with only cumin powder, coriander powder and turmeric powder, I have tried to replicate it but I can't get the spice ratio right. You guys. It's damn near August, and there is NO fresh pickling dill. All I want is to can some hot pickled beans, but I can't. I was promised by the farm stand I drive by on my way home that it would finally be available on Tuesday. No dill. No grocery stores have anything but the frondy baby dill you use with fish. The Thursday market by my house had a tiny bunch with sad tiny flowers and I went "oh, if these guys have dill, there must be some at the farm stand tomorrow. I'll see if they've got any better." So I bought my 4 1/2 lbs of green beans and went home happy and excited. Today, still no dill.

I'm stuck with 4 1/2 pounds of green beans and there's only so much stir fried veggies I can make myself eat. Halp.

Looking to do tuna sashimi this weekend

My plan is to do a soy sauce marinade then coat in pepper and white sesame seeds. I thought I had black sesame too but they're poppy seeds. I'm serving with wasabe paste, ginger, and soy sauce. I'm searing a minute on each side in extra virgin olive oil. Does that sound about right? Is the no black sesame a deal breaker?

[REQUEST] Brownie *cake* recipe? (x-posted to r/Baking)

Hey r/recipes!

A local bakery sells a brownie "cake" that I'm obsessed with. Here's a few images from their Facebook page of a finished cake and a cut slice. I emailed the bakery to kindly ask for the recipe, but either my email got lost in the shuffle, or their policy is not to share.

I'm challenging myself to become a better baker and figure out how to make unconventional desserts, and this is a challenge that flummoxes me. Anyone have a recipe for something like this, or any idea how to replicate it?

Here's what I can tell you about it:

  • They call it a brownie "cake" simply because it's thick, the crumb is not cakey at all. It's in fact very chewy, dense (in a good way), and gooey. I'd compare the texture to cold, firm cheesecake but with a definite bite.
  • The bakery probably uses some sort of dark cocoa, since this cake is never reddish-brown and always very dark.
  • The bakery limits it to 6", 8", or 10" cakes, and one "sponge" is usually about 2" to 2.5" high. I imagine you can't make it any bigger because the center won't cook through.

I'll add more comments if I can think of anything else. Any help anyone can provide is greatly appreciated!

[REQUEST] Trying to assemble chicken thigh recipe, looking for cooking suggestions.

I'm trying to make a lowish carb chicken dish. Here's what I'm thinking:

Ingredients

  • Chicken thighs

  • Napa cabbage

  • Green beans

  • Bacon

  • Scallions

  • Ranch seasoning or fresh herbs from my daughter's garden

  • Vermouth (no regular wine right now, but could get some)

  • plus normal pantry items

What I was thinking was browning the chicken with a little bacon fat, then maybe some sort of roast or braise that utilizes the veggies. I'm just not sure how best to combine everything. Should I brown, then deglaze with the vermouth and do the veggies, or should I just brown the skin and then do some sort of 1 pan finish? Any suggestions?

Hi everyone, I am looking for a recipe for a taco salad I can pack in a mason jar. I am totally good with grilling my own chicken/making my own marinade for the chicken.

Subway's Southwest Chipotle Sauce: True Copycat Recipe

Been craving a recipe for this forever, and got really tired of some of the "copycat recipes" that are posted online. I decided to do some data analysis on the published nutritional facts and ingredients lists to approximate a recipe for myself... then made and modified slightly to taste. Really happy with the results and simplicity, hope someone out there was looking for this as much as I was!

1/2 Cup Mayo (soybean oil based - Hellmans/Best Foods preferred)

3 1/2 Tablespoons Buttermilk

1 Tablespoon Ground Chipotle Pepper

1 Tablespoon White Vinegar

1 Tablespoon Water

1/2 Tablespoon Onion Powder

1 1/2 Teaspoon Sugar

1/2 Teaspoon Salt

Mix all ingredients together, makes approx. 1 Cup.

Request: apricot marinade for beef

My parents used to have a cookbook that had a delicious apricot marinade for steak, but I can't seem to find something comparable online. I remember it was made with apricots and apricot nectar, but I can't remember anything else. When I search online, I just keep finding apricot glazes for chicken and pork.

It was somewhat sweet, but not super sweet and it wasn't think and syrupy. Does anyone have any ideas?

My father would slice up flank steak and marinade the strips for a while. Then just cook it on the grill.

