The simpler, the better. Basically, what do I replace heavy cream with that would produce a thick, fluffy whipped cream?

I don't care how high in sugar or unsaturated fats it is. The primary goal is to avoid trans and minimize saturated fat.

Collard Green Chicken Spring Rolls with Spicy Peanut Sauce

Ingredients
For the Rolls:
10 collard green leaf
1 large red bell pepper (cut into matchsticks)
1 small carrots (shredded using a mandolin or thinly sliced)
5 oz cooked chicken breast (thinly sliced)
1 cucumber (cut into matchsticks)
a handful of fresh spinach leaves
5 oz rice noodles
Spicy Peanut Butter Sauce:
2 tablespoons peanut butter
1/2 cup hoisin sauce
1/2 cup water
1 tablespoon sugar
1/2 teaspoon sriracha sauce
Instructions
Sauce: In a small saucepan over low heat, combine all sauce ingredients and stir until smooth. Transfer to serving bowl and top off with crushed cashews or peanuts.

Trim the collard green leaf to make it easier to roll. Arrange your filling on the collard leaf. Fold the bottom over the filling and use your fingers to hold them tightly together. Fold both sides over to seal, then roll until completely seal. Use toothpick to keep them tightly closed.

Repeat until all filling are used.

Store left over in the fridge for up to 2 days. But best when fresh. Enjoy!

Ingredients

  • 1.5 c mashed bananas
  • 2 tsp lemon juice
  • 3 c flour
  • 1.5 tsp soda
  • .25 tsp salt
  • .75 c butter, soft
  • 2 c sugar
  • 3 eggs
  • 2 tsp vanilla
  • 1.5 c buttermilk

Frosting

  • .5 c butter, soft
  • 8 oz pkg. cream cheese, soft
  • 1 tsp vanilla
  • 3.5 c icing sugar
  • Combine butter and cream cheese, then add vanilla and icing sugar.

Directions

  1. Mix bananas with lemon juice; set aside.
  2. Mix flour, soda, salt in one bowl.
  3. Cream .75 c butter and sugar in another bowl until fluffy.
  4. Add eggs to butter mixture, one at a time, then mix in 2 tsp. vanilla.
  5. Add flour mixture, alternating with buttermilk (half at at time).
  6. Add bananas.
  7. Pour into prepared pan. Bake 1 hour, or until inserted toothpick comes out clean.
  8. Place into freezer for 45 minutes.
  9. Frost when fully cooled.

A question about a recipe!

Hi, I tried this recipe today; https://addapinch.com/the-best-chocolate-cake-recipe-ever/

So the cake was not amazing, it was just a standart cake. That I can understand but frosting which is this https://addapinch.com/perfect-chocolate-buttercream-frosting-recipe/ has become so bad.

I actually didn't want to use 5 cups of sugar because I thought It was much more than necessary. Later I couldn't even eat a single bite because it was incredibly sweet.

My question is why is there such a big difference? I live in Europe and products are not the same with USA so maybe that's the cause? But again, to use 5 cups? Is this legit? Can you tell me what did I wrong? Or what is the difference?

Please help me recreate/find this pepper jelly layered dip recipe

Posted elsewhere but didn't turn up any results:

Many years ago, a lady I worked with made an awesome dip. The best I can remember, it was kind of a mash up of pepper jelly, fruit jellys, and a traditional 7 layer mexican dip. I distinctly remember at least refried beans, cream cheese, and a jelly being key ingredients (though I don't recall if it was actually jalepeno jelly or if it was just a fruit jelly and I'm filling in gaps in my memory).

Does anyone know of a recipe like this? I'd really like to make it for the final four games this weekend.

