Help me recreate granddaddy’s pork chops and rice

My grandfather, RIP, made this really amazing pork chops and brown rice. I know he browned the sort of thin porks chops onions and mushrooms, mixed together rice and maybe cream of mushroom, and I think baked or maybe cooked it all in a Dutch oven for at least two hours maybe more.

The end result was this delicious fall apart moist pork chop rice combo that you could just scoop out and eat, sometimes with a dab of sour cream. I remember it was a fairly dark colored dish and I think the rice on top was a little crispy? Very strong umami mushroom flavor.

I’ve tried a couple online recipes but they’re all a super light colored gravy dish. It’s not what he made. Any suggestions? He tended to use very old cookbooks and this was back in the early 90’s