Steak Recipe with guaranteed flavour

Not sure how familiar people are with this method, for cooking steaks, but I find this is pretty much a fool proof method for getting flavourful steaks regardless of the quality of meat you get, for obvious reasons. This is probably the ideal recipe for when you need to impress but are worried about your skills, just strapped for time or cash strapped and you bought a lower quality piece of steak.

Ingredients

  • Steak – your choice of cut, personal favourite Ribeye
  • beef stock cube (guarantees the flavour punch - ideally softer stock cubes and not the hard cube ones)
  • Olive Oil
  • Garlic (fresh, sliced or diced)
  • Rosemary (fresh preferred)
  • Sea Salt
  • Black Pepper (freshly ground)
  • Cayenne Pepper Powder
  • lemon pepper (optional)

Directions You can check out the recipe in more detail here - Use flat end of knife to bruise rosemary - Mix together the spices (cayenne, black pepper, lemon pepper) - Pour out some olive oil into a small container (enough that you can generously spread over the whole steak) and crush your stock cube into it and making try to make sure there are as little lumps as possible. ideally no lumps. - Pour this olive oil stock solution over the steak, rubbing it in. (get down and dirty with your hands) - Spinkle over the spice combo making sure its evenly spread and rubbed in. - Leave for a couple minutes while you: - Crush a clove of garlic - Oil your pan on high heat (use a griddle pan if you want those all important lines) - once the pan is heated up spread the oil around and chuck in the garlic and rosemary - Let them slightly brown before placing your steak in the pan. - Cook till your desired doneness (refer to chart in the link if you want more advice on times) - If you aren't too fussed about the lines, like me, then you can work the garlic and rosemary around, I tend to let them sit underneath for a little bit each side. - Once your done, remove from the pan and let it rest for a few moments. - Bite in!

This recipe has been a life saver when I had to cook for large family gatherings, simple, easy and consistent. the only way I can see this not turning out full of flavour every bite is if you burn your steak into a lump of charcoal or you serve it uncooked (just because the oil might come off too strong)

Dangerous Soup recipe ideas

Back in the 90's i was a fan of the show "Are You Afraid of the Dark?" For those that don't know it was basically "Tales from the Crypt" for kids Anyways the episode "Tale of the Dangerous Soup" features the titular food as a green soup made from people's fear. Now since I don't know how to turn people's fear into ingredients what I'm looking for is a decent proxy. For the base im thinking pea or broccoli soup to give it the green color and maybe go the spicy route with some wasabi or diced jalapeños. Potato Salad With Bacon & Herb Mustard Dressing

Potato mixed with bacon and egg provide a popular mix for a potato salad. Instead of mixing in a mayonnaise based dressing, this dish uses greek yoghurt as the base. The dressing is a beautiful creamy mixture of yoghurt, wholegrain mustard, lemon juice and honey to provide a real tangy taste to the potato salad. Mixing through thyme and chives adds the perfect finishing touch to this very tasty potato salad. The dressing provides a light coating on the potatoes without drowning them. This is a great side dish to any barbeque.

Ingredients:
• 1.5 kg Desiree Potatoes or other type of red potato
• 4 Eggs hard boiled & sliced
• 3 strips Short Cut Bacon diced
• 4 tbsp Chives thinly sliced
• 1 tbsp Thyme Leaves use fresh thyme
• 1/2 cup Wholegrain Mustard
• 4 tbsp Plain Greek Yoghurt
• 1 tbsp Lemon Juice
• 1 tbsp Honey
• Salt to season
• Pepper to season

Instructions:
1. Wash and peel potatoes and cut into smaller bite size pieces. Simply quarter the smaller potatoes.
2. Place potatoes in a large pot and completely cover with water.
3. Place pot over medium high heat and bring to boil.
4. Once water in boiling, cook potatoes for 10 - 15 minutes, until cooked through and a skewer is easily inserted into the potato.
5. Pour potatoes into a colander and allow to cool. Rinse potatoes with cool water to remove final traces of starch. This will also quicken the process of cooling.
6. Add bacon to a frying pan on medium high heat and cook until crispy. Remove from pan and set aside.
7. In a small bowl, add thyme, mustard, yoghurt, lemon juice, honey, salt & pepper. Stir until fully combined.
8. Place potatoes in a large serving bowl
9. Add boiled eggs, bacon, chives and thyme mustard sauce.
10. Gently toss to coat to mix through and coat the potatoes with the sauce.
11. Keep refrigerated until ready to serve.