Lover’s Chia Pudding recipe

Lover’s Chia Pudding Prep Time 10 minutes Total Time 10 minutes Servings 4

Ingredients

  • 1 cup of vanilla milk unsweetened
  • 1 cup of plain Greek yogurt
  • ¼ cup of chia seeds
  • 2 tablespoons of maple syrup
  • 1 teaspoon of vanilla extract

Instructions

  • Combine the milk with yogurt, maple syrup and vanilla in a mixing bowl then whisk them until they are well blended.

  • Add the chia seeds and mix them well.

New to cooking, what would you suggest? Recipes

Making tomato sauce less sour

I've made salmon in tomato sauce but added too much lemon juice, how can I reduce the sour taste without changing the whole sauce too much? The sauce is mainly tomato sauce with celery, chilli and lemon juice (usually it even tastes good)

  • 4 pounds of pork shoulder
  • 4 cups of chicken broth
  • 1 small white onion finely chopped
  • 3 tablespoons of olive oil
  • 2 tablespoons of honey
  • 1 tablespoon of apple cider vinegar
  • 2 teaspoons of dry oregano
  • 4 cloves of garlic
  • Black pepper
  • Salt

Instructions

  • Stir all the ingredients in a slow cooker.
  • Put on the lid and let the pork shoulder cooker for 7 h on low.
  • Once the time is up, drain the pork shoulder and shred it then stir it back into the pot.
  • Spoon the shredded pork into tortillas or taco shells then serve them with your favorite toppings and enjoy.

Blood Orange Souffles Recipe

Blood Orange Soufflé

  • Course: Dessert
  • Servings: 4 servings

Ingredients

  • 1 cup Blood Orange Juice from 4 large oranges
  • 1 1/2 cup unsalted butter plus a little extra for buttering ramekins
  • 1 1/2 cup flour
  • 1/4 cup granulated sugar
  • 1/4 tsp salt
  • 1 tsp vanilla
  • 5 egg yolks room temperature
  • 5 egg whites room temperature
  • 1/8 tsp cream of tartar

Instructions

  • Preheat oven to 400' and prepare water bath. You will need a 9 x 12 inch baking dish and a pot of boiling water.

  • Generously butter the ramekins and then sprinkle them with sugar. Dump the excess sugar out. Put in refrigerator until ready to use.

  • Zest and juice the 4 oranges. Strain the juice through a fine mesh sieve or colander...you should have about 1 cup.

  • Boil juice and butter in a pot over medium high heat, until reduced by one-quarter.

  • Reduce heat to low and add orange zest and flour and stir until it forms a paste.

  • Add sugar, 1/4 teaspoon salt and vanilla and cook until the mixture is gelled.

  • Remove from heat and whisk in egg yolks until the mixture becomes creamy.

  • Put egg whites, pinch of salt and cream of tartar in the bowl of electric mixer with whisk attachment. Beat on low for 1 minute, medium for 1 minute and then high speed until glossy and medium-firm peaks form.

  • Gently fold egg whites into orange mixture, being careful not to over mix. Incorporate the whites into the base by pushing lightly down while bringing the heavier orange mixture up and over the whites. Use a sweeping S motion.

  • Fill buttered and sugared ramekins with mixture.

  • Place the ramekins in the baking dish and then fill the baking dish with water so that the water comes halfway up the sides of the ramekins.

  • Bake for 10 minutes at 400' and then reduce the heat to 350' and bake for 15 additional minutes until puffed and golden brown.

  • Don't open the oven door until souffles are fully baked.

  • Dust with powdered sugar and serve immediately.

Bacon Wrapped Stuffed Pork Tenderloin

Pork tenderloin is very nice cut of pork that when cooked well, produces a tender meal full of flavour. Wrapping the pork in bacon simply enhances the flavour as, let’s face it – bacon makes everything taste great!! The Pork tenderloin is initially butterflied before filling with pork sausage, baby spinach and cheese. It is then rolled and wrapped in bacon before being baked to a tender, moist perfection. Finished with a honey glaze adds a little sweetness to round out a spectacular pork meal bursting with flavour.

