Ingredients:
- 2 Chicken breast
- lemon zest
- 2 lemons
- 1 large onion
- 40 ml white wine
- fresh rosmary
- fresh thyme
- 6 carrots
- 1 tbsp olive oil
- 1 tbsp clear honey
Method:
- Heat oven to 180degrees
- Mix together the carrots, chicken breasts, olive oil, honey, lemon zest and the juice of one lemon
- Roast in the oven for 20 minutes
- After 20 minutes add the onions and wine to the dish
- Turn the vegetables occasionally drip the juice over the top during cooking
- Add the final lemon sliced and cook for 20 minutes longer
Note:
I had no white wine but it turned out very nice using a little red wine vinegar and some chicken stock. Also add some paprika over the top after the first step (when the chicken and carrot goes in the oven). Serve with rice and salad, also nice with a little cheese grated on top.