Help With Developing a Healthy Menu Without Stove/Oven

Hello All,

Any and all help that I could get in this would be fantastic! I am looking to open a cafe/restaurant near a big university in the Midwest that is next to one of the most popular bars for the school. It is a block south of the main strip and there is nothing else near the bar except houses. Additionally, there are few healthy food options during the day and hardly any nearby options for food after 10pm everyday of the week- I am terribly familiar with this predicament due to my classes not getting out until 10pm when I was in grad school.

I am looking to convert my house which is an old 1920's bank building to do this idea, but since the building was originally a bank, it has the foundation like a tank and the area is quite small too. It has 1 ft. thick concrete walls and this makes it very expensive to build a traditional kitchen and since I am not rich, a kitchen wouldn't be practical for an idea that may fail. So I am looking for healthy and delicious food that can be made without a stove/oven.

I am thinking about lots of different options like a conveyor oven for sandwiches, but not sure what else there is. I want to have food that will be appealing during the day while people are studying and for the drunk kids leaving the bar at night. Would love to hear from you guys and any recipe ideas that you have! Thanks for any help in advance!

TLDR: I need to think of recipes in a menu that are delicious for morning/afternoon studying and when people are coming back from the bar looking for drunk food- all without the use of an oven/stove/deep fryer.

I would like to find a good recipe builder, which allows specificity in ingredients (e.g., exactly matches specific ingredients, such as by UPC code from a large database), computes complete nutritional information, resize recipes, etc. I'm willing to pay a fee. There was one I used and liked some years ago, but I can't find it now or remember what it was called. There are free ones, such as myfitnesspal, but it is light on features (for example, when I search for "ground beef," it won't let me choose the percentage of fat), and Weight Watchers has a paid one, but it doesn't compute complete nutritional information. Learn to Cook Vegetable Egg Fried Rice Less than 4 Minutes.

How to make Fried Rice | Vegetable Egg Fried Rice | Restaurant Style Recipe | Make at Home

  1. Chop all The Vegetables.
  2. Heat Saute Pan
  3. Beat The egg, Add Salt and Pepper.
  4. Make The scrambled egg and keep aside.
  5. Use same pan with some oil.
  6. Add Chopped Onion and Saute.
  7. Add the Ginger Garlic and Saute
  8. Add Other Vegetables and Keep saute.\
  9. Add Salt, Soy Sauce, Ajinomoto and Ketchup
  10. Don't Over cook the Vegetables.
  11. Add Boiled Rice and Saute for Few Minutes until all Ingredients Mixed Well.
  12. Put in a Plate or Bowl and Sprinkle the Spring Onion on Top.

Found out how to make awesome pan cooked flavorful chicken

So I had been just cooking chicken in a pan with seanoning but it tasted pretty plain still. BUT recent I tried adding a little water, milk, and a tiny bit of heavy whipping cream and adding all of my seasonings (chopped garlic, chicken flavoring, etc.) And covering it annd it has been the juiciest most flavorful chicken I've ever made and I'm just really proud and wanted to share this.

Johnnie's is a legendary Italian beef joint in Elmwood Park, IL that consistently wins local competitions and mentioned in the national press for tourists. Since we moved to Seattle, we've missed Johnnie's and sought to replicate the recipe and process as closely as we can. After three years, this recipe is the result.

[REQUEST] Inherited a TON of dried peppers - need recipes

So a noodle bar in my city closed down and I had the opportunity to raid their kitchen. I got pounds and pounds of dried chilis - guiliano, ancho, dried jalapenos, chipotle, cayenne, and a ton of others. Literally pounds.

I want to start using them and am hosting a party this weekend. I'm going to make a salsa with some, but was hoping for some other ideas/recipes for shareable treats using these chilis (like some kind of creamy chili dip, for example). Any ideas?

Beer butter from scratch?

Hard to search because everything online just points to butter beer from Harry potter. I've made a few batches and it only seems to work if I mix in corn starch to thicken to make up for the added liquid. 1 good batch out of 5 so I'm wondering if anybody has played around with it.

I'm thinking I need to drastically lessen the beer (have been putting 1/4 cup) as the flavor comes through well but the added moisture has been a problem.

What tomato product for a toastie?

I want to make tomato & cheese toasties, but I want to ask what type of tomato product is best since they all cook at different times and have different flavours?

I know you can get tinned tomatos, sauce for pizza, tomato paste, sauce for pasta

I only have a foreman grill to use at the moment - oven and microwave and cooker are out of service