Ingredients:
• 1.2 kg Pork Tenderloin
• 300 g Italian Pork Sausage 3-4 sausages - remove from casings
• 10 slices Streaky Bacon more or less as required to wrap pork tenderloin
• 1 cup Shredded Cheese I use 3 cheese combo - use more or less as required
• 2 cups Baby Spinach
• Pepper to season
• 2 tbsp Honey

Instructions:
1. Pre-heat a fan forced oven to 180°C (350°F)
2. Cut tenderloin in half lengthwise (butterfly).
3. Place tenderloin between cling wrap and using a meat mallet pound tenderloin until flat and allow to spread out.
4. Spread sausage meat lengthwise down the centre of the tenderloin. Season with pepper.
5. Cover sausage with baby spinach.
6. Sprinkle shredded cheese over the top.
7. Roll up tenderloin lengthwise as tightly as possible.
8. Place slices of streaky bacon (side by side) onto a flat board.
9. Place rolled tenderloin, seam side down, onto bacon and wrap tenderloin with the bacon. Pin with toothpicks if required.
10. Place in oven and bake for approx 45 minutes.
11. Remove from oven and brush tenderloin with honey.
12. Return to oven and bake a further 5-10 minutes until golden.
13. Remove from oven, allow to rest a few minutes before carving and serving.

Course Main Course Prep Time 10 minutes Cook Time 15 minutes Total Time 25 minutes Servings 3 people Ingredients 1 ¼ cup medium shrimp, peeled and deveined 3 cups of water 2 cups of tomato, diced 1 yellow onion, finely chopped 3 tablespoons of butter ¾ cup of instant grits 1 tablespoon of fresh lemon juice 2 cloves of garlic, minced Black pepper Salt Instructions Heat 3 cups of water in a saucepan until they start boiling.

Add to it the grits with a pinch of salt and pepper then mix them well.

Cook them for 6 min while stirring all the time.

Fold the butter into the grits then place it aside.

Heat the butter in a large pan over medium heat until it melts.

Add to it the onion with garlic and a pinch of salt then cook for 3 min.

Add the tomato and cook them for 4 min.

Stir in the shrimp with lemon juice, a pinch of salt and pepper then cook them for 4 min.

Spoon the mix over the creamy grits then serve them and enjoy.

PSA: spaetzle is delicious and its quick and easy to make

When I visited Germany, I loved the spaetzle. I would have tried to make it at home a lot earlier if I had known it was so quick and easy to make. The recipe above is the one I used. It talks about a spaetzle maker, but you don't need one of those if you don't care about the shape. I just used a fork and dribbled the dough into the hot water, and it came out fine.

Caramel Choc-Chip Mini Mud Cakes

It’s really hard to find a better dessert than a beautiful, rich moist mud cake. This dessert allows you to create friand sized mud cakes which can be great for parties, when you have friends over or any other occasion really! The mud cake starts with a fantastic mixture of white chocolate, brown sugar and golden syrup. Your taste buds start drooling immediately!! Flour and egg add body to the cake before chocolate chips are swirled through. The end result is a wonderfully dense, rich moist mud cake. Sprinkle with icing sugar before serving for an amazing dessert.

Ingredients:
• 100 g White Chocolate chopped
• 100g Unsalted Butter chopped
• 1/2 cup Brown Sugar firmly packed
• 2 tbsp Golden Syrup
• 1/2 cup Milk
• 3/4 cup Plain Flour sifted
• 1/4 cup Self-Raising Flour sifted
• 1 Egg
• 2 tbsp Milk Chocolate Bits
• Icing Sugar to sprinkle on top

Instructions:
1. Preheat a fan forced oven to 140°C (285°F).
2. Grease 8 holes of a 12 hole friand pan with butter.
3. In a large suacepan over medium heat add white chocolate, butter, brown sugar, golden syrup & milk. Stir to combine and continue to stir until smooth. Remove from heat and cool for about 15-20 minutes.
4. After cooling, add in plain & self raising flours and stir to mix through.
5. Add egg and stir to mix through.
6. Add milk chocolate bits and stir to mix through.
7. Spoon mixture into the eight friand pan holes.
8. Place in oven for about 20 - 25 minutes until cooked through.
9. Remove from oven and let cool in pan for about 10 minutes before turning out onto a wire rack to cool completely.
10. Dust with icing sugar before serving.

Meals for a 'meat and potatoes' guy.

I cook a couple of meals a week for my in laws because A) I love to cook and B) it allows MIL to take a day off a couple of days a week.

That said FIL is a very picky eater. He likes it bland and greasy which makes me cringe. I can only make spaghetti and meatballs, meatball hoagies, or fried chicken (ick) with gravy and mashed potatoes so many times before I want to jump off of a bridge.

Yall got any suggestions for stick to your rips meals that are bland enough for a picky assed eater?

Request for tomato sauce recipe

I’m not familiar with Italian cooking and am trying to learn how to make tomato sauce. So far, the recipes I have tried have ended up being rather bland and watery (not thickness, but flavor-wise). Does anyone have any recipes that I can try, or suggestions on what to add to the sauce? The typical ingredients I have seen seem to be oregano, thyme, parsley, some sugar, salt/pepper and some kind of cheese. I’m looking for something that is super flavorful (think Indian food). Thanks!

My buddy also gave me the Bravetart book that has a recipe for cream scones - but seems more of an afterthought as it’s an add on to a the Buttermilk Biscuits with Strawberries and Cream recipe.

Chipotle Chile

1lb Ground Sirloin (90/10 fat content)
1/2lb Hot Italian Sausage
1/8lb Bacon

2 White Onions, diced (Divided 3/4 and 1/4)
4 Cloves Garlic (Pressed or finely minced)

3Tbsp Hot Chili Powder
3tsp Cumin
1/2tsp Cayenne

1 10oz can Chipotle Pepper in Adobo Sauce

4c Beef Broth

1 28oz can Diced Tomatoes and Green Chiles (Drained)
1 15oz can Black Beans, reserve 1/4c (Drained)
1 15oz can Red Kidney Beans, reserve 1/4c (Drained)

Start by beginning to brown the bacon in a large Dutch oven or soup pot. When the bacon has some color, but is not yet crispy, add the ground sirloin and hot Italian sausage. Continue cooking until brown. Remove as much of the meat as possible with a slotted spoon, leaving the fat. Add 3/4 of the diced onion to the Dutch oven and cook until translucent. Add the garlic and cook 30 seconds longer. Add the hot chili powder, cumin, and cayenne, stirring until the onions and garlic are coated. Add the chipotle peppers in adobo sauce. Stir and scrape up any fond that has formed. Add the beef broth and bring to a boil. Reduce heat to a simmer. Cover, leaving the lid partially cracked, and continue to simmer for one hour. Add the diced tomatoes and green chiles, black beans (not the reserved 1/4c), and red kidney beans (not the reserved 1/4c). Mash the reserved beans with a fork to form a paste and add to the Dutch oven. Continue cooking, uncovered for twenty minutes, stirring occasionally.

What's the best way to smoke meat in an oven?

I want to smoke a pork shoulder today, in the oven. I've tried before using the 'wet chips' method, which left a slight hickory taste but no real smoky taste. What was i doing wrong, or is there any better way to smoke a pork shoulder in the oven?

Best/Favorite foods to freeze?

Hello! My SO has been swapped to night shift, so I'm trying to make a few freezer recipes for him, since he's already resorted to gas station pizza.

He's not gluten free, but he's kind of "wheat light" while trying to figure out how much he can eat without having stomach pains, so limited pastas/pot pies would be awesome (which.. are kind of my go-tos :/)

I've got white chicken chili cooking right now, and preparing muffin pan frittatas with different ingredients.

Any other suggestions?

Our deep freezer thawed. In need of recipes for 40lbs of chicken and 20lbs of pork shoulder roast.

As the title says, our deep freezer thawed out and we didn’t notice in time to be able to get everything moved, and now we have excess amounts of meat that can’t be refrozen. We’re going to have a BBQ on Sunday, but we just don’t have enough friends to eat that much.

Bean and Gravy Recipe?

Back around 2001, I went through basic training in the US Army. A lot of times if we were having a field exercise, they would bring hot food from the mess hall to the field. One of the sides that they would bring were either pinto beans or maybe black eye peas in some kind of gravy. It was very delicious. I would imagine it was a pretty standard recipe throughout the Armed forces. So, any current or former Army cooks out there that may be able to provide the recipe?

Edit: Just to clarify, it seemed to be a brown gravy, possibly of the beef variety. Before anyone tells me to just mix beef gravy and pinto beans, believe me I've tried and it isn't even close, so I'm thinking I'm missing something here.

Sticky Chinese Pork Ribs

Pork Ribs served in a ‘sticky’ sauce are always a well received dinner in our household. Although ribs are generally messy to eat, they are just so tasty when marinated and served with a great sauce. This is a great dish that also adds rice and some greens to round out the meal. The pork ribs are initially marinated in a ‘sticky’ sauce that includes hoisin, soy, orange juice, brown sugar, ginger and five spice. They are then slow cooked in the oven to tender perfection and to allow the sauce to thicken and further flavour the ribs. The meal is rounded out with pak choy and broccolini to perfectly complement the ribs. Served with jasmine rice to soak up the wonderful sauce.

Ingredients:
• 1.2 kg Pork Ribs use more or less to preference
• 1/2 cup Hoisin Sauce
• 3 tbsp Soy Sauce
• 1 tbsp Orange Juice
• 3 tbsp Brown Sugar
• 1/2 tbsp Ground Ginger
• 3 cloves Garlic
• 1 1/2 tsp Chinese Five Spice
• 1 Cinnamon Stick
• 3 whole Star Anise
• 2 bunch Pak Choy
• 1 bunch Broccolini
• Jasmine Rice to serve

Instructions:
1. In a large baking dish, add hoisin sauce, soy sauce, orange juice, brown sugar, ground ginger, garlic, chinese five spice, cinnamon stick & star anise. Stir to mix through.
2. Add pork ribs to baking dish and coat both sides with the marinade. Leave the ribs 'meat side' down to marinate.
3. Place baking dish in refrigerator for at least 1 hour to marinate before cooking. Marinate longer if you can, perhaps in the morning before cooking in the evening.
4. Preheat a fan forced oven to 140°C (285°F).
5. Cover baking dish with foil and place in oven. Cook ribs for 2 hours while covered with foil. After about 1 hour turn ribs in baking dish and return to oven still covered with foil.
6. After the initial 2 hours, remove foil from baking dish and cook a further 25-30 minutes while uncovered, to allow the sauce to thicken a little more.
7. Place the pak choy & broccolini in a steamer over boiling/simmering water for about 1-2 minutes.
8. Remove both from the steamer and place only the pak choy into iced water to refresh. Remove from iced water and set aside with the broccolini to serve.
9. Remove ribs from oven, slice each rib rack into individual ribs and serve with vegetables and jasmine rice. Spoon sauce over ribs and onto rice.

I feel like I'm in a rut when it comes to what I cook and I want to branch out. Does anyone know any good sites that offer daily or weekly menu ideas?

I'm not really sure if this is the right sub for this kind of request but I feel like I'm in a rut when it comes to cooking. I mostly fix the same ten or so dishes all the time with a few of them now being simply taking the frozen whatever and putting it in the oven for a hour and eating it.

And while I make sure the meals are balanced I feel like I could be eating a more diverse menu compared to what I make now.

I was wondering if their was any good sites that had daily or weekly dinner and supper ideas. Kind of like a blue apron of recipes. Maybe if I just start making my own lists and planning out what I want to eat it will get me out of this rut.

As for what kind of recipes i'm open to anything. I mainly eat asian,italian, mexican and American/Southern/ soul food.

And if their is a better sub for this let me know. Thanks for the help.

I used to go to a restaurant that has since shut down that made a "beat and mango goat cheese" that went on a burger. It was soft and spreadable and was a shade of purple. There were chunks in it that I am guessing were the mango.

I am trying to find out how to flavor goat cheese so I can make something similar. I have been looking online but most recipes are very basic salt/pepper/oil types or are just crusted around the exterior of the goat cheese.

If anyone can help me here I would really appreciate it.

Need a recipe for pickle juice/pickle brine

I made up a fake ChicFilA sandwich and I need more pickle juice. I've been buying pickles, using the juice and tossing the pickles (can't stand the texture of them - YUK!). So anyway I'd love to find a way to just make the juice so if anybody has a recipe please let me know! Thanks.

Orange Chicken With Jasmine Rice

I really enjoy asian inspired Orange based and flavoured meals. This dish is a great example and will not disappoint. The chicken is initially cooked and browned in the wok before being added back into a wonderful sauce which is a great coconut milk / red curry blend which perfectly complements the orange juice and zest that is mixed through. Snow peas provide a nice crunch and served with Jasmine rice to soak up the amazing orange sauce.

Ingredients:
• 2 tbsp Vegetable Oil
• 3 Chicken Fillets use breast fillets cut into bite size pieces
• 2 Oranges zest and juice both oranges and keep zest and juice separate.
• 1 Orange peeled and cut into segments
• 1 Brown Onion diced
• 1/4 cup Thai Red Curry Paste
• 400 g Coconut Milk
• 2 tbsp Fish Sauce
• 1 tbsp Brown Sugar
• 3 Kaffir Leaves more if required
• 200 g Snow Peas trimmed and cut in half lengthwise
• Basil Leaves to garnish
• 1 Long Red Chilli thinly sliced to garnish
• Jasmine Rice to serve

Instructions:
1. Heat 1 tbsp vegetable oil in a wok over medium high heat.
2. Add chicken and cook until browned. Cook in batches if required and add extra vegetable oil if required. Remove from wok, set aside and keep warm.
3. Add and heat remaining vegetable oil to wok.
4. Add onion and cook for 2-3 minutes until softened.
5. Add red curry paste and orange zest and cook while stirring for a further 1 minute.
6. Add coconut milk, orange juice, fish sauce, brown sugar and kaffir lime leaves. Stir to mix, bring to boil, then reduce heat and simmer for about 2 minutes.
7. Return chicken to wok with snow peas and cook for a further 2 minutes to heat chicken through.
8. Add orange segments, stir to mix through and cook for a further 30 seconds. Remove from heat.
9. Top with basil leaves, red chilli and serve with jasmine rice.

Favorite online French baking resources?

I’ve recently taken a job where I have the freedom to make whatever I want as long as it falls within the French realm of baking.

I’ve been in the artisan bread game for 7 years and the only sweets/desserts I’ve ever really made are cookies and shortbreads. Over the past few weeks I’ve made opera cakes, eclairs, mousses, and so much more on top of our daily production schedule of baguettes, croissants, and other pastries.

It seems with French baking the recipes are simple but the devil is in the details and techniques.

Anybody follow any good YouTube channels or blogs about French baking?

Anyone have recipes for pre-packaged Naan?

I really like naan in restaurants/how my friends have prepared it, so I’ve been buying those Stonefire brand naan packages, but can’t find a good way to fix it up. Anyone have any good recipes for spicing up pre-made naan? I’m 23 and a newbie to cooking (hence buying pre-made instead of baking it myself) so just looking for average skill level stuff
